(1 cup) sour cream<\/li>\n<li>1 large egg<\/li>\n<li>1 egg yolk<\/li>\n<li>Pinch of salt<\/li>\n<li>1 tsp. vanilla extract<\/li>\n<\/ul>\n<h4>For the filling:<\/h4>\n<ul>\n<li>500 grams (2 packs) ricotta cheese<\/li>\n<li>80 grams (1\/3 cup) sugar<\/li>\n<li>3 egg yolks<\/li>\n<li>1 tsp. vanilla extract<\/li>\n<li>Pinch of salt<\/li>\n<li>30 grams (3 tbsp.) all-purpose flour<\/li>\n<li>100 grams white chocolate chips<\/li>\n<li>50 grams frozen berries (optional)<\/li>\n<li>1 beaten egg for brushing<\/li>\n<li>Sugar powder for serving<\/li>\n<\/ul><\/div>\n<div class=\"wprm-fallback-recipe-instructions\">\n<ol>\n<li>Dough: in bowl of a mixer with a dough-hook put flour, yeast, sugar, butter, sour cream, egg, egg yolk, salt and vanilla.<\/li>\n<li>Knead the dough on low speed for 10-12 minutes, until flexible and quite soft.<\/li>\n<li>Cover and let rise until double in volume.<\/li>\n<li>Filling: in a medium bowl put ricotta, sugar and egg yolks and beat into a smooth mixture.<\/li>\n<li>Add vanilla, salt and flour and beat until blended.<\/li>\n<li>Keep the filling refrigerated until use.<\/li>\n<li>Divide the dough into two parts and roll out each part to about 28*28 cm square.<\/li>\n<li>Cut the dough into 16 squares about 7*7 cm in size.<\/li>\n<li>In the center of each square put about a teaspoon of the cheese mixture, sprinkle with chocolate chips and some berries and close the four edges into the center creating an envelope shape.<\/li>\n<li>Repeat the process (rolling, cutting into squares, filling and shaping) with the second part of the dough.<\/li>\n<li>Place the pastries on an oven pan lined with baking paper.<\/li>\n<li>Cover and let rise until almost doubled in volume.<\/li>\n<li>Preheat oven to 175c degrees.<\/li>\n<li>Gently brush the pastries with beaten egg and bake for about 13-17 minutes until golden.<\/li>\n<li>Cool slightly at room temperature, sprinkle some powdered sugar and serve.<\/li>\n<\/ol><\/div>\n<div class=\"wprm-fallback-recipe-notes\">\n<ul>\n<li style=\"text-align: left\">You can use dark or milk chocolate chips instead of white chocolate chips.<\/li>\n<li style=\"text-align: left\">The pastries can be frozen in a sealed container for up to two weeks.<\/li>\n<li style=\"text-align: left\">Serve warm.<\/li>\n<\/ul><\/div>\n<div class=\"wprm-fallback-recipe-meta\">\n\t\t\t<\/div>\n<\/div>\n<p><!--End WPRM Recipe--><\/p>\n<\/span>","protected":false},"excerpt":{"rendered":"<p>I love Danish pastries, and it&#8217;s the ultimate sweet breakfast in weekends and special days.
