Perfect for Springtime brunch and for upcoming Shavuot.<\/p>\n<div id=\"attachment_20931\" style=\"width: 810px\" class=\"wp-caption alignnone\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-20931\" class=\"wp-image-20931\" title=\"Almond Cheesecake with Berries\" src=\"https:\/\/www.lilcookie.com\/wp-content\/uploads\/2018\/05\/cheesecake3.jpg\" alt=\"Almond Cheesecake with Berries\" width=\"800\" height=\"1200\" \/><p id=\"caption-attachment-20931\" class=\"wp-caption-text\">Photo: Natalie Levin<\/p><\/div>\n<p><script async src=\"\/\/pagead2.googlesyndication.com\/pagead\/js\/adsbygoogle.js\"><\/script><br \/>\n<ins class=\"adsbygoogle\" style=\"display: block;\" data-ad-client=\"ca-pub-6091382327871787\" data-ad-slot=\"7832461759\" data-ad-format=\"auto\"><\/ins><br \/>\n<script>\n     (adsbygoogle = window.adsbygoogle || []).push({});\n<\/script><\/p>\n<p><!--WPRM Recipe 20928--><\/p>\n<div class=\"wprm-fallback-recipe\">\n<h2 class=\"wprm-fallback-recipe-name\">Almond Cheesecake with Berries<\/h2>\n<p class=\"wprm-fallback-recipe-summary\">\n<p><\/p>\n<\/p>\n<div class=\"wprm-fallback-recipe-equipment\">\n\t\t\t<\/div>\n<div class=\"wprm-fallback-recipe-ingredients\">\n<h4>For almond crust:<\/h4>\n<ul>\n<li>200 grams graham crackers or plain biscuits<\/li>\n<li>50 grams almond meal<\/li>\n<li>Zest of 1 lemon<\/li>\n<li>2 tbsp. sugar<\/li>\n<li>120 grams melted butter<\/li>\n<\/ul>\n<h4>For the cheesecake filling:<\/h4>\n<ul>\n<li>550 grams cream cheese<\/li>\n<li>400 grams sour cream<\/li>\n<li>200 grams sugar<\/li>\n<li>5 large eggs (at room temperature)<\/li>\n<li>1 tsp. vanilla extract<\/li>\n<li>Juice of 1 lemon<\/li>\n<li>3 tbsp. all-purpose flour<\/li>\n<\/ul>\n<h4>For the coating:<\/h4>\n<ul>\n<li>200 grams sour cream<\/li>\n<li>1 tbsp. sugar<\/li>\n<li>\u00bd tsp. vanilla extract<\/li>\n<\/ul>\n<h4>For decoration:<\/h4>\n<ul>\n<li>Fresh berries (cherries, blueberries and raspberries)<\/li>\n<li>A little nappage or natural jam for glazing<\/li>\n<\/ul><\/div>\n<div class=\"wprm-fallback-recipe-instructions\">\n<h4>Almond crust:<\/h4>\n<ol>\n<li>Preheat oven to 170c degrees. Lightly grease the pan.<\/li>\n<li>In a food processor with a steel blade, grind biscuits, almond meal, lemon zest and sugar until fine powder is obtained.<\/li>\n<li>Add the melted butter and mix until combined.<\/li>\n<li>Transfer the crumbs to the pan and tightly press it to the sides and bottom to form a crust.<\/li>\n<li>Bake for about 10-12 minutes until the crust is a little golden. Cool at room temperature.<\/li>\n<\/ol>\n<h4>Cheesecake filling:<\/h4>\n<ol>\n<li>In a large bowl, place cream cheese, sour cream and sugar and whisk into a uniform mixture.<\/li>\n<li>Add the eggs one by one, while mixing between additions until incorporated.<\/li>\n<li>Add vanilla and lemon zest and whisk until combined.<\/li>\n<li>Add the flour and mix quickly until it is assimilated in the mixture.<\/li>\n<li>Lower the oven temperature to 160c degrees, pour the cheese filling on the baked crust and bake for 45-55 minutes or until small cracks are formed on the edge of the cake and it vibrates slightly in the center.<\/li>\n<li>Cool the cake for about 10 minutes at room temperature and prepare the coating.<\/li>\n<\/ol>\n<h4>Coating:<\/h4>\n<ol>\n<li>In a small bowl, whisk sour cream, sugar and vanilla until combined.<\/li>\n<li>Pour the coating over the cake and make sure to cover the whole cake surface.<\/li>\n<li>Return to oven for another 5 minutes.<\/li>\n<li>Remove from the oven and cool completely at room temperature.<\/li>\n<li>Refrigerate the cake, well covered, for at least 5-7 hours (preferably overnight).<\/li>\n<li>Before serving, arrange the berries at the top of the cake and gently glaze with nappage or natural jam.<\/li>\n<\/ol><\/div>\n<div class=\"wprm-fallback-recipe-notes\">\n<ul>\n<li style=\"text-align: left\">Keep the cake in the refrigerator for up to 5 days.<\/li>\n<li style=\"text-align: left\">If you do not like lemon, you can omit the zest from the crust.<\/li>\n<\/ul><\/div>\n<div class=\"wprm-fallback-recipe-meta\">\n\t\t\t<\/div>\n<\/div>\n<p><!--End WPRM Recipe--><\/p>\n<div id=\"attachment_20930\" style=\"width: 810px\" class=\"wp-caption alignnone\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-20930\" class=\"wp-image-20930\" title=\"Almond Cheesecake with Berries\" src=\"https:\/\/www.lilcookie.com\/wp-content\/uploads\/2018\/05\/cheesecake2-new-s.jpg\" alt=\"Almond Cheesecake with Berries\" width=\"800\" height=\"1214\" \/><p id=\"caption-attachment-20930\" class=\"wp-caption-text\">Photo: Natalie Levin<\/p><\/div>\n<div id=\"attachment_20929\" style=\"width: 810px\" class=\"wp-caption alignnone\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-20929\" class=\"wp-image-20929\" title=\"Almond Cheesecake with Berries\" src=\"https:\/\/www.lilcookie.com\/wp-content\/uploads\/2018\/05\/cheesecake1.jpg\" alt=\"Almond Cheesecake with Berries\" width=\"800\" height=\"608\" \/><p id=\"caption-attachment-20929\" class=\"wp-caption-text\">Photo: Natalie Levin<\/p><\/div>\n<\/span>","protected":false},"excerpt":{"rendered":"<p>This almond cheesecake is one of the most delicious cakes I ever made.
