(1\/4 cup) olive oil<\/li>\n<li>60 ml. (1\/4 cup) vegetable oil<\/li>\n<li>75 ml. (1\/3 cup) water<\/li>\n<li>1\/2 tsp. salt<\/li>\n<li>1 tsp. vanilla extract<\/li>\n<li>140 grams (1 cup) whole spelt flour<\/li>\n<li>140 grams (1 cup) all-purpose flour<\/li>\n<li>1 tsp. baking powder<\/li>\n<li>3\/4 tsp. baking soda<\/li>\n<li>250 grams dark chocolate (coarsely chopped)<\/li>\n<li>A little coarse salt garnish<\/li>\n<\/ul><\/div>\n<div class=\"wprm-fallback-recipe-instructions\">\n<ol>\n<li>In a large bowl, mix sugar, olive oil, vegetable oil, water, salt and vanilla until blended.<\/li>\n<li>Add flour, spelt flour, baking powder and baking soda and mix until dough is smooth and slightly sticky.<\/li>\n<li>Add the chopped chocolate and stir until incorporated evenly in the dough.<\/li>\n<li>Cover the dough with plastic wrap and refrigerate for 3-4 hours at least.<\/li>\n<li>Remove the dough from the refrigerator and form small walnut-sized balls.<\/li>\n<li>Place the cookies on a baking pan lined with baking paper.<\/li>\n<li>Freeze the cookies for about 30 minutes before baking.<\/li>\n<li>Preheat oven to 180c degrees.<\/li>\n<li>Bake for 12-14 minutes or until the cookies spread and set at the edges but still slightly soft in the center.<\/li>\n<li>Cool completely and serve.<\/li>\n<\/ol><\/div>\n<div class=\"wprm-fallback-recipe-notes\">\n<ul>\n<li style=\"text-align: left\">Keep the cookies in a sealed jar up to a week.<\/li>\n<li style=\"text-align: left\">Instead of dark chocolate you can be use milk or white chocolate (then the cookies won&#8217;t be vegan though).<\/li>\n<li style=\"text-align: left\">You can use plain all-purpose flour instead of spelt flour the same amount.<\/li>\n<\/ul><\/div>\n<div class=\"wprm-fallback-recipe-meta\">\n\t\t\t<\/div>\n<\/div>\n<p><!--End WPRM Recipe--><\/p>\n<div id=\"attachment_15568\" style=\"width: 810px\" class=\"wp-caption alignnone\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-15568\" class=\"wp-image-15568\" title=\"Vegan Chocolate Chip Cookies\" src=\"https:\/\/www.lilcookie.com\/wp-content\/uploads\/2017\/03\/vegan_chocolate_chip_cookies2-s.jpg\" alt=\"Vegan Chocolate Chip Cookies\" width=\"800\" height=\"533\" \/><p id=\"caption-attachment-15568\" class=\"wp-caption-text\">Photo: Natalie Levin<\/p><\/div>\n<\/span>","protected":false},"excerpt":{"rendered":"<p>If you like chocolate chip cookies \u2013 this is the ultimate recipe!
