Despite the fact that a good chocolate cake is almost always my automatic choice for birthdays and special occasions; I do make vanilla cakes quite often. So, it\u2019s definitely time for me to finally share my recipe here too.<\/p>\n<p dir=\"ltr\" style=\"text-align: justify;\">Vanilla cake is just the kind of cake for everyone who is a little tired of the usual, plain chocolate cake, those who prefer their birthday cake a bit more sophisticated (yes, vanilla is a much more sophisticated than chocolate if you ask me).<\/p>\n<p dir=\"ltr\" style=\"text-align: justify;\">This vanilla cake is a winning classic that\u2019s perfect for any occasion. It\u2019s made of two rich layers of moist vanilla cake filled with rich vanilla cream, dotted with these beautiful black vanilla beans. (3 tbsp.) vegetable oil<\/li>\n<li>4 large eggs (at room temperature)<\/li>\n<li>200 ml. (1 cup) sour cream<\/li>\n<li>125 ml. (1\/2 cup) milk<\/li>\n<li>315 grams (2 \u00bc cups) all-purpose flour<\/li>\n<li>15 grams (3 tsp.) baking powder<\/li>\n<\/ul>\n<h4>For mascarpone vanilla cream:<\/h4>\n<ul>\n<li>225 grams (1 pack) mascarpone cheese, at room temperature<\/li>\n<li>60 grams (1\/2 cup) powdered sugar<\/li>\n<li>2 tsp. vanilla extract (or 1 teaspoon vanilla paste)<\/li>\n<li>375 ml. (1 \u00bd cups) whipping cream, very cold<\/li>\n<\/ul><\/div>\n<div class=\"wprm-fallback-recipe-instructions\">\n<h4>Vanilla cake:<\/h4>\n<ol>\n<li>Preheat the oven to 170 Celsius degrees and grease the pan well.<\/li>\n<li>In a mixer bowl with a paddle attachment, put butter, sugar, vanilla and salt and mix at high speed until a soft, uniform creamy mixture is obtained.<\/li>\n<li>Scrape down the sides of the bowl with a spatula and add in the oil and one egg. Mix until combined.<\/li>\n<li>Add the remaining eggs one at a time, mixing between additions until fully incorporated.<\/li>\n<li>Add sour cream, milk and about 1\/2 of the flour and mix until almost uniform.<\/li>\n<li>Add the remaining flour and baking powder and mix until you get a uniform batter.<\/li>\n<li>Pour the batter into the pan and straighten the top with a palate knife.<\/li>\n<li>Bake the cake for 45-55 minutes or until the cake is golden, swollen and set to the touch, and a skewer inserted in its center comes out with moist crumbs.<\/li>\n<li>Cool completely before decoration.<\/li>\n<\/ol>\n<h4>Mascarpone vanilla cream:<\/h4>\n<ol>\n<li>In a mixer bowl with a whipping attachment whip mascarpone cheese, powdered sugar and vanilla at medium speed until you get a uniform mixture.<\/li>\n<li>Increase the speed of the mixer and add in the whipping cream in a thin stream while whipping. Continue to whip until you get a very firm vanilla cream.<\/li>\n<\/ol>\n<h4>Assemble the cake:<\/h4>\n<ol>\n<li>Straighten the top of the cake with a knife.<\/li>\n<li>Cut the cake into 2 equal layers.<\/li>\n<li>Place the first layer on a serving plate, and pour about 1\/3 of the cream. Flatten the cream in a uniform layer with a palate knife.<\/li>\n<li>Place the second layer of cake on top of the cream and gently press it down to stick.<\/li>\n<li>Cover the top and sides of the cake with the rest of the vanilla cream and decorate with piped vanilla cream if desired.<\/li>\n<\/ol><\/div>\n<div class=\"wprm-fallback-recipe-notes\">\n<ul>\n<li style=\"text-align: left\">You can also bake the cake in 2 separate molds instead of cutting it after baking.
