Soft Bagel with Seeds and Sea Salt

For the dough:

  • 500 grams (3 ½ cups) all-purpose flour
  • 8 grams (2 tsp.) active dry yeast
  • 300 ml. (1 ¼ cups) water
  • 10 grams (1 tbsp.) salt

For coating:

  • 1 tbsp. maple syrup
  • 2 tbsp. water
  • Sunflower seeds
  • Black sesame
  • Za’atar
  • Sea salt flakes


  1. In a mixer bowl with a kneading attachment, put flour, yeast, water and salt and knead for 10-12 minutes until the dough is soft and shiny.
  2. Cover the bowl and allow rising for 1-2 hours until the dough almost doubles its volume.
  3. Divide the dough into 10 equal parts.
  4. Roll each part into a ball shape and form a hole in the center to create a bagel shape.
  5. Place the bagels in intervals on an oven pan lined with baking paper.
  6. Cover and allow rising for about an hour until the bagel almost double their volume.
  7. Preheat the oven to 180c degrees.
  8. In a small bowl, mix maple and water and gently brush the bagels.
  9. Sprinkle seeds, sesame, za’atar and salt.
  10. 10. Bake the bagels for 15-25 minutes or until they are golden and set.
  11. 11. Cool and serve.

Recipe Notes

  • Keep the bagels in a sealed bag in the freezer for up to a month.
  • You can use any kind of grains or seeds that you like.
  • Instead of maple, you can use date syrup or honey in the same amount.
