It&#8217;s delicious and if you serve it warm with a scoop of vanilla ice cream it&#8217;s the perfect summer dessert.<\/p>\n<div id=\"attachment_16110\" style=\"width: 810px\" class=\"wp-caption alignnone\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-16110\" class=\"wp-image-16110\" title=\"Raspberry Tart with Almond Cream\" src=\"https:\/\/www.lilcookie.com\/wp-content\/uploads\/2013\/03\/raspberry_almond_tartelette-s.jpg\" alt=\"Raspberry Tart with Almond Cream\" width=\"800\" height=\"1192\" \/><p id=\"caption-attachment-16110\" class=\"wp-caption-text\">Photo: Natalie Levin<\/p><\/div>\n<p><script async src=\"\/\/pagead2.googlesyndication.com\/pagead\/js\/adsbygoogle.js\"><\/script><br \/>\n<ins class=\"adsbygoogle\" style=\"display: block;\" data-ad-client=\"ca-pub-6091382327871787\" data-ad-slot=\"7832461759\" data-ad-format=\"auto\"><\/ins><br \/>\n<script>\n     (adsbygoogle = window.adsbygoogle || []).push({});\n<\/script><\/p>\n<h4 dir=\"ltr\" style=\"text-align: justify;\">Raspberry Tart with Almond Cream<\/h4>\n<p dir=\"ltr\" style=\"text-align: justify;\">12-14 tartelettes about 7 cm in diameter <span style=\"text-decoration: underline;\">or<\/span> 24 cm round tart pan<\/p>\n<p dir=\"ltr\" style=\"text-align: justify;\"><u>For short crust pastry:<br \/>\n<\/u>120 grams all-purpose flour<br \/>\n30 grams almond meal<br \/>\n100 grams cold butter, cut into cubes<br \/>\n50 grams sugar<br \/>\nPinch of salt<br \/>\n1\/2 tsp. vanilla extract<br \/>\n1 egg<br \/>\n1-2 tbsp. cold milk (as needed)<\/p>\n<p dir=\"ltr\" style=\"text-align: justify;\"><u>For almond cream:<br \/>\n<\/u>100 grams almond meal<br \/>\n100 grams butter<br \/>\n100 grams sugar<br \/>\n1 large egg<br \/>\n2 tbsp. Amaretto liqueur<br \/>\n1 tbsp. all-purpose flour<\/p>\n<p dir=\"ltr\" style=\"text-align: justify;\"><u>For the raspberries:<br \/>\n<\/u>200-250 grams raspberries<br \/>\n2-3 tbsp. sugar<br \/>\n1 tsp. cornstarch<\/p>\n<p dir=\"ltr\" style=\"text-align: justify;\"><u>Decoration<\/u><u>:<br \/>\n<\/u>Natural nappage or powdered sugar<\/p>\n<h4 dir=\"ltr\" style=\"text-align: justify;\"><strong>Preparation<\/strong><strong>:<\/strong><\/h4>\n<ol dir=\"ltr\" style=\"text-align: justify;\">\n<li>Crust: in a food processor with a steel blade put flour, almond meal, butter, sugar, vanilla and salt and process until mixture is crumbly.<\/li>\n<li>Add egg and continue to process just until large clumps of dough form.<\/li>\n<li>Transfer the dough chunks on a lightly floured work surface and form a disc-shape with your hands.<\/li>\n<li>Wrap in plastic wrap and refrigerate for about an hour.<\/li>\n<li>Roll out the dough on a floured work surface about 3-4 mm thick and cut out circles about 8-9 cm in diameter. Line the tartelette molds. It is important to create a right angle between the sides and the base of the crust, which will ensure the edges remain high when baking.<\/li>\n<li>Using a fork create holes in the crust of each tartelette. Freeze the tartelette crusts until almond cream is ready to use.<\/li>\n<li>Almond cream: in a food processor with a steel blade put almond meal, butter and sugar and blend until smooth.<\/li>\n<li>Add egg, amaretto and flour and continue to blend until a thick cream is formed.<\/li>\n<li>Raspberries: mix raspberries, sugar and cornstarch in a small bowl and set aside for 10 minutes.<\/li>\n<li>Preheat oven to 175c degrees.<\/li>\n<li>Fill the frozen tartelette crusts with almond cream up to half of its height.<\/li>\n<li>Arrange raspberries over the cream freely.<\/li>\n<li>Bake for 15-20 minutes or until crust is golden and set.<\/li>\n<li>Cool completely at room temperature.<\/li>\n<li>Brush with some natural nappage for a shiny appearance or sprinkle some sugar powder for a more rustic appearance.<\/li>\n<\/ol>\n<h4 dir=\"ltr\" style=\"text-align: justify;\"><strong>Notes:<\/strong><\/h4>\n<ul dir=\"ltr\">\n<li style=\"text-align: justify;\">You can make the recipe in a large pie pan of 24 cm in diameter. Baking time will be longer accordingly.<\/li>\n<li style=\"text-align: justify;\">Keep the tartelettes in a closed container in the refrigerator for up to 5 days.
