I like the combination of savory short crust pastry filled with vegetables and cheese or cream \u2013 it\u2019s always a crowd-pleaser.<\/p>\n<p dir=\"ltr\" style=\"text-align: justify;\">Galette is the quiche\u2019s more rustic version \u2013 it\u2019s actually a quiche made without using a pan, which makes the preparation easier and quicker. This zucchini galette is perfect for Springtime \u2013 it\u2019s made of short crust pastry filled with ricotta and pesto and topped with lots of zucchinis.<\/p>\n<div id=\"attachment_21104\" style=\"width: 810px\" class=\"wp-caption alignnone\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-21104\" class=\"wp-image-21104\" title=\"Cheese and Pesto Zucchini Galette\" src=\"https:\/\/www.lilcookie.com\/wp-content\/uploads\/2018\/05\/zucchini_galette-s.jpg\" alt=\"Cheese and Pesto Zucchini Galette\" width=\"800\" height=\"1200\" \/><p id=\"caption-attachment-21104\" class=\"wp-caption-text\">Photo: Natalie Levin<\/p><\/div>\n<p><script async src=\"\/\/pagead2.googlesyndication.com\/pagead\/js\/adsbygoogle.js\"><\/script><br \/>\n<ins class=\"adsbygoogle\" style=\"display: block;\" data-ad-client=\"ca-pub-6091382327871787\" data-ad-slot=\"7832461759\" data-ad-format=\"auto\"><\/ins><br \/>\n<script>\n     (adsbygoogle = window.adsbygoogle || []).push({});\n<\/script><\/p>\n<p><!--WPRM Recipe 21108--><\/p>\n<div class=\"wprm-fallback-recipe\">\n<h2 class=\"wprm-fallback-recipe-name\">Cheese and Pesto Zucchini Galette<\/h2>\n<p class=\"wprm-fallback-recipe-summary\">\n<div class=\"wprm-fallback-recipe-equipment\">\n\t\t\t<\/div>\n<div class=\"wprm-fallback-recipe-ingredients\">\n<h4>For short crust pastry:<\/h4>\n<ul>\n<li>150 grams flour<\/li>\n<li>100 grams cold butter (cut into cubes)<\/li>\n<li>1\/2 tsp. fine salt<\/li>\n<li>1 egg yolk<\/li>\n<li>1-2 tbsp. cold water (if necessary)<\/li>\n<\/ul>\n<h4>For cheese and pesto zucchini filling:<\/h4>\n<ul>\n<li>2-3 tbsp. pesto (store bought or homemade)<\/li>\n<li>1 tsp. olive oil<\/li>\n<li>250 grams 1 cup) ricotta cheese(<\/li>\n<li>\u00bd teaspoon fine salt<\/li>\n<li>A little ground black pepper<\/li>\n<li>3-4 small zucchinis<\/li>\n<\/ul>\n<h4>For brushing and serving:<\/h4>\n<ul>\n<li>2-3 tablespoons of olive oil<\/li>\n<li>1 beaten egg<\/li>\n<li>A little sesame seeds<\/li>\n<\/ul><\/div>\n<div class=\"wprm-fallback-recipe-instructions\">\n<h4>Short crust pastry:<\/h4>\n<ol>\n<li>In a food processor with a steel blade put flour, butter and salt and blend until mixture is crumbly.<\/li>\n<li>Add ins the egg yolk and continue to process just until large clumps of dough are formed. If the dough is too dry and won\u2019t come together \u2013 add a little water.<\/li>\n<li>Transfer the dough chunks on a lightly floured work surface and bring together.
