It&#8217;s a golden, buttery and super crunchy pie filled with almond, coconut and honey filling, and is so easy to make.<\/p>\n<div id=\"attachment_15405\" style=\"width: 810px\" class=\"wp-caption alignnone\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-15405\" class=\"wp-image-15405\" title=\"Coconut Almond Pie with Honey \" src=\"https:\/\/www.lilcookie.com\/wp-content\/uploads\/2017\/02\/honey_almon_and_coconut_cake2-s.jpg\" alt=\"Coconut Almond Pie with Honey \" width=\"800\" height=\"1200\" \/><p id=\"caption-attachment-15405\" class=\"wp-caption-text\">Photo: Natalie Levin<\/p><\/div>\n<p><script async src=\"\/\/pagead2.googlesyndication.com\/pagead\/js\/adsbygoogle.js\"><\/script><br \/>\n<ins class=\"adsbygoogle\" style=\"display: block;\" data-ad-client=\"ca-pub-6091382327871787\" data-ad-slot=\"7832461759\" data-ad-format=\"auto\"><\/ins><br \/>\n<script>\n     (adsbygoogle = window.adsbygoogle || []).push({});\n<\/script><\/p>\n<p><!--WPRM Recipe 21547--><\/p>\n<div class=\"wprm-fallback-recipe\">\n<h2 class=\"wprm-fallback-recipe-name\">Coconut Almond Pie with Honey<\/h2>\n<p class=\"wprm-fallback-recipe-summary\">\n<p><\/p>\n<\/p>\n<div class=\"wprm-fallback-recipe-equipment\">\n\t\t\t<\/div>\n<div class=\"wprm-fallback-recipe-ingredients\">\n<h4>For the dough:<\/h4>\n<ul>\n<li>150 grams (1 cup + 1 tbsp.) all-purpose flour<\/li>\n<li>100 grams (1\/2 cup) cold butter cut into cubes<\/li>\n<li>30 grams (3 tbsp.) icing sugar<\/li>\n<li>1\/4 tsp. fine salt<\/li>\n<li>1 tsp. vanilla extract<\/li>\n<li>1 egg yolk<\/li>\n<li>1-2 tbsp. cold water (optional, only if necessary)<\/li>\n<\/ul>\n<h4>Almond, coconut and honey filling:<\/h4>\n<ul>\n<li>180 grams (1\/2 cup) honey<\/li>\n<li>1 tbsp. dark brown sugar<\/li>\n<li>75 grams (1\/3 cup) melted coconut oil<\/li>\n<li>1 large egg<\/li>\n<li>pinch of salt<\/li>\n<li>1\/2 tsp. vanilla extract<\/li>\n<li>50 grams (1\/2 cup) grated coconut<\/li>\n<li>200 grams sliced blanched almonds<\/li>\n<li>Icing sugar for decoration<\/li>\n<\/ul><\/div>\n<div class=\"wprm-fallback-recipe-instructions\">\n<ol>\n<li>Make the pie crust: in a food processor with a steel blade put flour, butter, icing sugar, salt and vanilla and process until mixture is crumbly.<\/li>\n<li>Add egg yolk and continue to process until large chunks of dough form. If the dough is not forming &#8211; add a little water gradually.<\/li>\n<li>Transfer the dough chunks on a lightly floured work surface, and create a disc shape.. Wrap in plastic wrap and refrigerate for about an hour.<\/li>\n<li>On well-floured surface, roll out the dough to about 3-4 mm thick and line the pan. It is important to keep a right angle between the sides and the base of the pie crust, in order for the edges to remain high during baking.<\/li>\n<li>Using a fork create small holes in the crust.<\/li>\n<li>Cool the crust in the freezer for about 1\/2 hour.<\/li>\n<li>Preheat oven to 170c degrees.<\/li>\n<li>Blind baking: place a sheet of plastic wrap (heat resistant) or parchment paper on top of the frozen crust and fill with dry beans or special baking weights.<\/li>\n<li>Bake for about 12-14 minutes.<\/li>\n<li>Remove the plastic and beans and bake for another 4-6 minutes until lightly golden brown.<\/li>\n<li>Cool slightly at room temperature.<\/li>\n<li>Almond, coconut and honey filling: in a medium bowl put honey, sugar, coconut oil, egg, salt and vanilla and beat into a smooth mixture.<\/li>\n<li>Add coconut and almonds and mix until smooth.<\/li>\n<li>Pour the mixture onto half-baked crust and bake an additional 10-15 minutes or until the filling is golden and set on the edges, but still slightly soft in the center.<\/li>\n<li>Cool completely at room temperature before serving.<\/li>\n<li>Sprinkle some powdered sugar and serve.<\/li>\n<\/ol><\/div>\n<div class=\"wprm-fallback-recipe-notes\">\n<ul>\n<li style=\"text-align: left\">Keep the pie in a closed container in the refrigerator for up to 4-5 days.<\/li>\n<li style=\"text-align: left\">Serve the pie at room temperature.<\/li>\n<li style=\"text-align: left\">Instead of almonds you can use any other nut you like.<\/li>\n<li style=\"text-align: left\">You can use maple or date syrup instead of honey.<\/li>\n<\/ul><\/div>\n<div class=\"wprm-fallback-recipe-meta\">\n\t\t\t<\/div>\n<\/div>\n<p><!--End WPRM Recipe--><\/p>\n<div id=\"attachment_15406\" style=\"width: 810px\" class=\"wp-caption alignnone\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-15406\" class=\"wp-image-15406\" title=\"Coconut Almond Pie with Honey \" src=\"https:\/\/www.lilcookie.com\/wp-content\/uploads\/2017\/02\/honey_almon_and_coconut_cake-s.jpg\" alt=\"Coconut Almond Pie with Honey \" width=\"800\" height=\"534\" \/><p id=\"caption-attachment-15406\" class=\"wp-caption-text\">Photo: Natalie Levin<\/p><\/div>\n<\/span>","protected":false},"excerpt":{"rendered":"<p>If you like almonds and coconut \u2013 this almond pie will definitely steal your heart!
