So delicious and perfect next to a coffee cup.<\/p>\n<div id=\"attachment_9898\" style=\"width: 810px\" class=\"wp-caption alignnone\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-9898\" class=\"wp-image-9898\" title=\"Cinnamon and Walnut Date Cookies\" src=\"https:\/\/www.lilcookie.com\/wp-content\/uploads\/2010\/08\/date_cookies-s.jpg\" alt=\"Cinnamon and Walnut Date Cookies\" width=\"800\" height=\"534\" \/><p id=\"caption-attachment-9898\" class=\"wp-caption-text\">Photo: Natalie Levin<\/p><\/div>\n<p><script async src=\"\/\/pagead2.googlesyndication.com\/pagead\/js\/adsbygoogle.js\"><\/script><br \/>\n<ins class=\"adsbygoogle\" style=\"display: block;\" data-ad-client=\"ca-pub-6091382327871787\" data-ad-slot=\"7832461759\" data-ad-format=\"auto\"><\/ins><br \/>\n<script>\n     (adsbygoogle = window.adsbygoogle || []).push({});\n<\/script><\/p>\n<p><!--WPRM Recipe 21215--><\/p>\n<div class=\"wprm-fallback-recipe\">\n<h2 class=\"wprm-fallback-recipe-name\">Cinnamon and Walnut Date Cookies<\/h2>\n<p class=\"wprm-fallback-recipe-summary\">\n<p><\/p>\n<\/p>\n<div class=\"wprm-fallback-recipe-equipment\">\n\t\t\t<\/div>\n<div class=\"wprm-fallback-recipe-ingredients\">\n<h4>For the dough:<\/h4>\n<ul>\n<li>100 grams (3\/4 cup) all-purpose flour<\/li>\n<li>50 grams (1\/2 cup) almond meal<\/li>\n<li>50 grams (5 tbsp.) sugar powder<\/li>\n<li>50 grams (3 tbsp.) cold butter cut into cubes<\/li>\n<li>1\/2 tsp. vanilla extract<\/li>\n<li>Pinch of salt<\/li>\n<li>1-2 tbsp. cold milk<\/li>\n<\/ul>\n<h4>For the filling:<\/h4>\n<ul>\n<li>300-400 grams date spread<\/li>\n<li>1 tsp. ground cinnamon<\/li>\n<li>50 grams (1\/2 cup) chopped walnuts<\/li>\n<li>Icing sugar for decoration<\/li>\n<\/ul><\/div>\n<div class=\"wprm-fallback-recipe-instructions\">\n<ol>\n<li>Dough: in a food processor with a steel blade put flour, almond meal, powdered sugar, butter, vanilla and salt and blend until crumbly.<\/li>\n<li>Add milk gradually and continue to blend just until large chunks of dough form.<\/li>\n<li>Transfer the dough onto a floured work surface, form a disc shape and refrigerate for an hour.<\/li>\n<li>Divide the dough into 2 parts.<\/li>\n<li>Roll each part on a floured work surface to a rectangle about 2-3 mm thick.<\/li>\n<li>Spread about 1\/2 of the date spread, sprinkle some cinnamon and 1\/2 of the chopped walnuts on top. Roll tightly into a cylinder shape.<\/li>\n<li>Transfer the roll onto a baking tray lined with baking paper.<\/li>\n<li>Repeat with the second part of the dough and the remaining filling.<\/li>\n<li>Cool the rolls for about 1\/2 hour in the freezer before baking.<\/li>\n<li>Preheat oven to 170c degrees.<\/li>\n<li>Bake for 20-25 minutes, or until golden brown.<\/li>\n<li>Cool the rolls completely at room temperature and cut into cookies about 2-3 mm thick using a long serrated knife.<\/li>\n<li>Sprinkle sugar powder and serve.<\/li>\n<\/ol><\/div>\n<div class=\"wprm-fallback-recipe-notes\">\n<ul>\n<li style=\"text-align: left\">You can fill the date cookies with any other filling of your choice.<\/li>\n<li style=\"text-align: left\">Instead of walnuts you can use any other nut you like.<\/li>\n<li style=\"text-align: left\">Keep the cookies in a sealed jar at room temperature for up to 5-6 days.<\/li>\n<\/ul><\/div>\n<div class=\"wprm-fallback-recipe-meta\">\n\t\t\t<\/div>\n<\/div>\n<p><!--End WPRM Recipe--><\/p>\n<\/span>","protected":false},"excerpt":{"rendered":"<p>If you like date cookies \u2013 you&#8217;re gonna love these cookie roll!
