I believe that if I lived in the US as a child my favorite snack would have probably been peanut butter and jelly sandwich. I love how the slight saltiness of the peanut butter combines with the sweetness of the jelly, and together it\u2019s simply divine.<\/p>\n<p dir=\"ltr\" style=\"text-align: justify;\">Recently I\u2019ve made many kinds of krembo cookies. I started with the traditional <a href=\"https:\/\/www.lilcookie.com\/chocolate-vanilla-krembo\/\">vanilla and chocolate krembo cookies<\/a>, then I made <a href=\"https:\/\/www.lilcookie.com\/raspberry-mascarpone-white-chocolate-krembo\/\">raspberry and mascarpone krembo cookies<\/a>, and now \u2013 peanut butter krembo cookies with a jelly surprise in the center, that reveals only after the first bite.<\/p>\n<p dir=\"ltr\" style=\"text-align: justify;\">Krembo is such a great snack that I really don\u2019t know anyone who doesn\u2019t like it. The combination of a crunchy cookie base topped with luscious cream and chocolate coating is just amazing. if you like peanut butter and jelly \u2013 you\u2019re gonna love these peanut butter krembo cookies!<\/p>\n<div id=\"attachment_19848\" style=\"width: 810px\" class=\"wp-caption alignnone\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-19848\" class=\"wp-image-19848\" title=\"Peanut Butter Krembo Cookies with Jelly Surprise\" src=\"https:\/\/www.lilcookie.com\/wp-content\/uploads\/2018\/02\/pb_jelly_krembo_cookies-s.jpg\" alt=\"Peanut Butter Krembo Cookies with Jelly Surprise\" width=\"800\" height=\"1200\" \/><p id=\"caption-attachment-19848\" class=\"wp-caption-text\">Photo: Natalie Levin<\/p><\/div>\n<p><script async src=\"\/\/pagead2.googlesyndication.com\/pagead\/js\/adsbygoogle.js\"><\/script><br \/>\n<ins class=\"adsbygoogle\" style=\"display: block;\" data-ad-client=\"ca-pub-6091382327871787\" data-ad-slot=\"7832461759\" data-ad-format=\"auto\"><\/ins><br \/>\n<script>\n     (adsbygoogle = window.adsbygoogle || []).push({});\n<\/script><\/p>\n<p><!--WPRM Recipe 19855--><\/p>\n<div class=\"wprm-fallback-recipe\">\n<h2 class=\"wprm-fallback-recipe-name\">Peanut Butter Krembo Cookies with Jelly Surprise<\/h2>\n<p class=\"wprm-fallback-recipe-summary\">\n\t\t\t<\/p>\n<div class=\"wprm-fallback-recipe-equipment\">\n\t\t\t<\/div>\n<div class=\"wprm-fallback-recipe-ingredients\">\n<h4>For the cookie base:<\/h4>\n<ul>\n<li>50 grams (3 tbsp.) cold butter (cut into cubes)<\/li>\n<li>20 grams (2 tbsp.) sugar powder<\/li>\n<li>70 grams (1\/2 cup) all-purpose flour<\/li>\n<li>1 tbsp. cornstarch<\/li>\n<li>1\/2 tsp. vanilla extract<\/li>\n<li>Pinch of salt<\/li>\n<li>1-2 tbsp. milk<\/li>\n<\/ul>\n<h4>For the peanut butter cream:<\/h4>\n<ul>\n<li>225 grams (1 pack) mascarpone cheese (at room temperature)<\/li>\n<li>60 grams (1\/2 cup) sugar powder<\/li>\n<li>80 grams (2 heaping tablespoons) smooth peanut butter<\/li>\n<li>250 ml. (1 cup) cold whipping cream<\/li>\n<\/ul>\n<h4>For the jelly surprise:<\/h4>\n<ul>\n<li>100-150 grams (4-5 heaping tablespoons) raspberry or strawberry jam<\/li>\n<\/ul>\n<h4>For coating:<\/h4>\n<ul>\n<li>250 grams dark chocolate<\/li>\n<li>1 tbsp. vegetable oil<\/li>\n<\/ul>\n<h4>For decoration:<\/h4>\n<ul>\n<li>Roasted peanuts (coarsely chopped)<\/li>\n<\/ul><\/div>\n<div class=\"wprm-fallback-recipe-instructions\">\n<ol>\n<li>Make the cookies: preheat oven to 170c degrees.<\/li>\n<li>In a food processor with steel blade put butter, sugar powder, flour, cornstarch, vanilla and salt and blend until small crumbles form.<\/li>\n<li>Add the milk gradually and continue to process just until large clumps of dough are formed.<\/li>\n<li>Transfer the dough chunks on a lightly floured work surface, combine with your hands and make a round disc shape.<\/li>\n<li>Wrap in plastic wrap and refrigerate for about an hour.<\/li>\n<li>Roll out the dough on a floured surface to about 1\/2 cm thick and cut out 5-6 cm circles.<\/li>\n<li>Arrange the cookies on an oven pan lined with baking paper.<\/li>\n<li>Bake the cookies for about 10 minutes or until golden. Cool completely.<\/li>\n<li>Peanut butter cream: in a mixer bowl with a whipping attachment place mascarpone, powdered sugar and peanut butter, and whip at medium speed until the mascarpone softens slightly.<\/li>\n<li>Increase to high speed and add the heavy cream in a thin stream until you get a uniform and stable cream.<\/li>\n<li>Transfer the cream into a piping bag with a round 2 cm piping tip and drizzle a generous mound on top of each cookie.<\/li>\n<li>Transfer the jam into a small piping bag and make a small hole. Place the piping bag slightly inside the peanut butter cream and gently drizzle in some jelly.<\/li>\n<li>Cool the krembo cookies in the freezer for about an hour.<\/li>\n<li>Dark chocolate coating: melt the chocolate and place in a tall glass.<\/li>\n<li>Add oil and mix.<\/li>\n<li>Dip the Krembo in the chocolate, shake off excess chocolate and place on a pan to set. It is also possible to pour the chocolate coating on top of the krembos.<\/li>\n<li>Decorate with roasted peanuts and cool for about 10 minutes in the freezer to set.<\/li>\n<\/ol><\/div>\n<div class=\"wprm-fallback-recipe-notes\">\n<ul>\n<li style=\"text-align: left\">Keep the krembo cookies in a closed container for up to a week.<\/li>\n<li style=\"text-align: left\">You can use smooth peanut butter or chunky peanut butter, but the texture will change accordingly.<\/li>\n<li style=\"text-align: left\">You can use milk or white chocolate for the coating instead of the dark chocolate in the same amount.<\/li>\n<li style=\"text-align: left\">You can freeze the Krembo cookies in a sealed container for up to one month.<\/li>\n<li style=\"text-align: left\">You can use any flavor of jelly you like.<\/li>\n<\/ul><\/div>\n<div class=\"wprm-fallback-recipe-meta\">\n\t\t\t<\/div>\n<\/div>\n<p><!--End WPRM Recipe--><\/p>\n<div id=\"attachment_19847\" style=\"width: 810px\" class=\"wp-caption alignnone\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-19847\" class=\"wp-image-19847\" title=\"Peanut Butter Krembo Cookies with Jelly Surprise\" src=\"https:\/\/www.lilcookie.com\/wp-content\/uploads\/2018\/02\/pb_jelly_krembo_cookies3-s.jpg\" alt=\"Peanut Butter Krembo Cookies with Jelly Surprise\" width=\"800\" height=\"1200\" \/><p id=\"caption-attachment-19847\" class=\"wp-caption-text\">Photo: Natalie Levin<\/p><\/div>\n<\/span>","protected":false},"excerpt":{"rendered":"<p>One of my favorite flavors combination is the oh-so-common peanut butter and jelly.
