(1\/2 cup) boiling water<\/li>\n<li>1 tsp. instant coffee<\/li>\n<li>2 large eggs<\/li>\n<li>100 grams (1\/2 cup) sugar<\/li>\n<li>180 grams (1\/2 cup) honey<\/li>\n<li>200 grams (1 cup) coconut cream<\/li>\n<li>125 ml. (1\/2 cup) vegetable oil<\/li>\n<li>Pinch of salt<\/li>\n<li>1 tsp. ground cinnamon<\/li>\n<li>1 tsp. vanilla extract<\/li>\n<li>1\/2 tsp. ground ginger<\/li>\n<li>1\/4 tsp. ground cardamom<\/li>\n<li>280 grams (2 cups) all-purpose flour<\/li>\n<li>75 grams (3\/4 cup) shredded coconut<\/li>\n<li>10 grams (2 tsp.) baking powder<\/li>\n<li>3-4 ripe pears (diced)<\/li>\n<li>Icing sugar for decoration<\/li>\n<\/ul><\/div>\n<div class=\"wprm-fallback-recipe-instructions\">\n<ol>\n<li>Preheat oven to 170c degrees and grease the pans.<\/li>\n<li>Put the boiling water in a glass and add the coffee. Stir and let cool slightly at room temperature.<\/li>\n<li>In a large bowl, whisk eggs, sugar, honey, coconut cream, oil, salt, cinnamon, vanilla, ginger and cardamom until mixture is smooth.<\/li>\n<li>Add the coffee mixture and beat well.<\/li>\n<li>Add flour, coconut and baking powder and mix just until incorporated.<\/li>\n<li>Add the diced pears and stir just until evenly dispersed in the mixture.<\/li>\n<li>Divide the batter between the two pans, and smooth the top.<\/li>\n<li>Bake for about 35-45 minutes or until a toothpick inserted in the center of the cakes comes out with moist crumbs.<\/li>\n<li>Cool completely at room temperature, sprinkle with powdered sugar and serve.<\/li>\n<\/ol><\/div>\n<div class=\"wprm-fallback-recipe-notes\">\n<ul>\n<li style=\"text-align: left\">Keep the cakes wrapped tightly in plastic wrap in the refrigerator for up to one week.<\/li>\n<li style=\"text-align: left\">Serve the cake warm or at room temperature.<\/li>\n<li style=\"text-align: left\">You can use apples or peaches instead of pears.<\/li>\n<\/ul><\/div>\n<div class=\"wprm-fallback-recipe-meta\">\n\t\t\t<\/div>\n<\/div>\n<p><!--End WPRM Recipe--><\/p>\n<div id=\"attachment_15415\" style=\"width: 810px\" class=\"wp-caption alignnone\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-15415\" class=\"wp-image-15415\" title=\"Coconut Honey Cake with Pears\" src=\"https:\/\/www.lilcookie.com\/wp-content\/uploads\/2017\/02\/pear_coconut_and_honey_cake2-s.jpg\" alt=\"Coconut Honey Cake with Pears\" width=\"800\" height=\"534\" \/><p id=\"caption-attachment-15415\" class=\"wp-caption-text\">Photo: Natalie Levin<\/p><\/div>\n<\/span>","protected":false},"excerpt":{"rendered":"<p>I love making honey cakes all year round, and not only on Rosh Hashana.
