I love how the cookies melt in your mouth and have the perfect texture with Dulce de Leche inside and coconut on the sides. It&#8217;s definitely the most genius cookie there is, and I make it quite a lot at home.<\/p>\n<div id=\"attachment_9828\" style=\"width: 810px\" class=\"wp-caption alignnone\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-9828\" class=\"wp-image-9828\" title=\"Alfajores Cookies \" src=\"https:\/\/www.lilcookie.com\/wp-content\/uploads\/2009\/04\/alfajores-s.jpg\" alt=\"Alfajores Cookies \" width=\"800\" height=\"534\" \/><p id=\"caption-attachment-9828\" class=\"wp-caption-text\">Photo: Natalie Levin<\/p><\/div>\n<p><script async src=\"\/\/pagead2.googlesyndication.com\/pagead\/js\/adsbygoogle.js\"><\/script><br \/>\n<ins class=\"adsbygoogle\" style=\"display: block;\" data-ad-client=\"ca-pub-6091382327871787\" data-ad-slot=\"7832461759\" data-ad-format=\"auto\"><\/ins><br \/>\n<script>\n     (adsbygoogle = window.adsbygoogle || []).push({});\n<\/script><\/p>\n<p><!--WPRM Recipe 20830--><\/p>\n<div class=\"wprm-fallback-recipe\">\n<h2 class=\"wprm-fallback-recipe-name\">Alfajores Cookies<\/h2>\n<p class=\"wprm-fallback-recipe-summary\">\n<p><\/p>\n<\/p>\n<div class=\"wprm-fallback-recipe-equipment\">\n\t\t\t<\/div>\n<div class=\"wprm-fallback-recipe-ingredients\">\n<h4>For the dough:<\/h4>\n<ul>\n<li>200 grams (1 cup) cold butter (cut into cubes)<\/li>\n<li>210 grams (1 1\/2 cups) all-purpose flour<\/li>\n<li>240 grams (1 1\/2 cups + 3  tbsp.) cornstarch<\/li>\n<li>10 grams (2 tsp.) baking powder<\/li>\n<li>120 grams (1 cup) sugar powder<\/li>\n<li>3 large egg yolks<\/li>\n<li>3 tbsp. brandy or rum<\/li>\n<li>zest of 1\/2 lemon<\/li>\n<li>1\/2 tsp. vanilla extract<\/li>\n<\/ul>\n<h4>For filling and decoration:<\/h4>\n<ul>\n<li>1 can Dulce de Leche (preferably one that is made in Argentina)<\/li>\n<li>Shredded coconut<\/li>\n<\/ul><\/div>\n<div class=\"wprm-fallback-recipe-instructions\">\n<ol>\n<li>Cookies: In a food processor with a steel blade, put butter, flour, cornstarch, baking powder and sugar powder and blend to fine crumbs.<\/li>\n<li>Add egg yolks, brandy, vanilla and lemon zest and blend just until a smooth dough forms.<\/li>\n<li>Flatten the dough into a disc shape, wrap in plastic wrap and refrigerate for an hour.<\/li>\n<li>Preheat oven to 160c degrees.<\/li>\n<li>On a floured work surface roll out the dough 4mm thick.<\/li>\n<li>Cut out small circles with a cookie cutter about 3cm in diameter.<\/li>\n<li>Arrange the cookies on an oven pan lined with baking paper.<\/li>\n<li>Bake for about 8-10 minutes or until cookies are lightly golden brown.<\/li>\n<li>Cool completely at room temperature and divide into couples.<\/li>\n<li>Fill each 2 cookies with Dulce de Leche generously and press gently so that the Dulce de Leche reveals on the sides. Roll the sides in some shredded coconut.<\/li>\n<li>Store in a sealed container and serve after 3-4 hours at least.<\/li>\n<\/ol><\/div>\n<div class=\"wprm-fallback-recipe-notes\">\n<ul>\n<li style=\"text-align: left\">The cookies are best after at least 3-4 hours, but preferably made one day before serving.<\/li>\n<li style=\"text-align: left\">Keep the cookies in an airtight container at room temperature up to 5 days. On hot and humid days it is recommended to keep in the refrigerator.<\/li>\n<li style=\"text-align: left\">The alfajores cookies can be frozen for up to a month stored in a sealed box.<\/li>\n<\/ul><\/div>\n<div class=\"wprm-fallback-recipe-meta\">\n\t\t\t<\/div>\n<\/div>\n<p><!--End WPRM Recipe--><\/p>\n<\/span>","protected":false},"excerpt":{"rendered":"<p>Alfajores are my favorite cookies in the world!
