Cookies are a kind of a guilty pleasure to me \u2013 one cookie can easily become 3 or even 10 cookies I eat, it&#8217;s simply so hard to resist and tempting.<\/p>\n<p dir=\"ltr\" style=\"text-align: justify;\">I made the following cookies for several times recently, each time with slight changes, until I reached this version. These are chocolate cookies, with lots of chocolate chips and some peanut butter that adds a delicate peanut flavor and a gorgeous aroma. They are crunchy on the outside but melt in the mouth on the inside and super chocolate-y.<\/p>\n<div id=\"attachment_17217\" style=\"width: 810px\" class=\"wp-caption alignnone\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-17217\" class=\"wp-image-17217\" title=\"Double Chocolate Peanut Butter Cookies\" src=\"https:\/\/www.lilcookie.com\/wp-content\/uploads\/2017\/11\/double_chocolate_peanut_butter_cookies3-s.jpg\" alt=\"Double Chocolate Peanut Butter Cookies\" width=\"800\" height=\"533\" \/><p id=\"caption-attachment-17217\" class=\"wp-caption-text\">Photo: Natalie Levin<\/p><\/div>\n<p><script async src=\"\/\/pagead2.googlesyndication.com\/pagead\/js\/adsbygoogle.js\"><\/script><br \/>\n<ins class=\"adsbygoogle\" style=\"display: block;\" data-ad-client=\"ca-pub-6091382327871787\" data-ad-slot=\"7832461759\" data-ad-format=\"auto\"><\/ins><br \/>\n<script>\n     (adsbygoogle = window.adsbygoogle || []).push({});\n<\/script><\/p>\n<h4 dir=\"ltr\" style=\"text-align: justify;\"><strong>Double Chocolate Peanut Butter Cookies<\/strong><\/h4>\n<p dir=\"ltr\" style=\"text-align: justify;\">30-40 cookies<\/p>\n<p dir=\"ltr\" style=\"text-align: justify;\"><u>Ingredients:<br \/>\n<\/u>100 grams butter at room temperature<br \/>\n125 grams (1\/2 cup) smooth peanut butter<br \/>\n100 grams (1\/2 cup) sugar<br \/>\n100 grams (1\/2 cup) light brown sugar<br \/>\n1 tsp. vanilla extract<br \/>\n1\/2 tsp. salt<br \/>\n1 large egg<br \/>\n140 grams (1 cup) all-purpose flour<br \/>\n35 grams (1\/4 cup) cocoa powder<br \/>\n1 tsp. baking soda<br \/>\n250 grams dark chocolate chips<\/p>\n<p dir=\"ltr\" style=\"text-align: justify;\"><u>For decoration:<br \/>\n<\/u>100 grams dark chocolate chips<br \/>\nA little coarse salt<\/p>\n<h4 dir=\"ltr\" style=\"text-align: justify;\"><strong>Preparation:<\/strong><\/h4>\n<ol dir=\"ltr\" style=\"text-align: justify;\">\n<li>Preheat the oven to 170c degrees.<\/li>\n<li>In a mixer bowl with a paddle attachment, put butter, peanut butter, sugar, light brown sugar, vanilla and salt and mix at medium to high speed until a uniform, soft and creamy mixture is obtained.<\/li>\n<li>Scrape down the sides of the bowl using a spatula and add in an egg. Mix at medium speed until incorporated.<\/li>\n<li>Add flour, cocoa powder, baking soda and chocolate chips and mix only until large chunks of dough are formed.<\/li>\n<li>Using a small ice cream scoop or 2 teaspoons, create mounds of dough and place them in increments on baking pans lined with baking paper.<\/li>\n<li>Arrange a few pieces of chocolate chips on top of each cookie and some coarse salt.<\/li>\n<li>Gently press down the cookies with your hands.<\/li>\n<li>Bake the cookies for 12-15 minutes or until they rise and set at the edges but are still slightly soft in the center.<\/li>\n<li>Cool completely at room temperature and serve.<\/li>\n<\/ol>\n<h4 dir=\"ltr\" style=\"text-align: justify;\"><strong>Notes:<\/strong><\/h4>\n<ul dir=\"ltr\">\n<li style=\"text-align: justify;\">Store the cookies in a sealed jar for up to a week.<\/li>\n<li style=\"text-align: justify;\">You can use smooth or chunky peanut butter.
