(1\/2 cup) vegetable oil<br \/>\n125 ml. (1\/2 cup) strong coffee or tea, lukewarm<br \/>\n210 grams (1 1\/2 cups) all-purpose flour<br \/>\n1 tsp. baking powder<br \/>\n1\/2 tsp. baking soda<\/p>\n<p dir=\"ltr\" style=\"text-align: justify;\"><u>For the streusel:<br \/>\n<\/u>25 grams cold butter, cut into cubes<br \/>\n25 grams (2 tbsp.) light brown sugar<br \/>\nPinch of salt<br \/>\n35 grams walnut or almond meal<br \/>\n25 grams (2 tbsp.) all-purpose flour<\/p>\n<div id=\"attachment_16833\" style=\"width: 810px\" class=\"wp-caption alignnone\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-16833\" class=\"wp-image-16833\" title=\"Honey Muffins with Streusel\" src=\"https:\/\/www.lilcookie.com\/wp-content\/uploads\/2017\/09\/honey_streusel_muffins3-s.jpg\" alt=\"Honey Muffins with Streusel\" width=\"800\" height=\"533\" \/><p id=\"caption-attachment-16833\" class=\"wp-caption-text\">Photo: Natalie Levin<\/p><\/div>\n<h4 dir=\"ltr\" style=\"text-align: justify;\"><strong>Preparation<\/strong><strong>:<\/strong><\/h4>\n<ol dir=\"ltr\" style=\"text-align: justify;\">\n<li>Preheat oven to 170c degrees and place paper crowns in a muffin pan.<\/li>\n<li>In a large bowl, mix eggs, sugar, honey, salt, vanilla, cinnamon, oil and coffee until you get a smooth mixture.<\/li>\n<li>Add flour, baking powder and baking soda and mix only until you get a uniform batter.<\/li>\n<li>Pour the batter into the pan and fill up to 3\/4 of each outlet height.<\/li>\n<li>Streusel: in a medium bowl, place cubes of butter, sugar, salt, ground nuts and flour and mix with the hands until you get a crumbly mixture.<\/li>\n<li>Sprinkle crumbs at the top of the muffins.<\/li>\n<li>Bake for 15-25 minutes or until the muffins are golden and set, and a skewer inserted in the center comes out with moist crumbs.<\/li>\n<li>Cool completely and serve.<\/li>\n<\/ol>\n<h4 dir=\"ltr\" style=\"text-align: justify;\"><strong>Notes:<\/strong><\/h4>\n<ul dir=\"ltr\">\n<li style=\"text-align: justify;\">It is recommended to serve the muffins warm or at room temperature.<\/li>\n<li style=\"text-align: justify;\">Keep the muffins in a closed container for up to a week in the refrigerator.<\/li>\n<li style=\"text-align: justify;\">The muffins can be frozen for up to a month.<\/li>\n<li style=\"text-align: justify;\">Instead of honey you can use Maple syrup or Date syrup in the same amount.<\/li>\n<\/ul>\n<div id=\"attachment_16834\" style=\"width: 810px\" class=\"wp-caption alignnone\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-16834\" class=\"wp-image-16834\" title=\"Honey Muffins with Streusel\" src=\"https:\/\/www.lilcookie.com\/wp-content\/uploads\/2017\/09\/honey_streusel_muffins-s.jpg\" alt=\"Honey Muffins with Streusel\" width=\"800\" height=\"1200\" \/><p id=\"caption-attachment-16834\" class=\"wp-caption-text\">Photo: Natalie Levin<\/p><\/div>\n<\/span>","protected":false},"excerpt":{"rendered":"<p>Rosh Hashana is coming real soon, and this is just the time to think of easy and delicious holiday treats.
