It&#8217;s easy and even more delicious when served frozen.<\/p>\n<p dir=\"ltr\" style=\"text-align: justify;\">These chocolate and vanilla Krembo cookies are made of a round buttery cookie base topped with vanilla meringue and dipped in chocolate coating. So delicious and kids go crazy for it!<\/p>\n<p dir=\"ltr\"><a href=\"https:\/\/www.lilcookie.com\/?s=krembo\">More Krembo cookies recipes here &gt;&gt;<\/a><\/p>\n<div id=\"attachment_10075\" style=\"width: 810px\" class=\"wp-caption alignnone\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-10075\" class=\"wp-image-10075\" title=\"Chocolate Vanilla Krembo Cookies\" src=\"https:\/\/www.lilcookie.com\/wp-content\/uploads\/2009\/09\/krembo2-s.jpg\" alt=\"Chocolate Vanilla Krembo Cookies\" width=\"800\" height=\"534\" \/><p id=\"caption-attachment-10075\" class=\"wp-caption-text\">Photo: Natalie Levin<\/p><\/div>\n<p><script async src=\"\/\/pagead2.googlesyndication.com\/pagead\/js\/adsbygoogle.js\"><\/script><br \/>\n<ins class=\"adsbygoogle\" style=\"display: block;\" data-ad-client=\"ca-pub-6091382327871787\" data-ad-slot=\"7832461759\" data-ad-format=\"auto\"><\/ins><\/p>\n<p><script>\/\/ \n<br \/>\n     (adsbygoogle = window.adsbygoogle || []).push({});<br \/>\n\/\/ <\/script><\/p>\n<p><!--WPRM Recipe 21926--><\/p>\n<div class=\"wprm-fallback-recipe\">\n<h2 class=\"wprm-fallback-recipe-name\">Chocolate Vanilla Krembo Cookies<\/h2>\n<p class=\"wprm-fallback-recipe-summary\">\n<div class=\"wprm-fallback-recipe-equipment\">\n\t\t\t<\/div>\n<div class=\"wprm-fallback-recipe-ingredients\">\n<h4>For the cookie base:<\/h4>\n<ul>\n<li>50 grams cold butter (cut into cubes)<\/li>\n<li>25 grams (2tbsp.) sugar<\/li>\n<li>75 grams (1\/2 cup + 1 tsp.) all-purpose flour<\/li>\n<li>1\/2 tsp. vanilla extract<\/li>\n<li>pinch of salt<\/li>\n<li>1-2 tbsp. milk<\/li>\n<\/ul>\n<h4>For the meringue:<\/h4>\n<ul>\n<li>3 large egg whites at room temperature<\/li>\n<li>Pinch of salt<\/li>\n<li>200 grams (1 cup) sugar<\/li>\n<li>40 grams (3 tbsp.) water<\/li>\n<li>1 tsp. vanilla extract<\/li>\n<\/ul>\n<h4>For chocolate coating:<\/h4>\n<ul>\n<li>200-250 grams dark chocolate<\/li>\n<li>1 tbsp. vegetable oil<\/li>\n<\/ul><\/div>\n<div class=\"wprm-fallback-recipe-instructions\">\n<ol>\n<li>Make the cookies: preheat oven to 170c degrees.<\/li>\n<li>In a food processor with steel blade put butter, sugar, flour, vanilla and salt and blend until small crumbles form.<\/li>\n<li>Add the milk gradually and continue to process just until large clumps of dough are formed.<\/li>\n<li>Transfer the dough chunks on a lightly floured work surface, combine with your hands and make a round disc shape.<\/li>\n<li>Wrap in plastic wrap and refrigerate for about an hour.<\/li>\n<li>Roll out the dough on a floured surface to about 1\/2 cm thick and cut out 5-6 cm circles.<\/li>\n<li>Arrange the cookies on an oven pan lined with baking paper.<\/li>\n<li>Bake the cookies for about 10 minutes or until golden. Cool completely.<\/li>\n<li>Italian meringue: in an electric mixer bowl with whisking attachment put egg whites and salt.<\/li>\n<li>In a small saucepan put sugar and water and heat to dissolve the sugar until the syrup reaches a temperature of about 115-118c degrees. When the syrup reaches 105c degrees, begin whipping the egg whites and salt on medium speed.<\/li>\n<li>When the syrup is ready remove from heat, increase the mixer speed to high and add in the syrup in a thin stream while whipping.<\/li>\n<li>Beat meringue for 6-10 minutes or until it is very stable. Towards the end of whipping, add the vanilla.<\/li>\n<li>Transfer the meringue to a pastry bag fitted with a round 2-3 cm piping tip. Pipe a tall generous mound of meringue over each cookie.<\/li>\n<li>Cool the krembos in the freezer for about an hour.<\/li>\n<li>Chocolate coating: melt the chocolate and put in a tall glass.<\/li>\n<li>Add oil and mix until incorporated.<\/li>\n<li>Dip the frozen krembos in the melted chocolate, shake off excess chocolate and place on a pan to set. Cool for about 10 minutes in the freezer and serve.<\/li>\n<\/ol><\/div>\n<div class=\"wprm-fallback-recipe-notes\">\n<ul>\n<li style=\"text-align: left\">You can add flavors to the meringue: grated peel of citrus, spices, coffee and so on.<\/li>\n<li style=\"text-align: left\">Keep the Krembo cookies in a sealed box in the freezer up to one week.<\/li>\n<li style=\"text-align: left\">You can use milk or white chocolate for coating as well.<\/li>\n<\/ul><\/div>\n<div class=\"wprm-fallback-recipe-meta\">\n\t\t\t<\/div>\n<\/div>\n<p><!--End WPRM Recipe--><\/p>\n<\/span>","protected":false},"excerpt":{"rendered":"<p>Even though Krembo cookies are usually related to winter here, I like making it at home all the time.
