Serve it with a small side green salad, and it\u2019s simply a perfect meal!<\/p>\n<div id=\"attachment_15854\" style=\"width: 810px\" class=\"wp-caption alignnone\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-15854\" class=\"wp-image-15854\" title=\"Zucchini Broccoli Quiche with Ricotta\" src=\"https:\/\/www.lilcookie.com\/wp-content\/uploads\/2017\/05\/broccoli_and_zucchini_quiche-s.jpg\" alt=\"Zucchini Broccoli Quiche with Ricotta\" width=\"800\" height=\"1200\" \/><p id=\"caption-attachment-15854\" class=\"wp-caption-text\">Photo: Natalie Levin<\/p><\/div>\n<p><script async src=\"\/\/pagead2.googlesyndication.com\/pagead\/js\/adsbygoogle.js\"><\/script><br \/>\n<ins class=\"adsbygoogle\" style=\"display: block;\" data-ad-client=\"ca-pub-6091382327871787\" data-ad-slot=\"7832461759\" data-ad-format=\"auto\"><\/ins><br \/>\n<script>\n     (adsbygoogle = window.adsbygoogle || []).push({});\n<\/script><\/p>\n<p><!--WPRM Recipe 20853--><\/p>\n<div class=\"wprm-fallback-recipe\">\n<h2 class=\"wprm-fallback-recipe-name\">Zucchini Broccoli Quiche with Ricotta<\/h2>\n<p class=\"wprm-fallback-recipe-summary\">\n<div style=\"direction: ltr\"><\/div>\n<\/p>\n<div class=\"wprm-fallback-recipe-equipment\">\n\t\t\t<\/div>\n<div class=\"wprm-fallback-recipe-ingredients\">\n<h4>For short crust pastry:<\/h4>\n<ul>\n<li>180 grams (1 1\/4 cups) flour<\/li>\n<li>120 grams (1 stick) cold butter (cut into cubes)<\/li>\n<li>1\/2 tsp. fine salt<\/li>\n<li>2-3 tbsp. cold water<\/li>\n<\/ul>\n<h4>For the vegetables:<\/h4>\n<ul>\n<li>1 tbsp. olive oil<\/li>\n<li>1 large onion (finely sliced)<\/li>\n<li>400 grams broccoli (separated)<\/li>\n<li>2 medium zucchini (cut into cubes)<\/li>\n<li>\u00bc &#8211; \u00bd tsp. salt<\/li>\n<li>A little ground black pepper<\/li>\n<li>A little ground nutmeg<\/li>\n<\/ul>\n<h4>For ricotta royal sauce:<\/h4>\n<ul>\n<li>125 ml. (1\/2 cup) cooking cream<\/li>\n<li>120 grams ricotta cheese<\/li>\n<li>2 large eggs<\/li>\n<li>A little salt<\/li>\n<li>A little ground black pepper<\/li>\n<li>1 tbsp. all-purpose flour<\/li>\n<\/ul>\n<h4>For decoration:<\/h4>\n<ul>\n<li>Pumpkin seeds<\/li>\n<\/ul><\/div>\n<div class=\"wprm-fallback-recipe-instructions\">\n<ol>\n<li>Short crust pastry: in a food processor with a steel blade put flour, butter and salt and blend until mixture is crumbly.<\/li>\n<li>Gradually add water and continue to process just until large clumps of dough are formed.<\/li>\n<li>Transfer the dough chunks on a lightly floured work surface and bring together. Make into a disc-shape, cover and refrigerate for an hour.<\/li>\n<li>Roll out the dough on a floured surface to about 3-4 mm thick and line the pan. It is important to create a right angle between the sides and the base of the crust, which will ensure the edges remain high when baking.<\/li>\n<li>Using a fork create holes in the crust. Freeze the crust for about an hour.<\/li>\n<li>Preheat oven to 170c degrees.<\/li>\n<li>Blind baking: put a sheet of heat-resistant plastic wrap or baking paper on the frozen crust and fill with dry beans or special weights for baking.<\/li>\n<li>Bake for about 12-14 minutes.<\/li>\n<li>Remove the weights and the plastic wrap and continue to bake the crust for about 4-5 minutes or until it is lightly golden brown.<\/li>\n<li>Cool at room temperature.<\/li>\n<li>Vegetables: in a large skillet heat olive oil.<\/li>\n<li>Add onion and cook over medium-high heat until it becomes transparent.<\/li>\n<li>Add broccoli and zucchini and continue to cook, stirring occasionally, until the broccoli and zucchini slightly soften.<\/li>\n<li>Season with salt, pepper and nutmeg and stir. Taste and adjust seasoning if necessary.<\/li>\n<li>Cool slightly at room temperature.<\/li>\n<li>Royal: in a small bowl put cream, eggs, salt, pepper and flour and beat into a smooth mixture.<\/li>\n<li>Assemble the quiche: spread the vegetables on the half-baked crust evenly. Sprinkle with some ricotta cheese on top and pour the royal sauce gently.<\/li>\n<li>Bake for 30-40 minutes or until golden and set.<\/li>\n<li>Cool slightly and serve at room temperature.<\/li>\n<\/ol><\/div>\n<div class=\"wprm-fallback-recipe-notes\">\n<ul style=\"text-align: left\">\n<li>The quiche is at its best on the day or two after the preparation.
