It&#8217;s so tasty and perfect for everyone who avoid gluten, and also for Passover.<\/p>\n<div id=\"attachment_12136\" style=\"width: 810px\" class=\"wp-caption alignnone\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-12136\" class=\"wp-image-12136\" title=\"Gluten Free Opera Cake\" src=\"https:\/\/www.lilcookie.com\/wp-content\/uploads\/2012\/03\/opera_cake2-s.jpg\" alt=\"Gluten Free Opera Cake\" width=\"800\" height=\"1191\" \/><p id=\"caption-attachment-12136\" class=\"wp-caption-text\">Photo: Natalie Levin<\/p><\/div>\n<p><script async src=\"\/\/pagead2.googlesyndication.com\/pagead\/js\/adsbygoogle.js\"><\/script><br \/>\n<ins class=\"adsbygoogle\" style=\"display: block;\" data-ad-client=\"ca-pub-6091382327871787\" data-ad-slot=\"7832461759\" data-ad-format=\"auto\"><\/ins><br \/>\n<script>\n     (adsbygoogle = window.adsbygoogle || []).push({});\n<\/script><\/p>\n<h4 dir=\"ltr\" style=\"text-align: justify;\"><strong>Gluten Free Opera Cake <\/strong><\/h4>\n<p dir=\"ltr\">20*20 cm cake pan<\/p>\n<p dir=\"ltr\" style=\"text-align: justify;\"><u>For almond biscuit:<br \/>\n<\/u>5 large eggs<br \/>\n180 grams sugar<br \/>\nPinch of salt<br \/>\n1 tsp. vanilla extract<br \/>\n120 grams almond meal<br \/>\n80 grams cornstarch<\/p>\n<p dir=\"ltr\" style=\"text-align: justify;\"><u>For coffee cream:<br \/>\n<\/u>400 ml. milk<br \/>\n1 tsp. vanilla extract<br \/>\n4 egg yolks<br \/>\n80 grams sugar<br \/>\n40 grams cornstarch<br \/>\n125 grams butter<br \/>\n1 tbsp. granulated coffee<br \/>\n2-3 tbsp. boiling water<\/p>\n<p dir=\"ltr\" style=\"text-align: justify;\"><u>For dark chocolate ganache:<br \/>\n<\/u>250 ml. heavy cream<br \/>\n250 grams chopped dark chocolate<br \/>\n1 tbsp. corn syrup<\/p>\n<p dir=\"ltr\" style=\"text-align: justify;\"><u>For coffee syrup<\/u><u>:<br \/>\n<\/u>100 ml. water<br \/>\n100 grams sugar<br \/>\n30 ml. expresso<\/p>\n<p dir=\"ltr\" style=\"text-align: justify;\"><u>Decoration<\/u><u>:<br \/>\n<\/u>100 grams dark chocolate<br \/>\nCrushed cocoa beans<br \/>\nedible gold dust<\/p>\n<h4 dir=\"ltr\" style=\"text-align: justify;\"><strong>Preparation<\/strong><strong>:<\/strong><\/h4>\n<ol dir=\"ltr\" style=\"text-align: justify;\">\n<li>Almond biscuit: preheat oven to 175c degrees and lightly grease 2 baking papers on 2 baking trays.<\/li>\n<li>In a mixer bowl whip eggs, sugar, salt and vanilla at high speed for 5-6 minutes or until fluffy and creamy.<\/li>\n<li>Add in almond meal and cornstarch and fold until a smooth batter is formed.<\/li>\n<li>Divide the batter evenly between the two pans and level the top smoothly.<\/li>\n<li>Bake for 8-10 minutes or until golden and springy to the touch.<\/li>\n<li>Cool completely and cut into 3 squares about 20 * 20 cm in size (it may be necessary to cut a square from 2 halves).<\/li>\n<li>Coffee cream: in a small pot heat milk and vanilla to a simmer.<\/li>\n<li>In a separate bowl, whisk egg yolks, sugar and cornstarch until smooth.<\/li>\n<li>Pour about 1\/3 of the hot milk into the yolks while whisking constantly until smooth.<\/li>\n<li>Return the mixture into the pot with the remaining milk and mix.<\/li>\n<li>Cook over medium heat while whisking constantly until a thick pastry cream is formed.<\/li>\n<li>Remove from the heat and add the butter. Beat well until completely dissolved.<\/li>\n<li>Transfer the cream into a flat container, cover the surface with plastic wrap (in order to avoid crust formation), and cool for 2-3 hours until completely cold.<\/li>\n<li>Transfer the cold cream into a bowl and whisk until smooth.<\/li>\n<li>In a small bowl, mix coffee and water until melted. Add into the cream and whisk until incorporated. Refrigerate until assembling the cake.<\/li>\n<li>Dark chocolate ganache: in a small pot heat cream and corn syrup to simmering point.<\/li>\n<li>Pour the hot cream over the chopped chocolate, wait a minute, and beat until a uniform and shiny chocolate ganache is formed.<\/li>\n<li>Cool for 15 minutes at room temperature.<\/li>\n<li>Coffee syrup: in a small pot heat water and sugar to a strong boil. Cook for another 2-3 minutes and remove from heat.<\/li>\n<li>Add in the espresso and mix well.<\/li>\n<li>Cool completely before using.<\/li>\n<li>Assemble the cake: place the bottom layer of almond biscuit in a 20*20 cm square pan. Gently brush with coffee syrup.<\/li>\n<li>Pour about 1\/2 of coffee cream and flatten the top.<\/li>\n<li>Place another layer of almond biscuit on top of the cream and brush with syrup.<\/li>\n<li>Pour over about 1\/2 amount of ganache and flatten.<\/li>\n<li>Over the ganache, place the third layer of almond biscuit and brush with syrup.<\/li>\n<li>Pour on the remaining coffee cream, flatten evenly, and then pour the remaining ganache. Flatten the top with a spatula.<\/li>\n<li>Cool the cake in the refrigerator for at least 5 hours (preferably overnight).<\/li>\n<li>Decoration: melt the chocolate in the microwave or over double-boiler.<\/li>\n<li>Pour the melted chocolate onto baking paper and spread using a spatula in a thin layer.<\/li>\n<li>Sprinkle with crushed cocoa beans and a little gold dust and cool for a few minutes in the refrigerator until partly set.<\/li>\n<li>Cut 6-7 cm circles with a cookies cutter and freeze for 10 minutes until completely set.<\/li>\n<li>Extract the cake from the pan, cut about 1\/4 cm of each side (in order for the layers to be seen beautifully) and decorate with chocolate disks.<\/li>\n<\/ol>\n<h4 dir=\"ltr\" style=\"text-align: justify;\"><strong>Notes:<\/strong><\/h4>\n<ul dir=\"ltr\">\n<li style=\"text-align: justify;\">Keep the cake in a closed container in the refrigerator for 4-5 days.<\/li>\n<\/ul>\n<div id=\"attachment_12137\" style=\"width: 810px\" class=\"wp-caption alignnone\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-12137\" class=\"wp-image-12137\" title=\"Gluten Free Opera Cake\" src=\"https:\/\/www.lilcookie.com\/wp-content\/uploads\/2012\/03\/opera_cake-s.jpg\" alt=\"Gluten Free Opera Cake\" width=\"800\" height=\"531\" \/><p id=\"caption-attachment-12137\" class=\"wp-caption-text\">Photo: Natalie Levin<\/p><\/div>\n<\/span>","protected":false},"excerpt":{"rendered":"<p>Whether you like chocolate and coffee, this cake magically combines them both so perfectly!
