With cranberries and almonds these cookies are simply delicious and even kids love it.<\/p>\n<div id=\"attachment_9870\" style=\"width: 810px\" class=\"wp-caption alignnone\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-9870\" class=\"wp-image-9870\" title=\"Oatmeal Cookie with Cranberries and Almonds\" src=\"https:\/\/www.lilcookie.com\/wp-content\/uploads\/2009\/10\/oatmeal_cranberry_and_almond_cookies-s.jpg\" alt=\"Oatmeal Cookie with Cranberries and Almonds\" width=\"800\" height=\"534\" \/><p id=\"caption-attachment-9870\" class=\"wp-caption-text\">Photo: Natalie Levin<\/p><\/div>\n<p><script async src=\"\/\/pagead2.googlesyndication.com\/pagead\/js\/adsbygoogle.js\"><\/script><br \/>\n<ins class=\"adsbygoogle\" style=\"display: block;\" data-ad-client=\"ca-pub-6091382327871787\" data-ad-slot=\"7832461759\" data-ad-format=\"auto\"><\/ins><br \/>\n<script>\n     (adsbygoogle = window.adsbygoogle || []).push({});\n<\/script><\/p>\n<p><!--WPRM Recipe 21218--><\/p>\n<div class=\"wprm-fallback-recipe\">\n<h2 class=\"wprm-fallback-recipe-name\">Oatmeal Cookie with Cranberries and Almonds<\/h2>\n<p class=\"wprm-fallback-recipe-summary\">\n<p><\/p>\n<\/p>\n<div class=\"wprm-fallback-recipe-equipment\">\n\t\t\t<\/div>\n<div class=\"wprm-fallback-recipe-ingredients\">\n<h4>Ingredients:<\/h4>\n<ul>\n<li>200 grams (1 cup) soft butter<\/li>\n<li>200 grams (3\/4 cup) dark brown sugar<\/li>\n<li>100 grams (1\/2 cup) sugar<\/li>\n<li>1\/2 tsp. ground cinnamon<\/li>\n<li>Pinch of salt<\/li>\n<li>1 tsp. vanilla extract<\/li>\n<li>2 large eggs<\/li>\n<li>210 grams (1 1\/2 cups) whole wheat flour<\/li>\n<li>70 grams (1\/2 cup) all-purpose flour<\/li>\n<li>1 tsp. baking soda<\/li>\n<li>350 grams (3 1\/2 cups) whole oats<\/li>\n<li>80 grams (3\/4 cup) almonds (coarsely chopped)<\/li>\n<li>120 grams dried cranberries<\/li>\n<\/ul><\/div>\n<div class=\"wprm-fallback-recipe-instructions\">\n<ol>\n<li>Preheat oven to 165c degrees.<\/li>\n<li>In a bowl of a mixer with a paddle attachment, put butter, brown sugar, sugar, cinnamon, salt and vanilla and mix on high speed until creamy and soft.<\/li>\n<li>Add the eggs one at a time and mix until incorporated.<\/li>\n<li>Add whole wheat flour, all-purpose flour, baking soda, oats, almonds and cranberries and mix just until the dough comes together.<\/li>\n<li>Using 2 spoons or an ice cream scoop create small balls of dough and arrange on a baking tray lined with baking paper. Flatten the top a little with your hands.<\/li>\n<li>Bake for about 12-15 minutes, or until golden brown and the edges are set and center still looks a bit soft.<\/li>\n<li>Cool completely and store in a sealed jar.<\/li>\n<\/ol><\/div>\n<div class=\"wprm-fallback-recipe-notes\">\n<ul>\n<li style=\"text-align: left\">It is important to use whole oats and not quick oats.<\/li>\n<li style=\"text-align: left\">Keep the cookies in a sealed jar for up to 10 days at room temperature.<\/li>\n<li style=\"text-align: left\">You can use any kind of nut you like, and\/or add chocolate chips.<\/li>\n<li style=\"text-align: left\">Cranberries can be substitute with chopped dried fruit.<\/li>\n<\/ul><\/div>\n<div class=\"wprm-fallback-recipe-meta\">\n\t\t\t<\/div>\n<\/div>\n<p><!--End WPRM Recipe--><\/p>\n<\/span>","protected":false},"excerpt":{"rendered":"<p>These oatmeal cookies are soft, easy to make and perfect for a sweet, light breakfast or snack.
