I love its shape, texture and taste, and it combines perfectly in desserts and cakes.<\/p>\n<p dir=\"ltr\" style=\"text-align: justify;\">These raspberry and chocolate eclairs are filled with milk chocolate cream and are glazed with chocolate and raspberry glaze, vanilla cream and fresh raspberries. It&#8217;s a wonderful dessert for hosting a fancy dinner!<\/p>\n<div id=\"attachment_15409\" style=\"width: 810px\" class=\"wp-caption alignnone\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-15409\" class=\"wp-image-15409\" title=\"Raspberry and Milk Chocolate Eclairs\" src=\"https:\/\/www.lilcookie.com\/wp-content\/uploads\/2017\/02\/raspberry_and_milk_chocolate_eclairs2-s.jpg\" alt=\"Raspberry and Milk Chocolate Eclairs\" width=\"800\" height=\"1200\" \/><p id=\"caption-attachment-15409\" class=\"wp-caption-text\">Photo: Natalie Levin<\/p><\/div>\n<p><script async src=\"\/\/pagead2.googlesyndication.com\/pagead\/js\/adsbygoogle.js\"><\/script><br \/>\n<ins class=\"adsbygoogle\" style=\"display: block;\" data-ad-client=\"ca-pub-6091382327871787\" data-ad-slot=\"7832461759\" data-ad-format=\"auto\"><\/ins><br \/>\n<script>\n     (adsbygoogle = window.adsbygoogle || []).push({});\n<\/script><\/p>\n<p><!--WPRM Recipe 20262--><\/p>\n<div class=\"wprm-fallback-recipe\">\n<h2 class=\"wprm-fallback-recipe-name\">Raspberry and Milk Chocolate Eclairs<\/h2>\n<p class=\"wprm-fallback-recipe-summary\">\n<div class=\"wprm-fallback-recipe-equipment\">\n\t\t\t<\/div>\n<div class=\"wprm-fallback-recipe-ingredients\">\n<h4>For the eclairs:<\/h4>\n<ul>\n<li>160 ml. water<\/li>\n<li>5 grams sugar<\/li>\n<li>70 grams butter<\/li>\n<li>3 grams fine salt<\/li>\n<li>15 grams cornstarch<\/li>\n<li>90 grams all-purpose flour<\/li>\n<li>2-3 eggs (beaten)<\/li>\n<\/ul>\n<h4>Milk chocolate cream:<\/h4>\n<ul>\n<li>500 ml. milk<\/li>\n<li>1 tsp. vanilla extract<\/li>\n<li>Pinch of salt<\/li>\n<li>4 large egg yolks<\/li>\n<li>140 grams sugar<\/li>\n<li>50 grams cornstarch<\/li>\n<li>100 grams milk chocolate (chopped)<\/li>\n<li>250 ml. heavy cream<\/li>\n<\/ul>\n<h4>For chocolate and raspberry glaze:<\/h4>\n<ul>\n<li>75 grams white chocolate<\/li>\n<li>30 grams natural nappage<\/li>\n<li>20 grams raspberry puree<\/li>\n<li>A little red food coloring (optional(<\/li>\n<\/ul>\n<h4>For vanilla cream:<\/h4>\n<ul>\n<li>75 ml. heavy cream<\/li>\n<li>1\/2 tsp. vanilla extract<\/li>\n<li>1\/2 tsp. cream stabilizer or instant vanilla pudding mix<\/li>\n<\/ul>\n<h4>Decoration:<\/h4>\n<ul>\n<li>150-200 grams fresh raspberries<\/li>\n<li>Grated milk chocolate<\/li>\n<\/ul><\/div>\n<div class=\"wprm-fallback-recipe-instructions\">\n<ol>\n<li>Make the eclairs: preheat oven to 250c degrees and turn it just before baking.<\/li>\n<li>In a medium saucepan put water, salt, sugar and butter and heat to a strong boil.<\/li>\n<li>Add cornstarch and flour and stir while cooking, until it turns into a lump of dough.<\/li>\n<li>Transfer the dough to the bowl of an electric mixer with a paddle attachment and mix on medium speed for 2-3 minutes until it cools down a little.<\/li>\n<li>Add the eggs gradually while beating until dough is elastic and smooth. Check the readiness of dough by creating a &#8220;trail&#8221; with a wooden spoon in the center of the dough &#8211; if the track remains stable, add some eggs, and if it closes a bit &#8211; the dough is ready. It is important not to add too many eggs to the dough or it may become too soft and ruined.<\/li>\n<li>Transfer the dough to a pastry bag fitted with a serrated 2 cm piping tip. On a baking tray lined with baking paper pipe 8-10 cm long eclairs. It&#8217;s important to leave some space between the eclairs.<\/li>\n<li>Bake the eclairs in the shut-down oven for about 18-20 minutes. It is important not to open the oven door during this time.<\/li>\n<li>Turn the oven to 170c degrees (while eclairs are still in) and continue to bake for 10-15 minutes. In the last 5 minutes of baking, leave the oven door open slot (put a wooden spoon in oven door). Cool completely at room temperature.<\/li>\n<li>Make 2 small holes at the bottom of each eclair.<\/li>\n<li>Milk chocolate cream: in a small saucepan put milk, vanilla and salt and heat to simmering point.<\/li>\n<li>Meanwhile, whip egg yolks, sugar and cornstarch.<\/li>\n<li>Strain the milk mixture and pour about 1\/3 into the yolk mixture, while whisking until blended. Add the remaining milk mixture and mix well.<\/li>\n<li>Put the cream back in the saucepan and cook over medium heat while whisking until a thick pastry cream forms.<\/li>\n<li>Remove from heat and add in the chopped chocolate. Mix until blended.<\/li>\n<li>Transfer the cream into a flat container. Cover the surface with plastic wrap (in order to avoid crust formation). Cool the cream in the refrigerator for 2-3 hours, until it is completely set.<\/li>\n<li>Transfer the cold cream into a bowl and whisk until it returns to the original texture.<\/li>\n<li>Whip the cream to stiff peaks and fold into the chocolate cream until combined.<\/li>\n<li>Transfer about 3\/4 of the cream into a piping bag fitted with 1\/2 cm piping tip and the remaining into a piping bag with 1 cm serrated piping tip.<\/li>\n<li>Fill the eclairs with the chocolate cream, and keep in the refrigerator until decoration.<\/li>\n<li>Chocolate and raspberry glaze: chop the chocolate and put in a small bowl.<\/li>\n<li>Add nappage and raspberry puree and solvents together in the microwave or over double-boiler until everything is melted and mixture is smooth. If desired, add a little food coloring.<\/li>\n<li>Transfer the glaze into a flat container and dip the top of each \u00e9clair in the glaze. Refrigerate for 15 minutes to set.<\/li>\n<li>Vanilla cream: in a bowl of a mixer, whip cream, vanilla and stabilizer until firm.<\/li>\n<li>Transfer the whipped cream into a pastry bag fitted with 1 cm round piping tip.<\/li>\n<li>Decoration: Pipe mounds of chocolate cream on top of each \u00e9clair and arrange fresh raspberries.
