A crispy and buttery golden short crust pastry filled with classic vanilla pastry cream that is topped with tons of fresh strawberries \u2013 what\u2019s not to like? \ud83d\ude09<\/p>\n<p dir=\"ltr\" style=\"text-align: justify;\">If you have some strawberries lying around the kitchen, you should make this classic strawberry tart. It\u2019s so delicious and everyone who loves strawberries will LOVE this tart. It\u2019s a great dessert for the weekend and a wonderful treat in general.<\/p>\n<div id=\"attachment_12500\" style=\"width: 810px\" class=\"wp-caption alignnone\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-12500\" class=\"wp-image-12500\" title=\"Strawberry Tart with Vanilla Pastry Cream\" src=\"https:\/\/www.lilcookie.com\/wp-content\/uploads\/2009\/01\/strawberry_and_vanilla_tart-s.jpg\" alt=\"Strawberry Tart with Vanilla Pastry Cream\" width=\"800\" height=\"1242\" \/><p id=\"caption-attachment-12500\" class=\"wp-caption-text\">Photo: Natalie Levin<\/p><\/div>\n<p><script async src=\"\/\/pagead2.googlesyndication.com\/pagead\/js\/adsbygoogle.js\"><\/script><br \/>\n<ins class=\"adsbygoogle\" style=\"display: block;\" data-ad-client=\"ca-pub-6091382327871787\" data-ad-slot=\"7832461759\" data-ad-format=\"auto\"><\/ins><br \/>\n<script>\n     (adsbygoogle = window.adsbygoogle || []).push({});\n<\/script><\/p>\n<p><!--WPRM Recipe 19975--><\/p>\n<div class=\"wprm-fallback-recipe\">\n<h2 class=\"wprm-fallback-recipe-name\">Strawberry Tart with Vanilla Pastry Cream<\/h2>\n<p class=\"wprm-fallback-recipe-summary\">\n<div class=\"wprm-fallback-recipe-equipment\">\n\t\t\t<\/div>\n<div class=\"wprm-fallback-recipe-ingredients\">\n<h4>For the dough:<\/h4>\n<ul>\n<li>100 grams (1 stick) cold butter, cut into cubes<\/li>\n<li>100 grams (3\/4 cup) all-purpose flour<\/li>\n<li>25 grams (2 tbsp.) cornstarch<\/li>\n<li>50 grams (5 tbsp.) sugar powder<\/li>\n<li>25 grams (1\/4 cup) almond meal<\/li>\n<li>1 medium egg yolk<\/li>\n<li>1 tsp. rum or brandy (can substitute with milk as well)<\/li>\n<\/ul>\n<h4>For the  vanilla pastry cream:<\/h4>\n<ul>\n<li>300 ml. (1 \u00bc cups) milk<\/li>\n<li>Seeds from \u00bd a vanilla bean<\/li>\n<li>80 grams (1\/3 cup) sugar<\/li>\n<li>3 medium egg yolks<\/li>\n<li>40 grams (4 tbsp.) cornstarch<\/li>\n<li>1 tbsp. rum or brandy (optional)<\/li>\n<li>50 grams (1\/2 stick) soft butter<\/li>\n<\/ul>\n<h4>For decoration:<\/h4>\n<ul>\n<li>200-300 grams fresh strawberries (sliced)<\/li>\n<\/ul>\n<h4>For the glaze:<\/h4>\n<ul>\n<li>2-3 tbsp. strawberry jam (lightly heated)<\/li>\n<\/ul><\/div>\n<div class=\"wprm-fallback-recipe-instructions\">\n<ol>\n<li>Dough: place butter, flour, cornstarch, sugar powder and almond meal in a food processor with a steel blade and blend until you get a crumbly mixture that resembles damp sand in texture.<\/li>\n<li>Add yolk and rum and continue to blend until large chunks of dough form. If the dough does not unite &#8211; add another 1 teaspoon of cold water.<\/li>\n<li>Wrap the dough in plastic wrap, flatten it to a disc shape and refrigerate for 1 hour.<\/li>\n<li>On a floured work surface, roll the dough about 3-4 mm thick, and place it in the pan. It\u2019s important to create a straight angle between the edges of the pan to the base so that the sides will remain high while baking and won\u2019t shrink.<\/li>\n<li>Pierce the crust with a fork and chill for 30 minutes in the freezer.<\/li>\n<li>Preheat the oven to 170c degrees.<\/li>\n<li>Cover the crust with heat-proof plastic wrap or parchment paper and fill with baking weights.<\/li>\n<li>Bake the crust for 12-14 minutes. Remove the weights and plastic wrap and continue to bake for another 10-12 minutes or until the crust is completely golden.<\/li>\n<li>Remove from the oven and let cool completely at room temperature.<\/li>\n<li>Vanilla pastry cream: in a medium saucepan, put milk and vanilla seeds and heat to a boiling point.<\/li>\n<li>Meanwhile, in a separate bowl mix egg yolks, sugar, cornstarch and rum into a uniform mixture.<\/li>\n<li>Once the milk reaches boiling point, add approximately 1\/3 of the boiling milk mixture to the yolk mixture while vigorously whisking (it is very important to mix the whole time).<\/li>\n<li>Return the mixture to the pot with the remaining milk and continue to stir on low heat, while whisking constantly, until a thick, uniform pastry cream is formed.<\/li>\n<li>Add butter and stir until it is absorbed into the cream.<\/li>\n<li>Transfer the cream to a wide container and cover the surface with plastic wrap.<\/li>\n<li>Cool the cream in the refrigerator for 3-4 hours or until completely cold.<\/li>\n<li>Transfer the cold cream to a bowl whisk it until it returns to the original creamy texture.<\/li>\n<li>Assemble the tart: fill the crust with vanilla pastry cream and flatten the top.<\/li>\n<li>Arrange the sliced \u200b\u200bstrawberries over the cream and gently brush them with a little strawberry jam.<\/li>\n<\/ol><\/div>\n<div class=\"wprm-fallback-recipe-notes\">\n<ul>\n<li style=\"text-align: left\">The tart is at its best on the day of preparation, but it can be kept in a closed container in the refrigerator for up to 2-3 days.<\/li>\n<li style=\"text-align: left\">Instead of strawberries you can use any other fruit you like.
