I love summer fruits and whenever I have a few fruits in the kitchen that are too soft or a little “over their time”, I like adding it to pastries.<\/p>\n

Galette is some-what freestyle French tart, that is so easy to make and absolutely gorgeous. If you server it warm with a scoop of vanilla ice cream it’s the perfect summer dessert!<\/p>\n

Almond Plum Galette<\/h2>\n

\n

<\/p>\n<\/p>\n

\n\t\t\t<\/div>\n
\n

For the crust:<\/h4>\n
    \n
  • 250 grams (1 1\/2 cups + 3 tbsp.) all-purpose flour<\/li>\n
  • 50 grams (1\/2 cup) almond meal<\/li>\n
  • 100 grams (1\/2 cup) sugar<\/li>\n
  • 200 grams (1 cup) cold butter cut into cubes<\/li>\n
  • 1 large egg<\/li>\n
  • 2 tbsp. Amaretto liqueur<\/li>\n
  • 1 tsp. vanilla extract<\/li>\n<\/ul>\n

    For the plums:<\/h4>\n
      \n
    • 7-8 medium plums (sliced into thin segments)<\/li>\n
    • 80 grams (1\/3 cup) sugar<\/li>\n
    • Juice of 1\/2 lemon<\/li>\n
    • 4 tbsp. Amaretto liqueur<\/li>\n
    • 25 grams (2 tbsp.) light brown sugar<\/li>\n
    • 25 grams (1\/4 cup) almond meal<\/li>\n<\/ul>\n

      For brushing:<\/h4>\n
        \n
      • 1 large egg yolk<\/li>\n
      • 2 tbsp. milk<\/li>\n<\/ul>\n

        Decoration:<\/h4>\n
          \n
        • Sliced blanched almonds<\/li>\n
        • Light brown sugar<\/li>\n<\/ul><\/div>\n

            \n
          1. Crust: in a food processor with a steel blade put flour, almond meal, sugar and butter and blend until crumbly.<\/li>\n
          2. Add in egg, amaretto and vanilla, and continue to blend just until dough begins to form.<\/li>\n
          3. Flatten the dough into a disc shape, wrap with plastic wrap and cool for about 30 minutes in the refrigerator.<\/li>\n
          4. Plums: place the sliced \u200b\u200bplums in a medium bowl.<\/li>\n
          5. Add sugar, lemon juice and Amaretto and mix well until evenly covered.<\/li>\n
          6. Assembly and baking: roll out the dough into a 3-4 mm thick circle, and cut out five 15-16 cm circles. Place the circles on an oven pan lined with baking paper.<\/li>\n
          7. In a small bowl mix brown sugar and almond meal.<\/li>\n
          8. At the center of each circle of dough sprinkle about 1-2 teaspoons of almond-sugar mixture.<\/li>\n
          9. Arrange sliced \u200b\u200bplums, and fold the edges of the dough over the plums to create a Galette shape.<\/li>\n
          10. Cool the galettes in the freezer for 10 minutes.<\/li>\n
          11. Preheat oven to 165c degrees.<\/li>\n
          12. In a small bowl mix egg yolk and milk and brush the edges of the galettes. Sprinkle with sliced \u200b\u200balmonds and a little brown sugar and bake for 22-27 minutes, or until golden brown.<\/li>\n
          13. Sprinkle some powder sugar and serve warm, preferably with vanilla ice cream on the side.<\/li>\n<\/ol><\/div>\n

            • You can make the galettes with any other summer fruits you like such as nectarines, apricots, cherries and even grapes.<\/li>\n<\/ul><\/div>\n
