You make 4 cookie rolls out of the dough and just slice and bake cookies before baking, and enjoy a fresh batch every single time.<\/p>\n<div id=\"attachment_10039\" style=\"width: 810px\" class=\"wp-caption alignnone\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-10039\" class=\"wp-image-10039\" title=\"Slice and Bake Coffee Cookies with Pecans\" src=\"https:\/\/www.lilcookie.com\/wp-content\/uploads\/2010\/07\/pecan_and_coffee_cookies-s.jpg\" alt=\"Slice and Bake Coffee Cookies with Pecans\" width=\"800\" height=\"534\" \/><p id=\"caption-attachment-10039\" class=\"wp-caption-text\">Photo: Natalie Levin<\/p><\/div>\n<p><script async src=\"\/\/pagead2.googlesyndication.com\/pagead\/js\/adsbygoogle.js\"><\/script><br \/>\n<ins class=\"adsbygoogle\" style=\"display: block;\" data-ad-client=\"ca-pub-6091382327871787\" data-ad-slot=\"7832461759\" data-ad-format=\"auto\"><\/ins><br \/>\n<script>\n     (adsbygoogle = window.adsbygoogle || []).push({});\n<\/script><\/p>\n<p><!--WPRM Recipe 19924--><\/p>\n<div class=\"wprm-fallback-recipe\">\n<h2 class=\"wprm-fallback-recipe-name\">Slice and Bake Coffee Cookies with Pecans<\/h2>\n<p class=\"wprm-fallback-recipe-summary\">\n\t\tBased on a recipe from Reviva and Celia, with a few changes and adjustments.\t<\/p>\n<div class=\"wprm-fallback-recipe-equipment\">\n\t\t\t<\/div>\n<div class=\"wprm-fallback-recipe-ingredients\">\n<h4>For the cookie dough:<\/h4>\n<ul>\n<li>500 grams (3 1\/3 cups) all-purpose flour<\/li>\n<li>400 grams (3 1\/2 sticks) cold butter cut into cubes<\/li>\n<li>200 grams (1 3\/4 cups) sugar powder<\/li>\n<li>Pinch of salt<\/li>\n<li>1\/2 tsp. vanilla extract<\/li>\n<li>150 grams (1 1\/2 cups) coarsely chopped pecans<\/li>\n<li>1 egg yolk<\/li>\n<li>1 tbsp. cold milk<\/li>\n<li>3 tbsp. espresso<\/li>\n<\/ul>\n<h4>For brushing and coating:<\/h4>\n<ul>\n<li>1 large egg white<\/li>\n<li>light brown sugar<\/li>\n<\/ul><\/div>\n<div class=\"wprm-fallback-recipe-instructions\">\n<ol>\n<li>In a food processor with a steel blade put flour, butter, powdered sugar, salt, vanilla and pecans and process until mixture is crumbly.<\/li>\n<li>Add the egg yolk, milk and espresso, and continue to process until lumps of dough form.<\/li>\n<li>Transfer the dough chunks on a lightly floured work surface and unite together.<\/li>\n<li>Divide into 4 parts and form each part into a 2-3 cm in diameter roll.<\/li>\n<li>Cool the rolls of dough in the freezer for 1-2 hours or until completely frozen.<\/li>\n<li>Preheat oven to 170c degrees.<\/li>\n<li>Brush the rolls with egg white and cover in light brown sugar until well coated.<\/li>\n<li>Cut the rolls into 1\/2 cm thick cookies and put on a baking tray lined with baking paper.<\/li>\n<li>Bake for about 12-15 minutes, or until golden and set.<\/li>\n<li>Cool completely and store in a sealed jar.<\/li>\n<\/ol><\/div>\n<div class=\"wprm-fallback-recipe-notes\">\n<ul>\n<li style=\"text-align: left\">Instead of pecans you can use any other kind of nut you like, such as walnuts, hazelnuts, cashews, pistachios etc.<\/li>\n<li style=\"text-align: left\">Keep the cookies in a sealed jar at room temperature for up to a week.<\/li>\n<\/ul><\/div>\n<div class=\"wprm-fallback-recipe-meta\">\n\t\t\t<\/div>\n<\/div>\n<p><!--End WPRM Recipe--><\/p>\n<\/span>","protected":false},"excerpt":{"rendered":"<p>Coffee and pecans is such a delicious combination in sweets and desserts.
