Soft and luscious yogurt almond cream with caramelized apples and almond streusel \u2013 all layered in a nice individual glass.<\/p>\n<div id=\"attachment_9953\" style=\"width: 810px\" class=\"wp-caption alignnone\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-9953\" class=\"wp-image-9953\" title=\"Yogurt Cream Parfaits with Apples and Almond Streusel\" src=\"https:\/\/www.lilcookie.com\/wp-content\/uploads\/2009\/09\/apple_almond_and_yogurt_dessert-s.jpg\" alt=\"Yogurt Cream Parfaits with Apples and Almond Streusel\" width=\"800\" height=\"534\" \/><p id=\"caption-attachment-9953\" class=\"wp-caption-text\">Photo: Natalie Levin<\/p><\/div>\n<p><script async src=\"\/\/pagead2.googlesyndication.com\/pagead\/js\/adsbygoogle.js\"><\/script><br \/>\n<ins class=\"adsbygoogle\" style=\"display: block;\" data-ad-client=\"ca-pub-6091382327871787\" data-ad-slot=\"7832461759\" data-ad-format=\"auto\"><\/ins><br \/>\n<script>\n     (adsbygoogle = window.adsbygoogle || []).push({});\n<\/script><\/p>\n<h4 dir=\"ltr\" style=\"text-align: justify;\"><strong>Yogurt Cream Parfaits with Apples and Almond Streusel<\/strong><\/h4>\n<p dir=\"ltr\" style=\"text-align: justify;\">8-10 glasses (about 200 ml. in volume)<\/p>\n<p dir=\"ltr\" style=\"text-align: justify;\"><u>For almond streusel:<br \/>\n<\/u>100 grams sugar<br \/>\n100 grams all-purpose flour<br \/>\n100 grams cold butter cut into cubes<br \/>\n40 grams almond meal<\/p>\n<p dir=\"ltr\" style=\"text-align: justify;\"><u>For yogurt and honey cream:<br \/>\n<\/u>200 ml. natural white yogurt 3% fat<br \/>\n250 ml. heavy cream<br \/>\n20 grams honey<br \/>\n1\/2 tsp. vanilla extract<\/p>\n<p dir=\"ltr\" style=\"text-align: justify;\"><u>Caramelized apples<\/u><u>:<br \/>\n<\/u>6 large Granny Smith apples, peeled and diced<br \/>\n120 grams sugar<br \/>\n50 ml. water<br \/>\n20 grams honey<br \/>\nJuice of one lemon<br \/>\n1-2 tbsp. rum<br \/>\n1\/2 tsp. vanilla extract<\/p>\n<h4 dir=\"ltr\" style=\"text-align: justify;\"><strong>Preparation<\/strong><strong>:<\/strong><\/h4>\n<ol dir=\"ltr\" style=\"text-align: justify;\">\n<li>Streusel: preheat oven to 180c degrees.<\/li>\n<li>In a food processor with a steel blade put sugar, flour, butter and almonds and process until crumbly. Spread the crumbs on a pan lined with baking paper.<\/li>\n<li>Bake for 8-10 minutes, until golden brown.<\/li>\n<li>Cool completely before use.<\/li>\n<li>Caramelized apples: in a medium saucepan put sugar, water and honey and heat over high heat until caramel forms.<\/li>\n<li>Add in the apple cubes and lemon juice and reduce the flame.<\/li>\n<li>Cook over medium-low until the apples are tender (but not too much) and caramelized \u2013 this should take about 5 minutes. Towards the end of cooking add the rum and vanilla.<\/li>\n<li>Strain the mixture and cool completely at room temperature.<\/li>\n<li>Yogurt and honey cream: in a bowl of a mixer whip yogurt, cream, honey and vanilla until stable cream is formed.<\/li>\n<li>Assemble the desserts: pour a little yogurt and honey cream in each glass, up to 1\/3 if its height.<\/li>\n<li>Put apple cubes on top of the cream and sprinkle almond streusel.<\/li>\n<li>Serve immediately.<\/li>\n<\/ol>\n<h4 dir=\"ltr\" style=\"text-align: justify;\"><strong>Notes:<\/strong><\/h4>\n<ul dir=\"ltr\">\n<li style=\"text-align: justify;\">Keep in the refrigerator for 2-3 days.<\/li>\n<li style=\"text-align: justify;\">You can replace the apples in any other fruit: pears, quince, nectarines etc.<\/li>\n<\/ul>\n<\/span>","protected":false},"excerpt":{"rendered":"<p>If you&#8217;re looking for an easy dessert for Rosh Hashana \u2013 this is the one!
