YUM!<\/p>\n<div id=\"attachment_15451\" style=\"width: 810px\" class=\"wp-caption alignnone\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-15451\" class=\"wp-image-15451\" title=\"Caramel Mousse Domes with Candied Hazelnuts\" src=\"https:\/\/www.lilcookie.com\/wp-content\/uploads\/2017\/02\/caramel_mousse_and_expresso_sable_breton2-s.jpg\" alt=\"Caramel Mousse Domes with Candied Hazelnuts\" width=\"800\" height=\"1200\" \/><p id=\"caption-attachment-15451\" class=\"wp-caption-text\">Photo: Natalie Levin<\/p><\/div>\n<p><script async src=\"\/\/pagead2.googlesyndication.com\/pagead\/js\/adsbygoogle.js\"><\/script><br \/>\n<ins class=\"adsbygoogle\" style=\"display: block;\" data-ad-client=\"ca-pub-6091382327871787\" data-ad-slot=\"7832461759\" data-ad-format=\"auto\"><\/ins><br \/>\n<script>\n     (adsbygoogle = window.adsbygoogle || []).push({});\n<\/script><\/p>\n<p><!--WPRM Recipe 19732--><\/p>\n<div class=\"wprm-fallback-recipe\">\n<h2 class=\"wprm-fallback-recipe-name\">Caramel Mousse Domes with Candied Hazelnuts<\/h2>\n<p class=\"wprm-fallback-recipe-summary\">\n<p><\/p>\n<\/p>\n<div class=\"wprm-fallback-recipe-equipment\">\n\t\t\t<\/div>\n<div class=\"wprm-fallback-recipe-ingredients\">\n<h4>For coffee and hazelnuts Sabl\u00e9 Breton:<\/h4>\n<ul>\n<li>75 grams soft butter<\/li>\n<li>75 grams dark brown sugar<\/li>\n<li>1\/2 tsp. fine salt<\/li>\n<li>1\/2 tsp. instant coffee powder<\/li>\n<li>2 large egg yolks<\/li>\n<li>100 grams all-purpose flour<\/li>\n<li>50 grams ground hazelnuts<\/li>\n<li>8 grams baking powder<\/li>\n<\/ul>\n<h4>For caramel mousse domes:<\/h4>\n<ul>\n<li>5 grams gelatin<\/li>\n<li>25 ml. water<\/li>\n<li>100 grams sugar<\/li>\n<li>35 grams glucose or corn syrup<\/li>\n<li>45 ml. water<\/li>\n<li>Pinch of salt<\/li>\n<li>125 ml. heavy cream<\/li>\n<li>2 large egg yolks<\/li>\n<li>250 ml. heavy cream (cold)<\/li>\n<\/ul>\n<h4>For caramel and espresso glacage:<\/h4>\n<ul>\n<li>6 grams gelatin<\/li>\n<li>30 ml. water<\/li>\n<li>20 ml. milk<\/li>\n<li>15 grams cornstarch<\/li>\n<li>250 grams sugar<\/li>\n<li>80 ml. espresso<\/li>\n<li>200 ml. heavy cream<\/li>\n<\/ul>\n<h4>For candied hazelnuts:<\/h4>\n<ul>\n<li>50 grams sugar<\/li>\n<li>1-2 tbsp. water<\/li>\n<li>100 grams peeled hazelnuts<\/li>\n<\/ul>\n<h4>You will need:<\/h4>\n<ul>\n<li>8-10 baking rings 8 cm in diameter<\/li>\n<li>5-6 cm individual domes silicon mold<\/li>\n<\/ul><\/div>\n<div class=\"wprm-fallback-recipe-instructions\">\n<ol>\n<li>Coffee and hazelnuts Sabl\u00e9 Breton: preheat oven to 170c degrees and lightly butter your molds.<\/li>\n<li>In a bowl of an electric mixer with a paddle attachment put butter, sugar, salt and coffee and blend at high speed until the mixture is smooth and creamy.<\/li>\n<li>Add egg yolks and continue to blend until they are assimilated into the mixture.<\/li>\n<li>Add flour, hazelnuts and baking powder and mix until you get smooth, slightly sticky dough.<\/li>\n<li>Divide the dough evenly between the molds and tighten to the bottom to create bases for the tartelettes. If the dough is too sticky, work with slightly wet hands.<\/li>\n<li>Bake for about 10-15 minutes or until evenly golden brown and set.<\/li>\n<li>Cool completely and extract from the molds.<\/li>\n<li>Caramel mousse: in a small bowl soak gelatin and 25 ml of water for 10-15 minutes or until gelatin absorbs all the liquid.<\/li>\n<li>In a small saucepan put sugar, glucose, water and salt and form caramel.<\/li>\n<li>In a separate pot, heat the cream almost to a boil.<\/li>\n<li>When caramel is amber in color, pour in the hot cream and stir carefully until you get a uniform caramel sauce.<\/li>\n<li>Beat egg yolks in a small bowl.<\/li>\n<li>Pour about 1\/3 of caramel sauce over egg yolks, while whisking fast, until the mixture is uniform.<\/li>\n<li>Add the egg mixture to saucepan with remaining sauce and cook, blend and cook over medium-low heat, stirring constantly, until cream reaches 82-84c degrees. Remove from heat.<\/li>\n<li>Dissolve the gelatin and add into the caramel mixture.<\/li>\n<li>Strain and cool at room temperature to 45c degrees.<\/li>\n<li>Whip the cream to soft peaks and fold into the caramel.<\/li>\n<li>Pour the caramel mousse into the domes, and smooth the top.<\/li>\n<li>Freeze the domes for 4-5 hours at least, or until they are completely frozen.<\/li>\n<li>Caramel and espresso glacage: in a small bowl stir the gelatin and water and set aside for about 10 minutes until the gelatin absorbs all the liquid.<\/li>\n<li>In a separate bowl mix milk and cornstarch until blended.<\/li>\n<li>In a large skillet put sugar and form caramel. Meanwhile, heat cream and espresso in a small saucepan to simmering point.<\/li>\n<li>When caramel is amber in color, carefully add in the cream mixture and mix well until smooth.<\/li>\n<li>Pour about 1\/3 amount of caramel sauce into the bowl with the cornstarch and mix well. Add it all back to the pan and stir well.<\/li>\n<li>Add in the gelatin and stir until it melts.<\/li>\n<li>Cool the glacage to 27-28c degrees.<\/li>\n<li>Extract the frozen mousse domes and place over the rack.<\/li>\n<li>Carefully but quickly cover in glacage, creating a glossy coating.<\/li>\n<li>Cool in the freezer for 15-20 minutes.<\/li>\n<li>Place coated mousse dome on the bottom of the baked Sabl\u00e9 Breton. Refrigerate until nuts are ready.<\/li>\n<li>Candied hazelnuts: preheat oven to 140 degrees.<\/li>\n<li>In a medium pan put sugar and water and cook until thick syrup forms.<\/li>\n<li>When the syrup reaches 118c degrees, add ins the nuts and stir well until the nuts get white coating.<\/li>\n<li>Transfer the nuts into an oven pan lined with baking paper and bake for 10-15 minutes until the nuts are dried and roasted slightly. Cool completely.<\/li>\n<li>Arrange candied nuts around the mousse and serve.<\/li>\n<\/ol><\/div>\n<div class=\"wprm-fallback-recipe-notes\">\n<ul>\n<li style=\"text-align: left\">Keep the caramel mousse domes (without decoration) for up to 3-4 days in a closed container in the refrigerator.
