It&#8217;s a super fancy cookie that automatically makes everyone say WOW. These macarons are perfect for the upcoming Rosh Hashana and combine the two classics of apple and honey.<\/p>\n<div id=\"attachment_16853\" style=\"width: 810px\" class=\"wp-caption alignnone\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-16853\" class=\"wp-image-16853\" title=\"Apple and Honey Macarons\" src=\"https:\/\/www.lilcookie.com\/wp-content\/uploads\/2017\/09\/green-apple-macarons.jpg\" alt=\"Apple and Honey Macarons\" width=\"800\" height=\"1199\" \/><p id=\"caption-attachment-16853\" class=\"wp-caption-text\">Photo: Natalie Levin<\/p><\/div>\n<p><script async src=\"\/\/pagead2.googlesyndication.com\/pagead\/js\/adsbygoogle.js\"><\/script><br \/>\n<ins class=\"adsbygoogle\" style=\"display: block;\" data-ad-client=\"ca-pub-6091382327871787\" data-ad-slot=\"7832461759\" data-ad-format=\"auto\"><\/ins><br \/>\n<script>\n     (adsbygoogle = window.adsbygoogle || []).push({});\n<\/script><\/p>\n<h4 dir=\"ltr\" style=\"text-align: justify;\"><strong>Apple and Honey Macarons <\/strong><\/h4>\n<p dir=\"ltr\" style=\"text-align: justify;\">25-35 macarons<\/p>\n<p dir=\"ltr\" style=\"text-align: justify;\"><u>For macaron shells:<br \/>\n<\/u>100 grams sugar powder<br \/>\n65 grams almond meal<br \/>\n50 grams egg whites<br \/>\nPinch of salt<br \/>\n20 grams sugar<br \/>\nGreen food coloring<br \/>\nGreen sugar crystals (optional)<\/p>\n<p dir=\"ltr\" style=\"text-align: justify;\"><u>For apple and honey buttercream (option 1):<br \/>\n<\/u>50 grams sugar<br \/>\n25 grams honey<br \/>\n40 grams granny smith apples puree<br \/>\nZest of 1\/2 a lemon<br \/>\n1 large egg<br \/>\n125 grams soft butter, cut into cubes<\/p>\n<p dir=\"ltr\" style=\"text-align: justify;\"><u>White chocolate, apple and honey<\/u><u> ganache (option 2):<br \/>\n<\/u>30 grams granny smith apples puree<br \/>\n2 tsp. honey<br \/>\n200 grams white chocolate, chopped<\/p>\n<h4 dir=\"ltr\" style=\"text-align: justify;\"><strong>Preparation<\/strong><strong>:<\/strong><\/h4>\n<h5 dir=\"ltr\">Macaron shells:<\/h5>\n<ol dir=\"ltr\" style=\"text-align: justify;\">\n<li>Sift powdered sugar and almond powder into a large bowl. It is important to sift carefully and do not leave large chunks in the mixture.<\/li>\n<li>Put the egg whites and salt in the bowl of an electric mixer with a whisking hook and beat on high speed until meringue begins to form and the mixture starts to whiten.<\/li>\n<li>Add sugar and continue beating until a glossy and stable meringue forms. Add food coloring and beat until it is absorbed into the meringue.<\/li>\n<li>Add almond powder to the meringue and fold carefully with a spatula. At first, stir slightly aggressive, and then go through a gentle fold until the mixture is uniform, stable but not liquid.<\/li>\n<li>Transfer the mixture to a pastry bag fitted with a 1 cm round piping tip and pipe macarons on an oven tray lined with silicon mat.<\/li>\n<li>Sprinkle a little sugar crystals on top of the macarons.<\/li>\n<li>Leave the macarons for about an hour at room temperature before baking to dry and create a thin membrane on top.<\/li>\n<li>Preheat the oven to 150c degrees.<\/li>\n<li>Bake the macarons for about 10-13 minutes or until set.<\/li>\n<li>Cool completely at room temperature. Only when macarons are completely cold it can be separated from the pan. Arrange the macarons in pairs.<\/li>\n<\/ol>\n<h5 dir=\"ltr\">Apple and honey buttercream:<\/h5>\n<ol dir=\"ltr\" style=\"text-align: justify;\">\n<li>Put sugar, honey, apple puree and lemon zest in a small pan and bring to a boil, until the temperature of 116c degrees.<\/li>\n<li>In a mixer bowl begin whipping the egg when the syrup starts to bubble and sugar dissolves.<\/li>\n<li>Once the syrup reaches the 116c degrees, strain it, increase the speed of the mixer and immediately pour a thin stream into the egg while whipping. Continue whipping until the mixture is cold.<\/li>\n<li>Reduce the mixer speed to medium, and add the butter cubes. Continue to mix until smooth cream is formed.<\/li>\n<li>White chocolate, apple and honey ganache: in a small bowl put together all the ingredients and melt in the microwave until melted.<\/li>\n<li>Cool at room temperature or in the refrigerator until you get comfortable drizzling texture.<\/li>\n<li>Transfer the desired cream into a piping bag and fill the macarons. Cool in an airtight container overnight and serve at room temperature.<\/li>\n<\/ol>\n<h4 dir=\"ltr\" style=\"text-align: justify;\"><strong>Notes:<\/strong><\/h4>\n<ul dir=\"ltr\">\n<li style=\"text-align: justify;\">Honey can be replaced with maple or date syrup.<\/li>\n<li style=\"text-align: justify;\">Sugar crystals can be purchased at any baking store for ingredients and material. I painted it by the addition of a little green food coloring.<\/li>\n<li style=\"text-align: justify;\">Keep the macarons in a sealed box in the refrigerator up to 5 days, but it is recommended to serve at room temperature.<\/li>\n<\/ul>\n<\/span>","protected":false},"excerpt":{"rendered":"<p>Macarons are one of my favorite ways of surprising our guests during the holidays.
