I also added white chocolate, and got a nice, festive birthday cake that is just perfect for special occasions.<\/p>\n<div id=\"attachment_16155\" style=\"width: 810px\" class=\"wp-caption alignnone\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-16155\" class=\"wp-image-16155\" title=\"White Chocolate Cake with Coffee Cream and Pistachio\" src=\"https:\/\/www.lilcookie.com\/wp-content\/uploads\/2017\/06\/white_chocolate_coffee_and_pistachio_cake-800.jpg\" alt=\"White Chocolate Cake with Coffee Cream and Pistachio\" width=\"800\" height=\"1200\" \/><p id=\"caption-attachment-16155\" class=\"wp-caption-text\">Photo: Natalie Levin<\/p><\/div>\n<p><script async src=\"\/\/pagead2.googlesyndication.com\/pagead\/js\/adsbygoogle.js\"><\/script><br \/>\n<ins class=\"adsbygoogle\" style=\"display: block;\" data-ad-client=\"ca-pub-6091382327871787\" data-ad-slot=\"7832461759\" data-ad-format=\"auto\"><\/ins><br \/>\n<script>\n     (adsbygoogle = window.adsbygoogle || []).push({});\n<\/script><\/p>\n<p><!--WPRM Recipe 19577--><\/p>\n<div class=\"wprm-fallback-recipe\">\n<h2 class=\"wprm-fallback-recipe-name\">White Chocolate Cake with Coffee Cream and Pistachio<\/h2>\n<p class=\"wprm-fallback-recipe-summary\">\n<div class=\"wprm-fallback-recipe-equipment\">\n\t\t\t<\/div>\n<div class=\"wprm-fallback-recipe-ingredients\">\n<h4>For the base:<\/h4>\n<ul>\n<li>150 grams plain biscuits or Graham Crackers<\/li>\n<li>50 grams natural pistachios<\/li>\n<li>80 grams (3\/4 stick) melted butter<\/li>\n<\/ul>\n<h4>For white chocolate cake:<\/h4>\n<ul>\n<li>200 grams white chocolate<\/li>\n<li>150 grams (1 1\/4 stick) butter<\/li>\n<li>Pinch of salt<\/li>\n<li>1 tsp. vanilla extract<\/li>\n<li>100 grams (1\/2 cup) sugar<\/li>\n<li>3 large eggs<\/li>\n<li>140 grams (1 cup) all-purpose flour<\/li>\n<\/ul>\n<h4>For coffee cream:<\/h4>\n<ul>\n<li>375 ml. (1 1\/2 cups) whipping cream, very cold<\/li>\n<li>2 tbsp. instant coffee powder<\/li>\n<li>60 grams (1\/2 cup) sugar powder<\/li>\n<li>30 grams (3 tbsp.) instant vanilla pudding powder<\/li>\n<\/ul>\n<h4>For white chocolate and pistachio barks:<\/h4>\n<ul>\n<li>100 grams white chocolate<\/li>\n<li>20-30 grams roasted pistachios (chopped)<\/li>\n<\/ul>\n<h4>For decoration:<\/h4>\n<ul>\n<li>20-30 grams roasted pistachios (coarsely chopped)<\/li>\n<\/ul><\/div>\n<div class=\"wprm-fallback-recipe-instructions\">\n<ol>\n<li>Base: preheat oven to 170c degrees and slightly grease the pan.<\/li>\n<li>In a food processor with a steel blade, place biscuits and pistachios and grind into a thin powder.<\/li>\n<li>Add butter and stir until you get a damp crumb mixture.<\/li>\n<li>Transfer the crumbs into the pan and flatten to the bottom to form a base.<\/li>\n<li>Cool for 10 minutes in the freezer.<\/li>\n<li>Bake for 10 minutes until golden. Cool at room temperature.<\/li>\n<li>White chocolate fudge cake: chop the chocolate and put in a bowl.<\/li>\n<li>Add butter and melt together in the microwave or over double-boiler until everything is melted and the mixture is smooth.<\/li>\n<li>Add salt, vanilla and sugar and mix until combined.<\/li>\n<li>Add the eggs one at a time white mixing between each addition.<\/li>\n<li>Add flour and mix only until assimilated in the mixture.<\/li>\n<li>Pour the mixture over the base layer and straighten the top.<\/li>\n<li>Bake the cake for 20-30 minutes or until set on the edges and golden, but still slightly soft in the center.<\/li>\n<li>Cool completely at room temperature and refrigerate for about an hour in the refrigerator.<\/li>\n<li>Coffee cream: in a mixer bowl, whip cream, coffee, powdered sugar and instant pudding until you get a very firm and stable cream.<\/li>\n<li>Pour the cream over the cake and straighten the top with a spatula.<\/li>\n<li>Cool the cake in the refrigerator for at least 5-6 hours.<\/li>\n<li>White chocolate and pistachio barks: dissolve the white chocolate in the microwave or over double boiler until completely melted.<\/li>\n<li>Place a baking paper on a work surface.<\/li>\n<li>Pour the melted chocolate onto the paper and flatten with a sparula about 1\/2 cm thick.<\/li>\n<li>Sprinkle chopped pistachios and cool in the freezer for about an hour until the chocolate sets completely.<\/li>\n<li>Break into asymmetric pieces and place at the top of the cake freely.<\/li>\n<li>Sprinkle some crushed pistachios at the top and serve.<\/li>\n<\/ol><\/div>\n<div class=\"wprm-fallback-recipe-notes\">\n<ul>\n<li style=\"text-align: left\">Keep the white chocolate cake in a closed container for 5-6 days in the refrigerator.<\/li>\n<li style=\"text-align: left\">Instead of pistachios, you can use any other nut that you like in the same quantities.<\/li>\n<li style=\"text-align: left\">It is important to use a very cold cream.<\/li>\n<\/ul><\/div>\n<div class=\"wprm-fallback-recipe-meta\">\n\t\t\t<\/div>\n<\/div>\n<p><!--End WPRM Recipe--><\/p>\n<div id=\"attachment_16154\" style=\"width: 810px\" class=\"wp-caption alignnone\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-16154\" class=\"wp-image-16154\" title=\"White Chocolate Cake with Coffee Cream and Pistachio\" src=\"https:\/\/www.lilcookie.com\/wp-content\/uploads\/2017\/06\/white_chocolate_coffee_and_pistachio_cake2-800.jpg\" alt=\"White Chocolate Cake with Coffee Cream and Pistachio\" width=\"800\" height=\"533\" \/><p id=\"caption-attachment-16154\" class=\"wp-caption-text\">Photo: Natalie Levin<\/p><\/div>\n<\/span>","protected":false},"excerpt":{"rendered":"<p>Coffee and pistachios are two of my spouse&#8217;s top favorite ingredients in cakes and desserts.
