These financiers are a unique French pastry that is somewhere between a cookie and a cake texture-wise. It&#8217;s tender and melt-in-your-mouth, and the combination of chocolate and pistachio is simply divine in it.<\/p>\n<div id=\"attachment_17084\" style=\"width: 810px\" class=\"wp-caption alignnone\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-17084\" class=\"wp-image-17084\" title=\"Chocolate Financiers with Pistachios\" src=\"https:\/\/www.lilcookie.com\/wp-content\/uploads\/2017\/10\/chocolate_pistacchio_financiers.jpg\" alt=\"Chocolate Financiers with Pistachios\" width=\"800\" height=\"1200\" \/><p id=\"caption-attachment-17084\" class=\"wp-caption-text\">Photo: Natalie Levin<\/p><\/div>\n<p><script async src=\"\/\/pagead2.googlesyndication.com\/pagead\/js\/adsbygoogle.js\"><\/script><br \/>\n<ins class=\"adsbygoogle\" style=\"display: block;\" data-ad-client=\"ca-pub-6091382327871787\" data-ad-slot=\"7832461759\" data-ad-format=\"auto\"><\/ins><br \/>\n<script>\n     (adsbygoogle = window.adsbygoogle || []).push({});\n<\/script><\/p>\n<h4 dir=\"ltr\" style=\"text-align: justify;\">Chocolate Financiers with Pistachios<\/h4>\n<p dir=\"ltr\" style=\"text-align: justify;\">30-32 very small chocolate financiers<\/p>\n<p dir=\"ltr\" style=\"text-align: justify;\"><u>For the financiers:<br \/>\n<\/u>120 grams (1 stick) butter<br \/>\n30 grams (3 tbsp.) cocoa powder<br \/>\n50 grams (1\/2 cup) almond meal<br \/>\n100 grams (3\/4 cup) sugar powder<br \/>\nPinch of salt<br \/>\n2 large egg whites at room temperature<br \/>\n1 tsp. vanilla extract<br \/>\n1 tbsp. brandy<br \/>\n20-30 grams coarsely chopped pistachios<\/p>\n<h4 dir=\"ltr\" style=\"text-align: justify;\"><strong>Preparation<\/strong><strong>:<\/strong><\/h4>\n<ol dir=\"ltr\" style=\"text-align: justify;\">\n<li>Preheat oven to 170c degrees and lightly grease a mini financiers silicon mold.<\/li>\n<li>Prepare beurre noisette (brown butter): in a small saucepan place the butter and melt over medium heat. Once the butter is completely melted, reduce the heat and cook for another 3-4 minutes it until lightly golden brown.<\/li>\n<li>Remove from the heat and set aside for 10 minutes to cool slightly.<\/li>\n<li>In a bowl, blend cocoa powder, almond meal, sugar powder and salt.<\/li>\n<li>Add egg whites, vanilla and brandy, and stir with a spatula until batter is smooth.<\/li>\n<li>Add brown butter, and stir until incorporated.<\/li>\n<li>Transfer the mixture into a pastry bag and drizzle into the pan.<\/li>\n<li>Sprinkle chopped pistachios on top of each financier.<\/li>\n<li>Bake for 10-15 minutes, until set at the edges but still slightly soft in the center.<\/li>\n<li>Cool completely at room temperature and serve.<\/li>\n<\/ol>\n<h4 dir=\"ltr\" style=\"text-align: justify;\"><strong>Notes:<\/strong><\/h4>\n<ul dir=\"ltr\">\n<li style=\"text-align: justify;\">If you want, you can add chopped chocolate into the mixture.<\/li>\n<li style=\"text-align: justify;\">Keep the financiers in a sealed container in the refrigerator for up to 5 days.<\/li>\n<li style=\"text-align: justify;\">You can use any kind of nut you like instead of pistachios.<\/li>\n<\/ul>\n<\/span>","protected":false},"excerpt":{"rendered":"<p>Chocolate and pistachio are two ingredients I like to combine in just about any dessert or treat.
