These cookies are so &#8220;Passover-y&#8221;, it&#8217;s almost impossible to find it all year round, and they pop on the shelves about a month before Passover.<\/p>\n<p dir=\"ltr\" style=\"text-align: justify;\">This is my version to the store-bought cookies. It&#8217;s very easy to make, so peanut-y and absolutely delicious. If you don&#8217;t like peanuts you can definitely prepare the cookies with other nuts you like and get a different cookie every single time.<\/p>\n<div id=\"attachment_15653\" style=\"width: 810px\" class=\"wp-caption alignnone\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-15653\" class=\"wp-image-15653\" title=\"Peanut Cookies for Passover\" src=\"https:\/\/www.lilcookie.com\/wp-content\/uploads\/2017\/03\/peanuts_cookies-new-s.jpg\" alt=\"Peanut Cookies for Passover\" width=\"800\" height=\"1212\" \/><p id=\"caption-attachment-15653\" class=\"wp-caption-text\">Photo: Natalie Levin<\/p><\/div>\n<p><script async src=\"\/\/pagead2.googlesyndication.com\/pagead\/js\/adsbygoogle.js\"><\/script><br \/>\n<ins class=\"adsbygoogle\" style=\"display: block;\" data-ad-client=\"ca-pub-6091382327871787\" data-ad-slot=\"7832461759\" data-ad-format=\"auto\"><\/ins><br \/>\n<script>\n     (adsbygoogle = window.adsbygoogle || []).push({});\n<\/script><\/p>\n<p><!--WPRM Recipe 20320--><\/p>\n<div class=\"wprm-fallback-recipe\">\n<h2 class=\"wprm-fallback-recipe-name\">Peanut Cookies for Passover<\/h2>\n<p class=\"wprm-fallback-recipe-summary\">\n<div class=\"wprm-fallback-recipe-equipment\">\n\t\t\t<\/div>\n<div class=\"wprm-fallback-recipe-ingredients\">\n<h4>Ingredients:<\/h4>\n<ul>\n<li>120 grams (1\/2 cup + 2 tbsp.) sugar<\/li>\n<li>2 large eggs<\/li>\n<li>1\/2 tsp. vanilla extract<\/li>\n<li>Pinch of salt<\/li>\n<li>250 grams chopped peanuts<\/li>\n<\/ul><\/div>\n<div class=\"wprm-fallback-recipe-instructions\">\n<ol>\n<li>Preheat the oven to 170c degrees.<\/li>\n<li>In a mixer bowl, whip sugar, eggs, vanilla and salt at high speed for 4-5 minutes until you get a light, fluffy and glossy mixture.<\/li>\n<li>Transfer the mixture into a medium pot and simmer while whisking constantly for about 2-3 minutes on medium-low heat, or until the mixture thickens slightly (it should resemble light pudding texture).<\/li>\n<li>Add chopped peanuts and mix until a soft mixture is obtained.<\/li>\n<li>Transfer the mixture into a piping bag (no needed piping tip) and cut a relatively large hole.<\/li>\n<li>Cool the mixture (inside the bag) in the refrigerator until it cools slightly.<\/li>\n<li>Drizzle mounds of the mixture on a baking tray lined with baking paper.<\/li>\n<li>Bake for 15-20 minutes or until golden brown.<\/li>\n<li>Cool completely and store in a sealed box.<\/li>\n<\/ol><\/div>\n<div class=\"wprm-fallback-recipe-notes\">\n<ul>\n<li style=\"text-align: left\">Keep the peanut cookies in a jar for up to a week.<\/li>\n<li style=\"text-align: left\">If desired, you can decorate the cookies with some melted dark chocolate at the top.<\/li>\n<li style=\"text-align: left\">Instead of peanuts you can use any other type of nuts that you like in the same amount.<\/li>\n<\/ul><\/div>\n<div class=\"wprm-fallback-recipe-meta\">\n\t\t\t<\/div>\n<\/div>\n<p><!--End WPRM Recipe--><\/p>\n<div id=\"attachment_15652\" style=\"width: 810px\" class=\"wp-caption alignnone\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-15652\" class=\"wp-image-15652\" title=\"Peanut Cookies for Passover\" src=\"https:\/\/www.lilcookie.com\/wp-content\/uploads\/2017\/03\/peanuts_cookies-new2-s.jpg\" alt=\"Peanut Cookies for Passover\" width=\"800\" height=\"533\" \/><p id=\"caption-attachment-15652\" class=\"wp-caption-text\">Photo: Natalie Levin<\/p><\/div>\n<\/span>","protected":false},"excerpt":{"rendered":"<p>One of the most popular cookies around Passover is peanut cookies that are a best-seller during the holiday at all grocery stores.
