It\u2019s crunchy on the outside, and no matter what the filling is \u2013 this is a cookie I truly can\u2019t think of anyone who wouldn\u2019t like it. Making a vegan cookie roll is quite easy, and I even prefer the result as oppose to regular cookie roll. My top favorite filling is dates &#8211; traditional and yummy, way better than chocolate or any other filling if you ask me.<\/p>\n<p dir=\"ltr\" style=\"text-align: justify;\">This vegan cookie roll is so easy to make, melt-in-your-mouth and delicious. It\u2019s a great idea for a Yom Kippur treat to start (or end) the traditional fast. (1\/2 cup) vegetable oil<\/li>\n<li>1 tsp. vanilla extract<\/li>\n<li>Pinch of salt<\/li>\n<li>50 grams (1\/4 cup) sugar<\/li>\n<li>350 grams (2 \u00bd cups) spelt flour<\/li>\n<li>1 tsp. baking powder<\/li>\n<\/ul>\n<h4>For the date filling:<\/h4>\n<ul>\n<li>1 package (450 grams date spread)<\/li>\n<li>100-150 grams chopped nuts<\/li>\n<li>1 tbsp. cinnamon<\/li>\n<\/ul>\n<h4>For decoration:<\/h4>\n<ul>\n<li>sugar powder<\/li>\n<\/ul><\/div>\n<div class=\"wprm-fallback-recipe-instructions\">\n<ol>\n<li>In a large bowl, combine coconut cream, oil, vanilla extract, salt and sugar into a uniform mixture.<\/li>\n<li>Add flour and baking powder and gently knead with your hands, until soft uniform dough is obtained.<\/li>\n<li>Cool the dough for about 1\/2 hour in the refrigerator.<\/li>\n<li>Divide the dough into 3 pieces and roll each part into a rectangle of about 3 mm thick.<\/li>\n<li>Spread about 1\/3 of the date spread on each rectangle in a thin layer. Sprinkle with chopped nuts and cinnamon.<\/li>\n<li>Roll into tight roll and place on top of a baking pan lined with baking paper.<\/li>\n<li>Repeat with the 2 pieces of dough and the remaining filling.<\/li>\n<li>Preheat oven to 170 degrees.<\/li>\n<li>Bake the cookie rolls for about 30-35 minutes, or until golden brown.<\/li>\n<li>Cool completely and slice into cookies with a serrated knife.<\/li>\n<li>Decorate with powdered sugar and serve.<\/li>\n<\/ol><\/div>\n<div class=\"wprm-fallback-recipe-notes\">\n<ul>\n<li style=\"text-align: left\">Keep the cookies in a sealed container for up to a week at room temperature.<\/li>\n<li style=\"text-align: left\">You can make the cookie rolls and freeze them, as they are, before baking.
