This coffee cake combines two of my favorite ingredients \u2013 coffee and pecans. (1 cup) milk or water<br \/>\n125 ml. (1\/2 cup) vegetable oil<br \/>\n2 tbsp. instant coffee powder<br \/>\nPinch of salt<br \/>\n1 tsp. vanilla extract<br \/>\n280 grams (2 cups) all-purpose flour<br \/>\n75 grams (3\/4 cup) almond meal<br \/>\n2 tsp. baking powder<br \/>\n200 grams pecans coarsely chopped<\/p>\n<p dir=\"ltr\" style=\"text-align: justify;\"><u>Decoration:<br \/>\n<\/u>2-3 tbsp. chopped pecans<br \/>\nSugar powder<\/p>\n<h4 dir=\"ltr\" style=\"text-align: justify;\"><strong>Preparation<\/strong><strong>:<\/strong><\/h4>\n<ol dir=\"ltr\" style=\"text-align: justify;\">\n<li>Preheat oven to 170c degrees grease the pan.<\/li>\n<li>In a large bowl, whisk eggs, sugar, milk, oil, coffee, salt and vanilla to a smooth mixture.<\/li>\n<li>Add flour, almond meal and baking powder and mix until you get a uniform batter.<\/li>\n<li>Add chopped pecans and fold gently until evenly dispersed in the mixture.<\/li>\n<li>Pour the batter into the pans and flatten the top.<\/li>\n<li>Sprinkle some pecans on top of each cake and bake for 35-45 minutes or until the cakes are golden brown, and a skewer inserted in the center comes out with moist crumbs.<\/li>\n<li>Cool completely at room temperature, sprinkle with powdered sugar and serve.<\/li>\n<\/ol>\n<h4 dir=\"ltr\" style=\"text-align: justify;\"><strong>Notes:<\/strong><\/h4>\n<ul dir=\"ltr\">\n<li style=\"text-align: justify;\">Keep the coffee cake in a closed container at room temperature for 3-4 days, or refrigerate for up to a week.<\/li>\n<li style=\"text-align: justify;\">It is recommended to serve the cake at room temperature or warm.<\/li>\n<li style=\"text-align: justify;\">Instead of pecans, you can use any other type of nuts that you like in the same amount.<\/li>\n<li style=\"text-align: justify;\">You can add chocolate chips to the batter.<\/li>\n<\/ul>\n<\/span>","protected":false},"excerpt":{"rendered":"<p>I love making pound cakes \u2013 it&#8217;s easy, quick and the result is always satisfying and tasty.
