I\u2019m actually not a big fan of Passover, and this holiday is really not my favorite, but every year I, of course, make the desserts.<\/p>\n<p dir=\"ltr\" style=\"text-align: justify;\">This pistachio cake is perfect for Passover, but I make it all year round too for friend and family who avoid gluten or suffer from celiac. It\u2019s a beautiful cake made of three layers of pistachio cake filled with chocolate cream. If you like chocolate and pistachios (with a hint of espresso) \u2013 you\u2019re going to love this cake.<\/p>\n<div id=\"attachment_12132\" style=\"width: 810px\" class=\"wp-caption alignnone\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-12132\" class=\"wp-image-12132\" title=\"Gluten Free Pistachio Cake filled with Chocolate Cream and Espresso\" src=\"https:\/\/www.lilcookie.com\/wp-content\/uploads\/2012\/04\/chocolate_pistachio_torte2-s.jpg\" alt=\"Gluten Free Pistachio Cake filled with Chocolate Cream and Espresso\" width=\"800\" height=\"534\" \/><p id=\"caption-attachment-12132\" class=\"wp-caption-text\">Photo: Natalie Levin<\/p><\/div>\n<p><script async src=\"\/\/pagead2.googlesyndication.com\/pagead\/js\/adsbygoogle.js\"><\/script><br \/>\n<ins class=\"adsbygoogle\" style=\"display: block;\" data-ad-client=\"ca-pub-6091382327871787\" data-ad-slot=\"7832461759\" data-ad-format=\"auto\"><\/ins><br \/>\n<script>\n     (adsbygoogle = window.adsbygoogle || []).push({});\n<\/script><\/p>\n<p><!--WPRM Recipe 20175--><\/p>\n<div class=\"wprm-fallback-recipe\">\n<h2 class=\"wprm-fallback-recipe-name\">Gluten Free Pistachio Cake filled with Chocolate Cream and Espresso<\/h2>\n<p class=\"wprm-fallback-recipe-summary\">\n<div class=\"wprm-fallback-recipe-equipment\">\n\t\t\t<\/div>\n<div class=\"wprm-fallback-recipe-ingredients\">\n<h4>For the pistachio cake layers:<\/h4>\n<ul>\n<li>5 large eggs<\/li>\n<li>180 grams (3\/4 cup + 3 tbsp.) sugar<\/li>\n<li>Pinch of salt<\/li>\n<li>1 tsp. vanilla extract<\/li>\n<li>60 grams (2\/3 cup) natural ground pistachios<\/li>\n<li>60 grams (2\/3 cup) almond meal<\/li>\n<li>80 grams (1\/2 cup + 1 tbsp.) cornstarch<\/li>\n<\/ul>\n<h4>For chocolate cream:<\/h4>\n<ul>\n<li>500 ml. (2 cups) milk<\/li>\n<li>1 tsp. vanilla extract<\/li>\n<li>4 large egg yolks<\/li>\n<li>140 grams (3\/4 cup) sugar<\/li>\n<li>50 grams (5 tbsp.) cornstarch<\/li>\n<li>100 grams dark chocolate (chopped)<\/li>\n<li>250 ml. (1 cup) cold whipping cream<\/li>\n<\/ul>\n<h4>For espresso syrup:<\/h4>\n<ul>\n<li>120 ml. (1\/2 cup) water<\/li>\n<li>120 grams (1\/2 cup + 2 tbsp.) sugar<\/li>\n<li>30 ml. (2 tbsp.) espresso (liquid)<\/li>\n<\/ul>\n<h4>For decoration:<\/h4>\n<ul>\n<li>Roasted pistachios (chopped)<\/li>\n<li>Espresso macarons<\/li>\n<\/ul><\/div>\n<div class=\"wprm-fallback-recipe-instructions\">\n<ol>\n<li>Pistachio cake: preheat 175c degrees<\/li>\n<li>In a mixer bowl with a whipping attachment place eggs, sugar, salt and vanilla and whip at high speed for 5-6 minutes or until airy fluffy foam is formed.<\/li>\n<li>Add ground pistachios, almond meal and cornstarch, and fold with a spatula until combined.<\/li>\n<li>Divide the batter evenly between three lightly greased cake pans and flatten the top with a palate.<\/li>\n<li>Bake each cake layer separately for 8-10 minutes or until it is golden and springy to the touch. It is important to completely cool the three layers before the cake is assembled.<\/li>\n<li>Chocolate cream: in a small pot, put milk and vanilla and heat to a boil.<\/li>\n<li>In a medium bowl whisk egg yolks, sugar and cornstarch until combined.<\/li>\n<li>Add about 1\/3 of the hot milk into the egg yolk mixture and whisk well until combined.<\/li>\n<li>Return the mixture to the remaining milk in the pot and whisk.<\/li>\n<li>Return the pot to the stove and cook over medium heat while whisking constantly until thick pastry cream is formed.<\/li>\n<li>Remove from the stove and add in the chopped chocolate. Mix well until combined and melted completely.<\/li>\n<li>Transfer the cream to a flat container, cover the surface of the cream with a plastic wrap and cool for about 2-3 hours in the refrigerator, until it is completely cold.<\/li>\n<li>When the cream is cold, transfer it to a clean bowl and whisk until it returns to its original texture.<\/li>\n<li>In a mixer bowl, whip the cream until stable whipped cream is formed .<\/li>\n<li>Fold the whipped cream into the chocolate cream until light and airy chocolate cream forms.<\/li>\n<li>Cool in the refrigerator until assembly of the cake.<\/li>\n<li>Espresso syrup: in a small pot, put water and sugar and heat to a boil. Lower the flame and cook for 2-3 more minutes.<\/li>\n<li>Remove from the heat, add in the espresso and stir well. Cool before use.<\/li>\n<li>Assemble the cake: place the first cake layer on a serving plate and gently brush it with syrup. Pour over about \u00bc of the chocolate cream and straighten with a palate knife.<\/li>\n<li>Place the second cake layer on top of the cream and gently press it. Brush with syrup and pour another \u00bc of the cream on top. Straighten with a palate knife.<\/li>\n<li>Place the third layer of the cake on top of the cream, brush it with syrup and cover the cake completely (top and sides) with the remaining chocolate cream.<\/li>\n<li>Transfer the remaining cream into a piping bag fitted with a small round piping tip and drizzle small chocolate cream mounds on top of the cake.<\/li>\n<li>Refrigerate for at least 3 hours before serving.<\/li>\n<li>Before serving, decorate with macarons and chopped pistachios.<\/li>\n<\/ol><\/div>\n<div class=\"wprm-fallback-recipe-notes\">\n<ul>\n<li style=\"text-align: left\">If you don\u2019t like pistachios you can replace them with an extra amount of almond meal.<\/li>\n<li style=\"text-align: left\">Baking in 3 different cake pans is easier in this case, instead of cutting a whole cake to 3 equal layers, as the cake layers are quite tender and soft.<\/li>\n<li style=\"text-align: left\">You can omit the espresso from the syrup if you don\u2019t like coffee.<\/li>\n<li style=\"text-align: left\">It\u2019s important to use dark chocolate with at least 55% cocoa solids in the cream to get a stable chocolate cream.<\/li>\n<li style=\"text-align: left\">Keep the cake well covered in the refrigerator for 4-5 days.<\/li>\n<\/ul><\/div>\n<div class=\"wprm-fallback-recipe-meta\">\n\t\t\t<\/div>\n<\/div>\n<p><!--End WPRM Recipe--><\/p>\n<div id=\"attachment_12133\" style=\"width: 810px\" class=\"wp-caption alignnone\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-12133\" class=\"wp-image-12133\" title=\"Gluten Free Pistachio Cake filled with Chocolate Cream and Espresso\" src=\"https:\/\/www.lilcookie.com\/wp-content\/uploads\/2012\/04\/chocolate_pistachio_torte-s.jpg\" alt=\"Gluten Free Pistachio Cake filled with Chocolate Cream and Espresso\" width=\"800\" height=\"534\" \/><p id=\"caption-attachment-12133\" class=\"wp-caption-text\">Photo: Natalie Levin<\/p><\/div>\n<\/span>","protected":false},"excerpt":{"rendered":"<p>Passover is almost here, and in less than a month we\u2019ll be sitting around the beautiful Seder table for the traditional feast.
