So yummy!<\/p>\n<div id=\"attachment_15401\" style=\"width: 810px\" class=\"wp-caption alignnone\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-15401\" class=\"wp-image-15401\" title=\"Coffee Sandwich Cookies filled with Halva\" src=\"https:\/\/www.lilcookie.com\/wp-content\/uploads\/2017\/02\/coffee_and_halva_sandwich_cookies2-s.jpg\" alt=\"Coffee Sandwich Cookies filled with Halva\" width=\"800\" height=\"1200\" \/><p id=\"caption-attachment-15401\" class=\"wp-caption-text\">Photo: Natalie Levin<\/p><\/div>\n<p><script async src=\"\/\/pagead2.googlesyndication.com\/pagead\/js\/adsbygoogle.js\"><\/script><br \/>\n<ins class=\"adsbygoogle\" style=\"display: block;\" data-ad-client=\"ca-pub-6091382327871787\" data-ad-slot=\"7832461759\" data-ad-format=\"auto\"><\/ins><br \/>\n<script>\n     (adsbygoogle = window.adsbygoogle || []).push({});\n<\/script><\/p>\n<p><!--WPRM Recipe 21632--><\/p>\n<div class=\"wprm-fallback-recipe\">\n<h2 class=\"wprm-fallback-recipe-name\">Coffee Sandwich Cookies filled with Halva<\/h2>\n<p class=\"wprm-fallback-recipe-summary\">\n<div class=\"wprm-fallback-recipe-equipment\">\n\t\t\t<\/div>\n<div class=\"wprm-fallback-recipe-ingredients\">\n<h4>For the coffee sandwich cookies:<\/h4>\n<ul>\n<li>100 grams (1\/2 cup) soft butter<\/li>\n<li>125 grams (1\/2 cup + 2 tbsp.) sugar<\/li>\n<li>1\/4 tsp. fine salt<\/li>\n<li>1\/2 tsp. vanilla extract<\/li>\n<li>1\/2 tsp. instant coffee powder<\/li>\n<li>1 large egg<\/li>\n<li>180 grams (1 1\/4 cups) all-purpose flour<\/li>\n<li>1 tsp. baking powder<\/li>\n<li>light brown sugar for coating<\/li>\n<\/ul>\n<h4>For the filling:<\/h4>\n<ul>\n<li>Halva spread<\/li>\n<\/ul>\n<h4>Decoration:<\/h4>\n<ul>\n<li>50 grams dark chocolate (optional)<\/li>\n<\/ul><\/div>\n<div class=\"wprm-fallback-recipe-instructions\">\n<h4>Coffee sandwich cookies:<\/h4>\n<ol>\n<li>In mixer bowl with paddle-attachment whip butter, sugar, salt, coffee and vanilla until mixture is creamy and smooth.<\/li>\n<li>Scrape the sides of the bowl with a spatula and add an egg. Continue to blend the mixture until it is absorbed.<\/li>\n<li>Add flour and baking powder and mix until the dough is smooth.<\/li>\n<li>Wrap the dough in plastic wrap, flatten slightly and let cool for about 20 minutes in the refrigerator.<\/li>\n<li>Preheat oven to 170c degrees and line oven trays with baking paper.<\/li>\n<li>Create small balls (the size of a walnut) from the dough and coat them in sugar. Place on the baking trays.<\/li>\n<li>Flatten top of the cookies slightly with your hands and bake for 8-10 minutes or until golden and set at the edges but still slightly soft in the center.<\/li>\n<li>Cool completely before filling.<\/li>\n<\/ol>\n<h4>Assemble the cookie sandwich:<\/h4>\n<ol>\n<li>Arrange sets of cookies and fill with halva spread.<\/li>\n<li>Melt the chocolate and transfer into a small pastry bag.<\/li>\n<li>Pipe thin strips on the cookies and let cool a few minutes in the refrigerator to set.
