Delicious and easy dessert!<\/p>\n<div id=\"attachment_10819\" style=\"width: 810px\" class=\"wp-caption alignnone\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-10819\" class=\"wp-image-10819\" title=\"Pistachio Cake Roll with Ricotta Cream and Strawberries\" src=\"https:\/\/www.lilcookie.com\/wp-content\/uploads\/2011\/12\/pistachio_strawberry_ricotta_roulade1-s.jpg\" alt=\"Pistachio Cake Roll with Ricotta Cream and Strawberries\" width=\"800\" height=\"1200\" \/><p id=\"caption-attachment-10819\" class=\"wp-caption-text\">Photo: Natalie Levin<\/p><\/div>\n<p style=\"text-align: justify;\"><script async src=\"\/\/pagead2.googlesyndication.com\/pagead\/js\/adsbygoogle.js\"><\/script><br \/>\n<ins class=\"adsbygoogle\" style=\"display: block;\" data-ad-client=\"ca-pub-6091382327871787\" data-ad-slot=\"7832461759\" data-ad-format=\"auto\"><\/ins><br \/>\n<script>\n     (adsbygoogle = window.adsbygoogle || []).push({});\n<\/script><\/p>\n<h4 dir=\"ltr\" style=\"text-align: justify;\">Pistachio Cake Roll with Ricotta Cream and Strawberries<\/h4>\n<p dir=\"ltr\" style=\"text-align: justify;\">One 30 cm long cake roll<\/p>\n<p dir=\"ltr\" style=\"text-align: justify;\"><u>For pistachio cake roll:<br \/>\n<\/u>3 large eggs<br \/>\n100 grams sugar<br \/>\nPinch of salt<br \/>\n1 tsp. vanilla extract<br \/>\n1 heaping tablespoon pistachio paste<br \/>\nZest of 1\/2 lemon<br \/>\n100 grams all-purpose flour<br \/>\n30 grams pistachio powder<br \/>\n1\/2 tsp. baking powder<\/p>\n<p dir=\"ltr\" style=\"text-align: justify;\"><u>For ricotta cream filling:<br \/>\n<\/u>125 ml. heavy cream<br \/>\n150 grams ricotta cheese<br \/>\n1 tsp. vanilla extract<br \/>\n50 grams sugar powder<\/p>\n<p dir=\"ltr\" style=\"text-align: justify;\"><u>For strawberries:<br \/>\n<\/u>200-250 grams strawberries<br \/>\n2 tbsp. sugar<br \/>\n2 tbsp. brandy<\/p>\n<p dir=\"ltr\" style=\"text-align: justify;\"><u>For serving:<br \/>\n<\/u>Sugar powder<br \/>\nSlightly toasted chopped pistachios<\/p>\n<h4 dir=\"ltr\" style=\"text-align: justify;\"><strong>Preparation<\/strong><strong>:<\/strong><\/h4>\n<ol dir=\"ltr\" style=\"text-align: justify;\">\n<li>Preheat oven to 180c degrees and line oven pan lightly greased baking paper.<\/li>\n<li>Pistachio cake roll: in a mixer with a whipping-attachment put eggs, sugar, salt and vanilla and beat for 3-4 minutes until thick white foam.<\/li>\n<li>Add pistachio paste and lemon zest and continue beating until the mixture is uniform.<\/li>\n<li>Add in flour, pistachio powder and baking powder and fold into a uniform mixture.<\/li>\n<li>Spread the mixture on a baking oven with baking paper in an even layer.<\/li>\n<li>Bake for 6-8 minutes, until golden and springy to the touch.<\/li>\n<li>Cool completely before filling.<\/li>\n<li>Prepare the strawberries: wash and remove the leaves. Keep about 5-6 whole strawberries for decoration.<\/li>\n<li>Cut the strawberries into cubes and put in a small bowl.<\/li>\n<li>Add in sugar and brandy and stir well. Leave at room temperature for about half an hour to absorb flavors.<\/li>\n<li>Ricotta Cream: whip heavy cream, ricotta, vanilla and powdered sugar until you get an airy, stable cream.<\/li>\n<li>Fill and roll: spread generous even layer of ricotta cream on the roll.<\/li>\n<li>Sprinkle over strawberry cubes (possible with a little syrup, but not too much).<\/li>\n<li>Roll tight, sprinkle a little powdered sugar, garnish with ricotta cream, strawberries and a little chopped pistachios.<\/li>\n<li>Refrigerate and serve.<\/li>\n<\/ol>\n<h4 dir=\"ltr\" style=\"text-align: justify;\"><strong>Notes:<\/strong><\/h4>\n<ul dir=\"ltr\">\n<li style=\"text-align: justify;\">Keep in the refrigerator for 3-4 days.<\/li>\n<\/ul>\n<\/span>","protected":false},"excerpt":{"rendered":"<p>Pistachio and strawberries make a great combo in desserts \u2013 in color just as in taste.
