This almond cake combines almond meal and assorted berries, and is a great cake for the weekend or hosting.<\/p>\n<div id=\"attachment_12304\" style=\"width: 810px\" class=\"wp-caption alignnone\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-12304\" class=\"wp-image-12304\" title=\"Almond Cake with Berries\" src=\"https:\/\/www.lilcookie.com\/wp-content\/uploads\/2010\/08\/almond_berries_cake-s.jpg\" alt=\"Almond Cake with Berries\" width=\"800\" height=\"1200\" \/><p id=\"caption-attachment-12304\" class=\"wp-caption-text\">Photo: Natalie Levin<\/p><\/div>\n<p><script async src=\"\/\/pagead2.googlesyndication.com\/pagead\/js\/adsbygoogle.js\"><\/script><br \/>\n<ins class=\"adsbygoogle\" style=\"display: block;\" data-ad-client=\"ca-pub-6091382327871787\" data-ad-slot=\"7832461759\" data-ad-format=\"auto\"><\/ins><br \/>\n<script>\n     (adsbygoogle = window.adsbygoogle || []).push({});\n<\/script><\/p>\n<p><!--WPRM Recipe 19758--><\/p>\n<div class=\"wprm-fallback-recipe\">\n<h2 class=\"wprm-fallback-recipe-name\">Almond Cake with Berries<\/h2>\n<p class=\"wprm-fallback-recipe-summary\">\n<div class=\"wprm-fallback-recipe-equipment\">\n\t\t\t<\/div>\n<div class=\"wprm-fallback-recipe-ingredients\">\n<h4>For the cake:<\/h4>\n<ul>\n<li>200 grams (1 3\/4 stick) butter (at room temperature)<\/li>\n<li>150 grams (3\/4 cup) sugar<\/li>\n<li>2 large eggs (at room temperature)<\/li>\n<li>1 tbsp. amaretto liqueur<\/li>\n<li>1 tsp. vanilla extract<\/li>\n<li>100 grams (3\/4 cup) all-purpose flour<\/li>\n<li>1 tsp. baking powder<\/li>\n<li>pinch of salt<\/li>\n<li>100 grams (1 cup) almond meal<\/li>\n<li>150 grams mixed berries (fresh or frozen)<\/li>\n<li>Sugar powder for serving<\/li>\n<\/ul><\/div>\n<div class=\"wprm-fallback-recipe-instructions\">\n<ol>\n<li>Preheat oven to 170c degrees.<\/li>\n<li>In a bowl of an electric mixer with a paddle attachment put butter and sugar and mix on high speed for about 5-10 minutes until the mixture is light and creamy.<\/li>\n<li>Add eggs one at a time, while mixing between additions.<\/li>\n<li>Add amaretto and vanilla and mix until smooth.<\/li>\n<li>Add flour, baking powder, salt and almond meal and mix just until incorporated.<\/li>\n<li>Pour the batter into the pan, and smooth the top.<\/li>\n<li>Spread the berries over the cake and bake for about 30-40 minutes or until the cake is golden brown and a toothpick inserted in the center comes out with moist crumbs.<\/li>\n<li>Cool at room temperature, sprinkle some powdered sugar and serve.<\/li>\n<\/ol><\/div>\n<div class=\"wprm-fallback-recipe-notes\">\n<ul>\n<li style=\"text-align: left\">The cake is not particularly high and that&#8217;s fine. If you want a higher cake make it in an 18-20 cm diameter round pan.<\/li>\n<li style=\"text-align: left\">I used frozen berries.
