Serve it with a small green salad \u2013 and it&#8217;s just perfect.<\/p>\n<div id=\"attachment_9988\" style=\"width: 810px\" class=\"wp-caption alignnone\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-9988\" class=\"wp-image-9988\" title=\"Mushroom Quiche with Walnut\" src=\"https:\/\/www.lilcookie.com\/wp-content\/uploads\/2009\/08\/mushroom_and_white_wine_quiche-s.jpg\" alt=\"Mushroom Quiche with Walnut\" width=\"800\" height=\"534\" \/><p id=\"caption-attachment-9988\" class=\"wp-caption-text\">Photo: Natalie Levin<\/p><\/div>\n<p><script async src=\"\/\/pagead2.googlesyndication.com\/pagead\/js\/adsbygoogle.js\"><\/script><br \/>\n<ins class=\"adsbygoogle\" style=\"display: block;\" data-ad-client=\"ca-pub-6091382327871787\" data-ad-slot=\"7832461759\" data-ad-format=\"auto\"><\/ins><br \/>\n<script>\n     (adsbygoogle = window.adsbygoogle || []).push({});\n<\/script><\/p>\n<p><!--WPRM Recipe 21026--><\/p>\n<div class=\"wprm-fallback-recipe\">\n<h2 class=\"wprm-fallback-recipe-name\">Mushroom Quiche with Walnut<\/h2>\n<p class=\"wprm-fallback-recipe-summary\">\n<div class=\"wprm-fallback-recipe-equipment\">\n\t\t\t<\/div>\n<div class=\"wprm-fallback-recipe-ingredients\">\n<h4>For short crust pastry:<\/h4>\n<ul>\n<li>150 grams all-purpose flour<\/li>\n<li>100 grams cold butter cut into cubes<\/li>\n<li>1 tsp. fine salt<\/li>\n<li>2-3 tbsp. cold water<\/li>\n<\/ul>\n<h4>For mushroom filling:<\/h4>\n<ul>\n<li>800 grams champignon or portebello mushrooms<\/li>\n<li>2 tbsp. olive oil<\/li>\n<li>Salt and pepper to taste<\/li>\n<li>A little grated nutmeg<\/li>\n<li>1 tsp. thyme<\/li>\n<li>1\/2 cup dry white wine<\/li>\n<li>50 grams chopped walnuts<\/li>\n<\/ul>\n<h4>For royal sauce:<\/h4>\n<ul>\n<li>250 ml. sour cream<\/li>\n<li>2 large eggs<\/li>\n<li>1\/4 tsp. salt<\/li>\n<li>Ground black pepper<\/li>\n<li>1 tbsp. all-purpose flour<\/li>\n<\/ul><\/div>\n<div class=\"wprm-fallback-recipe-instructions\">\n<ol>\n<li>Crust: In a food processor with a steel blade put flour, butter and salt and process until the mixture is crumbly.<\/li>\n<li>Add water gradually until the dough clumps.<\/li>\n<li>Transfer the dough on a lightly floured work surface and create a thin disc-shape. Wrap in plastic wrap and chill for 1 hour.<\/li>\n<li>On a floured work surface, roll the dough about 4 mm thick and line the pan, while ensuring a right angle between the bottom and the sides.<\/li>\n<li>Pierce the bottom of the crust with a fork and cool in the freezer for 1 hour.<\/li>\n<li>Mushroom filling: in a large skillet heat olive oil, add the mushrooms and cook until it loses its volume. Add salt, pepper, thyme and nutmeg to taste.<\/li>\n<li>Cook for another 2 minutes and add in the white wine. Cook over high heat until most of the liquid evaporates.<\/li>\n<li>Strain the mushroom mixture and leave to cool for about 1\/2 hour. Stir in the walnuts.<\/li>\n<li>Royal sauce: in a small bowl, whisk sour cream, eggs, salt, pepper and flour into a smooth mixture.<\/li>\n<li>Assemble the quiche: preheat oven to 170 degrees.<\/li>\n<li>Pour the mushroom filling onto the frozen crust in an even layer. Carefully pour over the royal sauce.<\/li>\n<li>Bake for about 40-45 minutes or until golden brown and set.<\/li>\n<li>Serve warm or at room temperature.<\/li>\n<\/ol><\/div>\n<div class=\"wprm-fallback-recipe-notes\">\n<ul>\n<li style=\"text-align: left\">Instead of walnuts you can use any other nut you like.<\/li>\n<li style=\"text-align: left\">Keep in a closed container in the refrigerator for up to 3-4 days.
