This cherry tomato mozzarella quiche is pretty, easy-to-make and so delicious.<\/p>\n<div id=\"attachment_10915\" style=\"width: 810px\" class=\"wp-caption alignnone\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-10915\" class=\"wp-image-10915\" title=\"Cherry Tomato Mozzarella Quiche\" src=\"https:\/\/www.lilcookie.com\/wp-content\/uploads\/2011\/05\/cherry_tomatoes_and_mozzarella_cheese_quiche2-s.jpg\" alt=\"Cherry Tomato Mozzarella Quiche\" width=\"800\" height=\"1200\" \/><p id=\"caption-attachment-10915\" class=\"wp-caption-text\">Photo: Natalie Levin<\/p><\/div>\n<p><script async src=\"\/\/pagead2.googlesyndication.com\/pagead\/js\/adsbygoogle.js\"><\/script><br \/>\n<ins class=\"adsbygoogle\" style=\"display: block;\" data-ad-client=\"ca-pub-6091382327871787\" data-ad-slot=\"7832461759\" data-ad-format=\"auto\"><\/ins><br \/>\n<script>\n     (adsbygoogle = window.adsbygoogle || []).push({});\n<\/script><\/p>\n<h4 dir=\"ltr\" style=\"text-align: justify;\"><strong>Cherry Tomato Mozzarella Quiche<\/strong><\/h4>\n<p dir=\"ltr\" style=\"text-align: justify;\">26 cm round pie pan or baking ring<\/p>\n<p dir=\"ltr\" style=\"text-align: justify;\"><u>For the crust:<br \/>\n<\/u>240 grams all-purpose flour<br \/>\n160 grams cold butter cut into cubes<br \/>\n1 tsp. fine salt<br \/>\n1 medium egg<\/p>\n<p dir=\"ltr\" style=\"text-align: justify;\"><u>For the filling:<br \/>\n<\/u>1 tbsp. olive oil<br \/>\n1 large onion, sliced<br \/>\nSalt and pepper to taste<br \/>\n200 grams grated mozzarella cheese<br \/>\n350-400 grams whole cherry tomatoes<\/p>\n<p dir=\"ltr\" style=\"text-align: justify;\"><u>For royal sauce:<br \/>\n<\/u>250 ml. cream<br \/>\n2 eggs<br \/>\n1 heaping tablespoon of flour<br \/>\nSalt and pepper to taste<br \/>\nA little grated nutmeg<br \/>\n1 tsp. thyme leaves or chopped fresh basil<\/p>\n<p dir=\"ltr\" style=\"text-align: justify;\">Some pine nuts for garnish (optional)<\/p>\n<h4 dir=\"ltr\" style=\"text-align: justify;\"><strong>Preparation<\/strong><strong>:<\/strong><\/h4>\n<ol dir=\"ltr\" style=\"text-align: justify;\">\n<li>Crust: In a food processor with a steel blade put flour, butter and salt and blend until the mixture is crumbly.<\/li>\n<li>Add egg and blend until the dough clumps.<\/li>\n<li>Transfer the dough on a lightly floured work surface and create a thin disc-shape. Wrap in plastic wrap and chill for 1 hour.<\/li>\n<li>Roll out the dough on a floured surface to about 3-4 mm thick and line the pan. It is important to create a right angle between the sides and the base of the crust, which will ensure the edges remain high when baking.<\/li>\n<li>Using a fork create holes in the crust. Freeze the crust for about an hour.<\/li>\n<li>Filling: In a small pan heat olive oil.<\/li>\n<li>Add the sliced \u200b\u200bonion and cook over medium-high until it begins to brown and soften a little.<\/li>\n<li>Season with salt and pepper to taste.<\/li>\n<li>Drain the onions and cool slightly<\/li>\n<li>Royal sauce: in a small bowl whisk cream, eggs, flour, salt, pepper, nutmeg and thyme until smooth.<\/li>\n<li>Preheat oven 165 degrees.<\/li>\n<li>Place the onions on the bottom of the frozen crust in an even layer.<\/li>\n<li>Sprinkle half of the mozzarella over the onions.<\/li>\n<li>Place the cherry tomatoes evenly over all.<\/li>\n<li>Pour the Royal gently on top and sprinkle with the remaining cheese evenly.
