There&#8217;s nothing I love more than dipping banana slices in warm melted chocolate \u2013 it&#8217;s the easiest dessert you can make, and everyone loves it.<\/p>\n<p dir=\"ltr\" style=\"text-align: justify;\">This chocolate and banana tart is made of a short crust pastry, dark chocolate cream, caramelized bananas and cinnamon whipped cream. It&#8217;s so delicious and even though it take some time to make \u2013 it&#8217;s worth every single minute of preparation.<\/p>\n<div id=\"attachment_15290\" style=\"width: 810px\" class=\"wp-caption alignnone\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-15290\" class=\"wp-image-15290\" title=\"Chocolate and Banana Tart with Cinnamon Whipped Cream\" src=\"https:\/\/www.lilcookie.com\/wp-content\/uploads\/2017\/02\/banana_cinnamon_and_dark_chocolate_tarteletts-s.jpg\" alt=\"Chocolate and Banana Tart with Cinnamon Whipped Cream\" width=\"800\" height=\"1200\" \/><p id=\"caption-attachment-15290\" class=\"wp-caption-text\">Photo: Natalie Levin<\/p><\/div>\n<p><script async src=\"\/\/pagead2.googlesyndication.com\/pagead\/js\/adsbygoogle.js\"><\/script><br \/>\n<ins class=\"adsbygoogle\" style=\"display: block;\" data-ad-client=\"ca-pub-6091382327871787\" data-ad-slot=\"7832461759\" data-ad-format=\"auto\"><\/ins><br \/>\n<script>\n     (adsbygoogle = window.adsbygoogle || []).push({});\n<\/script><\/p>\n<h4 dir=\"ltr\" style=\"text-align: justify;\">Chocolate and Banana Tart with Cinnamon Whipped Cream<\/h4>\n<p dir=\"ltr\" style=\"text-align: justify;\">24 cm round tart pan or 10-12 mini 7c m tartelettes<\/p>\n<p dir=\"ltr\" style=\"text-align: justify;\"><u>For short crust pastry:<br \/>\n<\/u>150 grams all-purpose flour<br \/>\n100 grams cold butter, cut into cubes<br \/>\n40 grams icing sugar<br \/>\nPinch of salt<br \/>\n1\/2 tsp. vanilla extract<br \/>\n1 egg yolk<br \/>\n1-2 tbsp. cold milk (as needed)<\/p>\n<p dir=\"ltr\" style=\"text-align: justify;\"><u>Dark chocolate cream<\/u><u>:<\/u><u><br \/>\n<\/u>125 grams dark chocolate, 60% cocoa solids<br \/>\n125 ml. heavy cream<br \/>\nPinch of salt<\/p>\n<p dir=\"ltr\" style=\"text-align: justify;\"><u>Caramelized bananas<\/u><u>:<br \/>\n<\/u>6-7 large ripe bananas<br \/>\n50 grams sugar<br \/>\n1\/2 tsp. vanilla extract<br \/>\njuice of 1\/2 lemon<br \/>\n20 grams butter<\/p>\n<p dir=\"ltr\" style=\"text-align: justify;\"><u>For cinnamon cream:<br \/>\n<\/u>375 ml. heavy cream<br \/>\n6 grams ground cinnamon<br \/>\n25 grams icing sugar<br \/>\n1 tsp. cream stabilizer or instant vanilla pudding mix<\/p>\n<p dir=\"ltr\" style=\"text-align: justify;\"><u>Decoration<\/u><u>:<\/u><u><br \/>\n<\/u>1 banana, cut into 1\/2 cm thick slices<br \/>\n3-4 tbsp. sugar<br \/>\nsome cookie crumble<\/p>\n<h4 dir=\"ltr\" style=\"text-align: justify;\"><strong>Preparation<\/strong><strong>:<\/strong><\/h4>\n<h5 dir=\"ltr\">Crust:<\/h5>\n<ol dir=\"ltr\" style=\"text-align: justify;\">\n<li>In a food processor with a steel blade put flour, butter, powdered sugar, vanilla and salt and process until mixture is crumbly.<\/li>\n<li>Add egg yolk and continue to process just until large clumps of dough form. If the dough is not setting, gradually add a little milk.<\/li>\n<li>Transfer the dough chunks on a lightly floured work surface and form a disc-shape with your hands.<\/li>\n<li>Wrap in plastic wrap and refrigerate for about an hour.<\/li>\n<li>Roll out the dough on a floured work surface about 3-4 mm thick and cut out circles about 8-9 cm in diameter. Line the tartelette molds. It is important to create a right angle between the sides and the base of the crust, which will ensure the edges remain high when baking.<\/li>\n<li>Using a fork create holes in the crust of each tartelette. Freeze the tartelette crusts for about 30 minutes before baking.<\/li>\n<li>Preheat oven to 170c degrees.<\/li>\n<li>Blind baking: put a sheet of heat-resistant plastic wrap or baking paper over each tartelette and fill with dry beans or special weights for baking.<\/li>\n<li>Bake for about 10-12 minutes.<\/li>\n<li>Remove the weights and the plastic wrap and continue to bake the crust for about 8-10 minutes or until it is golden brown.<\/li>\n<li>Cool completely at room temperature.<\/li>\n<\/ol>\n<h5 dir=\"ltr\">Dark chocolate filling:<\/h5>\n<ol dir=\"ltr\" style=\"text-align: justify;\">\n<li>chop the chocolate and put in a bowl.<\/li>\n<li>Add heavy cream and salt and solvents together in the microwave or over double-boiler, until everything is melted and mixture is smooth.<\/li>\n<li>Fill the tartelettes with a thin layer of chocolate truffle. Cool for about 30 minutes in the refrigerator to set.<\/li>\n<\/ol>\n<h5 dir=\"ltr\">Caramelized bananas:<\/h5>\n<ol dir=\"ltr\" style=\"text-align: justify;\">\n<li>Peel the bananas and cut into 1\/2 cm thick slices.<\/li>\n<li>In a large skillet put sugar and form caramel.<\/li>\n<li>When the caramel is amber in color add bananas, vanilla, lemon and butter.<\/li>\n<li>Reduce the heat to medium and cook the bananas in the caramel for 3-4 minutes or until the slices are slightly softened.<\/li>\n<li>Cool completely.<\/li>\n<li>Put about 1-2 tbsp. caramelized bananas on top of chocolate ganache.<\/li>\n<\/ol>\n<h5 dir=\"ltr\">Cinnamon cream:<\/h5>\n<ol dir=\"ltr\" style=\"text-align: justify;\">\n<li>In a bowl of a mixer with a whipping-attachment put cream, cinnamon, powdered sugar and stabilizer and whip on high speed until you get a very stable cream.<\/li>\n<li>Transfer the cream into a piping bag with serrated piping tip and drizzle small &#8220;flowers&#8221; on top of each tartelette.<\/li>\n<\/ol>\n<h5 dir=\"ltr\">Decoration:<\/h5>\n<ol dir=\"ltr\" style=\"text-align: justify;\">\n<li>Cut the banana into 1\/2 cm thick slices and put on a heat resistant surface or plate.<\/li>\n<li>Sprinkle a little sugar and burn using a blowtorch until sugar caramelizes.<\/li>\n<li>Cool completely before you placing on tarteletts.<\/li>\n<li>Sprinkle with crumble and serve.<\/li>\n<\/ol>\n<h4 dir=\"ltr\" style=\"text-align: justify;\"><strong>Notes:<\/strong><\/h4>\n<ul dir=\"ltr\">\n<li style=\"text-align: justify;\">Keep the tartelettes in a closed container in the refrigerator for up to 3-4 days.<\/li>\n<\/ul>\n<div id=\"attachment_15289\" style=\"width: 810px\" class=\"wp-caption alignnone\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-15289\" class=\"wp-image-15289\" title=\"Chocolate and Banana Tart with Cinnamon Whipped Cream\" src=\"https:\/\/www.lilcookie.com\/wp-content\/uploads\/2017\/02\/banana_cinnamon_and_dark_chocolate_tarteletts2-s.jpg\" alt=\"Chocolate and Banana Tart with Cinnamon Whipped Cream\" width=\"800\" height=\"534\" \/><p id=\"caption-attachment-15289\" class=\"wp-caption-text\">Photo: Natalie Levin<\/p><\/div>\n<\/span>","protected":false},"excerpt":{"rendered":"<p>Banana and chocolate is simply the best combination in desserts to my taste.
