(1\/2 cup) heavy cream<\/li>\n<li>200 grams chopped white chocolate<\/li>\n<li>1\/2 tsp. vanilla extract<\/li>\n<li>4 large eggs<\/li>\n<\/ul>\n<h4>For berries:<\/h4>\n<ul>\n<li>150 grams assorted berries<\/li>\n<li>3 tbsp. sugar<\/li>\n<li>Whole lemon juice<\/li>\n<li>1 tsp. cornstarch<\/li>\n<li>2 tbsp. water<\/li>\n<\/ul>\n<h4>For Italian meringue:<\/h4>\n<ul>\n<li>2 large egg whites<\/li>\n<li>Pinch of salt<\/li>\n<li>120 grams (1\/2 cup + 2 tbsp.) sugar<\/li>\n<li>30 ml. (2 tbsp.) water<\/li>\n<li>Fresh berries for decoration<\/li>\n<\/ul><\/div>\n<div class=\"wprm-fallback-recipe-instructions\">\n<h4>Crust:<\/h4>\n<ol>\n<li>Preheat oven to 180c degrees.<\/li>\n<li>In a food processor with a steel blade blend flour, almond meal, sugar, butter and lemon zest until mixture is crumbly.<\/li>\n<li>Add the egg yolk and milk and blend just until large chunks of dough form.<\/li>\n<li>Cool the dough in the refrigerator for about 15 minutes.<\/li>\n<li>On a floured work surface roll out the dough about 3-4 cm thick, and cut out a 24 cm circle. Place it on the bottom of the pan.<\/li>\n<li>Pierce the dough with a fork and bake for 10-12 minutes until golden brown.<\/li>\n<\/ol>\n<h4>White chocolate and cheese filling:<\/h4>\n<ol>\n<li>Lower the oven temperature to 160c degrees, and place at the bottom of the oven a pan with boiling water.<\/li>\n<li>In a large bowl, whisk cream cheese, sour cream, sugar and cornstarch.<\/li>\n<li>In a small saucepan, heat the heavy cream, and once boiling pour onto white chocolate.<\/li>\n<li>Mix until you get a smooth white chocolate ganache. Add vanilla and blend.<\/li>\n<li>Add the white chocolate mixture into the cheese mixture and mix well.<\/li>\n<li>Add the eggs one at a time, stirring between additions, until mixture is smooth.<\/li>\n<li>Pour the mixture over the baked crust and bake for 45-50 minutes, until the cake is set on the edges but still slightly soft in the center.<\/li>\n<li>Cool for 3-4 hours in the refrigerator and extracted from the pan.<\/li>\n<\/ol>\n<h4>Berries:<\/h4>\n<ol>\n<li>Put berries, sugar and lemon juice in a small pot and cook over low heat for about 5 minutes, until the mixture thickens slightly.<\/li>\n<li>In a separate bowl mix cornstarch and water until smooth and then add into the berries, stirring until incorporated. Continue to cook while stirring for 3-4 minutes until it thickens a little.<\/li>\n<li>Cool slightly at room temperature and pour over the cake.<\/li>\n<\/ol>\n<h4>Italian meringue:<\/h4>\n<ol>\n<li>Put egg whites and salt in the bowl of a mixer with a whipping-attachment<\/li>\n<li>In a small saucepan cook sugar and water and bring to a boil.<\/li>\n<li>Cook over high heat and when the syrup reaches a temperature of 105c degrees begin to whip the egg whites on medium speed. If you do not have a thermometer you can tell the syrup reached the correct temperature when big bubbles in the liquid become a bit smaller.<\/li>\n<li>Continue to cook the syrup until it reaches a temperature of 115-117c degrees and remove from heat.<\/li>\n<li>Increase the whipping speed to high and pour in the syrup in a thin stream while whipping.<\/li>\n<li>Whip for about 10 minutes until you get a stable glossy meringue.<\/li>\n<li>Transfer the meringue into a pastry bag fitted with 2 cm round piping tip and drizzle mounds of meringue over the cake.<\/li>\n<li>Burn the meringue using a blowtorch, decorate with fresh berries and serve.<\/li>\n<\/ol><\/div>\n<div class=\"wprm-fallback-recipe-notes\">\n<ul>\n<li style=\"text-align: left\">Keep the cake in a closed container in the refrigerator for up to 4-5 days.<\/li>\n<\/ul><\/div>\n<div class=\"wprm-fallback-recipe-meta\">\n\t\t\t<\/div>\n<\/div>\n<p><!--End WPRM Recipe--><\/p>\n<div id=\"attachment_10963\" style=\"width: 810px\" class=\"wp-caption alignnone\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-10963\" class=\"wp-image-10963\" title=\"White Chocolate Cheesecake with Berries\" src=\"https:\/\/www.lilcookie.com\/wp-content\/uploads\/2010\/05\/white_chocolate_and_berries_cheesecake2-s.jpg\" alt=\"White Chocolate Cheesecake with Berries\" width=\"800\" height=\"1200\" \/><p id=\"caption-attachment-10963\" class=\"wp-caption-text\">Photo: Natalie Levin<\/p><\/div>\n<\/span>","protected":false},"excerpt":{"rendered":"<p>This cheesecake is perfect for hot summer days \u2013 it&#8217;s cool, fluffy and so delicious and refreshing.
