Malabi<\/a> is definitely one of my favorite summer desserts; cold, light and always a crowd pleaser. It can be made vegan very easily, and I really do not know anyone who refuses cold malabi with rose water syrup, coconut and pistachios. It’s so hot outside this summer, so I decided to make a frozen version for my favorite dessert and that\u2019s how these malabi popsicles were thought of!<\/p>\n

This malabi popsicle is easily made with no ice cream machine \u2013 just mix a few ingredients in a bowl, freeze and you have a delicious summer treat.\u00a0 These popsicles combine coconut, raspberry, honey and rose water in a luscious red and white marble look, just like malabi. Plus, it is very easy to prepare!<\/p>\n

I made it in two different versions \u2013 regular and vegan; both of them are simply excellent. The vegan version uses coconut cream which gives the popsicles a rich and creamy texture; The dairy version is made with natural yogurt that makes it lighter and delicious. In both cases, these malabi popsicles are simply perfect.<\/p>\n

In order to make these popsicles I used this popsicle pan<\/a>, which is definitely one of the most common props I use in my kitchen this summer \ud83d\ude42<\/p>\n
