These sandwich cookies combine almond and chocolate, and are simply delicious and easy to make.<\/p>\n<div id=\"attachment_11239\" style=\"width: 810px\" class=\"wp-caption alignnone\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-11239\" class=\"wp-image-11239\" title=\"Almond Sandwich Cookies with Chocolate Filling\" src=\"https:\/\/www.lilcookie.com\/wp-content\/uploads\/2012\/02\/almond_chocolate_cookies-s.jpg\" alt=\"Almond Sandwich Cookies with Chocolate Filling\" width=\"800\" height=\"1200\" \/><p id=\"caption-attachment-11239\" class=\"wp-caption-text\">Photo: Natalie Levin<\/p><\/div>\n<p><script async src=\"\/\/pagead2.googlesyndication.com\/pagead\/js\/adsbygoogle.js\"><\/script><br \/>\n<ins class=\"adsbygoogle\" style=\"display: block;\" data-ad-client=\"ca-pub-6091382327871787\" data-ad-slot=\"7832461759\" data-ad-format=\"auto\"><\/ins><br \/>\n<script>\n     (adsbygoogle = window.adsbygoogle || []).push({});\n<\/script><\/p>\n<h4 dir=\"ltr\" style=\"text-align: justify;\"><strong>Almond Sandwich Cookies with Chocolate Filling<\/strong><\/h4>\n<p dir=\"ltr\" style=\"text-align: justify;\">25-30 sandwich cookies<\/p>\n<p dir=\"ltr\" style=\"text-align: justify;\"><span style=\"text-decoration: underline;\">For the almond cookies:<\/span><br \/>\n210 grams (1 1\/2 cups) all-purpose flour<br \/>\n100 grams (1 cup) almond meal<br \/>\n200 grams cold butter, cut into cubes<br \/>\n70 grams (2\/3 cup) sugar powder<br \/>\nPinch of salt<br \/>\n1 tsp. vanilla extract<br \/>\n2 egg yolks<br \/>\n1 tbsp. amaretto liqueur or brandy<\/p>\n<p dir=\"ltr\" style=\"text-align: justify;\"><span style=\"text-decoration: underline;\">For chocolate filling:<\/span><br \/>\n125 grams dark chocolate, chopped<br \/>\n125 ml. (1\/2 cup) heavy cream<br \/>\n1 tsp. honey<\/p>\n<p dir=\"ltr\" style=\"text-align: justify;\">Some light brown sugar to sprinkle over the cookies<\/p>\n<h4 dir=\"ltr\" style=\"text-align: justify;\"><strong>Preparation<\/strong><strong>:<\/strong><\/h4>\n<ol dir=\"ltr\" style=\"text-align: justify;\">\n<li>Cookies: in a food processor with a steel blade, put flour, almond meal, butter, powdered sugar, salt and vanilla and blend until a crumbly mixture is obtained.<\/li>\n<li>Add in the yolks and the liqueur and continue to blend until large chunks of dough form.<\/li>\n<li>Bring the dough together with your hands and flatten it to a disc shape. Wrap in a plastic wrap and cool in the refrigerator for about an hour.<\/li>\n<li>Preheat oven to 170c degrees.<\/li>\n<li>On a floured surface, roll the dough about 3-4 mm thick and cut out round cookies (about 3-4 cm in diameter) and place on a baking pan lined with baking paper.<\/li>\n<li>Sprinkle some brown sugar over the cookies.<\/li>\n<li>Bake the cookies for 9-13 minutes, or until golden and set. Cool completely.<\/li>\n<li>Chocolate filling: chop the bitter chocolate and place in a medium bowl.<\/li>\n<li>In a small pot, put cream and honey and bring to the boil.<\/li>\n<li>Pour the cream over the chocolate, wait about a minute and stir until you get a rich, shiny ganache.<\/li>\n<li>Cool the ganache at room temperature for about 3 hours until it stabilizes.<\/li>\n<li>When the ganache is stable, mix it well until it is creamy and smooth.<\/li>\n<li>Fill half the cookies with about 1 teaspoon of chocolate cream and close with another cookie to form a sandwich.<\/li>\n<\/ol>\n<h4 dir=\"ltr\" style=\"text-align: justify;\"><strong>Notes:<\/strong><\/h4>\n<ul dir=\"ltr\">\n<li style=\"text-align: justify;\">You can add flavors to ganache: cardamom, berries extract, cinnamon, and any other spices that you like.<\/li>\n<li style=\"text-align: justify;\">You can fill the cookies with any other filling you like.<\/li>\n<li style=\"text-align: justify;\">Keep the cookies in a closed jar for up to a week.<\/li>\n<\/ul>\n<div id=\"attachment_11240\" style=\"width: 810px\" class=\"wp-caption alignnone\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-11240\" class=\"wp-image-11240\" title=\"Almond Sandwich Cookies with Chocolate Filling\" src=\"https:\/\/www.lilcookie.com\/wp-content\/uploads\/2012\/02\/almond_chocolate_cookies2-s.jpg\" alt=\"Almond Sandwich Cookies with Chocolate Filling\" width=\"800\" height=\"564\" \/><p id=\"caption-attachment-11240\" class=\"wp-caption-text\">Photo: Natalie Levin<\/p><\/div>\n<\/span>","protected":false},"excerpt":{"rendered":"<p>I love sandwich cookies, which are probably the most versatile cookies there is.
