I always have oranges at home, and it&#8217;s a quick and easy cake everyone likes.<\/p>\n<p dir=\"ltr\" style=\"text-align: justify;\">This orange cake is quite special, as it combines polenta (cornmeal) in the batter. The result is a moist, melt-in-your-mouth cake that spreads the most addictive scent all over the house when baking. So good!<\/p>\n<div id=\"attachment_15359\" style=\"width: 810px\" class=\"wp-caption alignnone\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-15359\" class=\"wp-image-15359\" title=\"Orange, Polenta and Almond Cake \" src=\"https:\/\/www.lilcookie.com\/wp-content\/uploads\/2017\/02\/polenta_almond_and_orange_cake-s.jpg\" alt=\"Orange, Polenta and Almond Cake \" width=\"800\" height=\"1200\" \/><p id=\"caption-attachment-15359\" class=\"wp-caption-text\">Photo: Natalie Levin<\/p><\/div>\n<h4 dir=\"ltr\" style=\"text-align: justify;\"><strong>Orange, Polenta and Almond Cake\u00a0 <\/strong><\/h4>\n<ul dir=\"ltr\" style=\"text-align: justify;\">\n<li>Based on a recipe by <a href=\"http:\/\/www.jamieoliver.com\/recipes\/fruit-recipes\/orange-polenta-cake\/#jdkkLUWoh5mhmxwT.97\" target=\"_blank\" rel=\"noopener\"><strong>Jamie Oliver<\/strong><\/a> with some adjustments.<\/li>\n<\/ul>\n<p dir=\"ltr\" style=\"text-align: justify;\"><div class=\"difficulty_mian\"><\/p>\n<p dir=\"ltr\" style=\"text-align: justify;\"><u>For the cake:<br \/>\n<\/u>150 grams soft butter<br \/>\n200 grams (1 cup) sugar<br \/>\n3 large eggs<br \/>\n1 tsp. vanilla extract<br \/>\npinch of salt<br \/>\n60 ml. (1\/4 cup) orange juice<br \/>\nzest of 2 oranges<br \/>\n200 grams almond meal<br \/>\n100 grams instant polenta mix<br \/>\n2 tbsp. cornstarch<br \/>\n1 tsp. baking powder<br \/>\n50-80 grams sliced blanched almonds<\/p>\n<p dir=\"ltr\" style=\"text-align: justify;\"><u>For the syrup<\/u><u>:<br \/>\n<\/u>180 ml. (3\/4 cup) orange juice<br \/>\n150 grams (3\/4 cup) sugar<\/p>\n<p dir=\"ltr\" style=\"text-align: justify;\">Icing sugar for serving<\/p>\n<h4 dir=\"ltr\" style=\"text-align: justify;\"><strong>Preparation<\/strong><strong>:<\/strong><\/h4>\n<ol dir=\"ltr\" style=\"text-align: justify;\">\n<li>Preheat oven to 170c degrees and grease the pan.<\/li>\n<li>In a bowl of an electric mixer with a paddle attachment, mix butter, sugar, vanilla and salt until mixture is creamy.<\/li>\n<li>Add the eggs one at a time, while mixing between additions.<\/li>\n<li>Add orange juice and zest and mix until incorporated.<\/li>\n<li>Add almond meal, polenta, cornstarch and baking powder and mix just until incorporated.<\/li>\n<li>Pour the mixture into the pan, and smooth the top.<\/li>\n<li>Sprinkle sliced \u200b\u200balmonds on top and bake for about 35-45 minutes or until the cake is golden brown and a toothpick inserted in the center comes out with moist crumbs.<\/li>\n<li>Cool completely at room temperature.<\/li>\n<li>Orange syrup: put orange juice and sugar in a small pot and cook until the sugar has dissolved and the syrup comes to a boil.<\/li>\n<li>Brush the cake generously with hot syrup and let it absorb the liquid for at least an hour at room temperature.<\/li>\n<li>Serve with powdered sugar.<\/li>\n<\/ol>\n<h4 dir=\"ltr\" style=\"text-align: justify;\"><strong>Notes:<\/strong><\/h4>\n<ul dir=\"ltr\">\n<li style=\"text-align: justify;\">Keep the cake in a closed container in the refrigerator for up to a week.<\/li>\n<li style=\"text-align: justify;\">Serve the cake at room temperature.<\/li>\n<li style=\"text-align: justify;\">The cake goes down slightly at the center when cooking and that&#8217;s fine.<\/li>\n<\/ul>\n<\/span>","protected":false},"excerpt":{"rendered":"<p>Orange cake is probably the one cake I just can&#8217;t stop making in the winter.
