(2 tbsp. + 1 tsp.) milk<\/li>\n<li>40 grams (4 tbsp.) sugar<\/li>\n<li>1\/2 tsp. salt<\/li>\n<li>40 grams (2 tbsp.) honey<\/li>\n<li>2 large eggs<\/li>\n<li>75 grams butter (cut into cubes)<\/li>\n<\/ul>\n<h4>For caramelized apples:<\/h4>\n<ul>\n<li>2 large Granny Smith apples<\/li>\n<li>40 grams (4 tbsp.) sugar<\/li>\n<li>Juice of 1\/2 lemon<\/li>\n<li>1\/2 tsp. vanilla extract<\/li>\n<\/ul>\n<h4>For pecan and cinnamon filling:<\/h4>\n<ul>\n<li>75 grams (3\/4 cup) pecans<\/li>\n<li>1 tsp. ground cinnamon<\/li>\n<li>1 tbsp. all-purpose flour or cornstarch<\/li>\n<li>60 grams (1\/2 stick) cold butter (cut into cubes)<\/li>\n<li>60 grams (6 tbsp.) light brown sugar<\/li>\n<li>Pinch of salt<\/li>\n<li>1 egg yolk<\/li>\n<li>2 tbsp. milk<\/li>\n<li>50 grams (1\/2 cup) coarsely chopped pecans<\/li>\n<\/ul>\n<h4>For brushing:<\/h4>\n<ul>\n<li>1 beaten egg<\/li>\n<\/ul>\n<h4>For glazing and decoration:<\/h4>\n<ul>\n<li>30-40 grams (1-2 tbsp.) honey (lightly heated)<\/li>\n<li>Slices roasted almonds<\/li>\n<\/ul><\/div>\n<div class=\"wprm-fallback-recipe-instructions\">\n<ol>\n<li>Dough: place flour, yeast, milk, sugar, salt, honey and eggs in a mixer bowl with a kneading hook and knead for 4-5 minutes until dough is formed.<\/li>\n<li>Add in the butter gradually and continue kneading for another 4-5 minutes until it is absorbed into a uniform dough.<\/li>\n<li>Cover the dough with plastic wrap and cool overnight in the refrigerator. The dough is not supposed to double its volume, but slightly rise and that&#8217;s fine.<\/li>\n<li>Caramelized apples: peel the apples and cut into medium cubes.<\/li>\n<li>Heat a skillet over a high flame and cook the apples for a few minutes until they begin to soften slightly.<\/li>\n<li>Add sugar, lemon and vanilla, and cook until the sugar melts and the apples soften.<\/li>\n<li>Cool completely at room temperature.<\/li>\n<li>Peanut and cinnamon filling: in a food processor with a steel blade, put pecans, cinnamon and flour and blend until a thin powder is obtained.<\/li>\n<li>Add butter, sugar and salt and mix until crumbly.<\/li>\n<li>Add yolk and milk and blend until you get a uniform, thick cream.<\/li>\n<li>Assemble the cake: on a floured work surface roll the dough into a 3-4 mm thick rectangle.<\/li>\n<li>Spread a uniform layer of pecan and cinnamon cream over the dough and sprinkle with chopped pecans and caramelized apple cubes.<\/li>\n<li>Roll to a tight roll and cut it lengthwise to 2 long strips.<\/li>\n<li>Braid the 2 strips of dough in a screw shape and finally roll them around it to form a challah.<\/li>\n<li>Place the challah in a lightly greased pan, cover and allow rising for 1-2 hours or until it has risen and almost double in volume.<\/li>\n<li>Preheat the oven to 170c degrees.<\/li>\n<li>Gently brush the cake with beaten egg and bake for 35-45 minutes or until golden and set.<\/li>\n<li>Cool slightly at room temperature.<\/li>\n<li>Heat the honey and generously brush the top.<\/li>\n<li>Sprinkle with some sliced roasted almond and serve.<\/li>\n<\/ol><\/div>\n<div class=\"wprm-fallback-recipe-notes\">\n<ul>\n<li style=\"text-align: left\">The cinnamon challah is at its best on the day of baking, but it can be frozen well wrapped for up to a week.<\/li>\n<li style=\"text-align: left\">Instead of honey you can use Maple or date syrup in the same quantities.<\/li>\n<li style=\"text-align: left\">Instead of pecans, you can use any other nut you like.<\/li>\n<\/ul><\/div>\n<div class=\"wprm-fallback-recipe-meta\">\n\t\t\t<\/div>\n<\/div>\n<p><!--End WPRM Recipe--><\/p>\n<div id=\"attachment_16871\" style=\"width: 810px\" class=\"wp-caption alignnone\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-16871\" class=\"wp-image-16871\" title=\"Cinnamon Challah Crown with Apples and Pecans\" src=\"https:\/\/www.lilcookie.com\/wp-content\/uploads\/2017\/09\/cinnamon_pecan_apple_braided_challah3-s.jpg\" alt=\"Cinnamon Challah Crown with Apples and Pecans\" width=\"800\" height=\"533\" \/><p id=\"caption-attachment-16871\" class=\"wp-caption-text\">Photo: Natalie Levin<\/p><\/div>\n<div id=\"attachment_16872\" style=\"width: 810px\" class=\"wp-caption alignnone\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-16872\" class=\"wp-image-16872\" title=\"Cinnamon Challah Crown with Apples and Pecans\" src=\"https:\/\/www.lilcookie.com\/wp-content\/uploads\/2017\/09\/cinnamon_pecan_apple_braided_challah-s.jpg\" alt=\"Cinnamon Challah Crown with Apples and Pecans\" width=\"800\" height=\"1200\" \/><p id=\"caption-attachment-16872\" class=\"wp-caption-text\">Photo: Natalie Levin<\/p><\/div>\n<\/span>","protected":false},"excerpt":{"rendered":"<p>This cinnamon challah crown with apples and pecans is simply one of the best.
