It&#8217;s delicious, creamy and melts-in-your-mouth, and you guests will love it!<\/p>\n<div id=\"attachment_15282\" style=\"width: 810px\" class=\"wp-caption alignnone\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-15282\" class=\"wp-image-15282\" title=\"Chocolate and Banana Coconut Cheesecake\" src=\"https:\/\/www.lilcookie.com\/wp-content\/uploads\/2017\/02\/chocolate_coconut_and_banana_cheesecake-s.jpg\" alt=\"Chocolate and Banana Coconut Cheesecake\" width=\"800\" height=\"1142\" \/><p id=\"caption-attachment-15282\" class=\"wp-caption-text\">Photo: Natalie Levin<\/p><\/div>\n<p><script async src=\"\/\/pagead2.googlesyndication.com\/pagead\/js\/adsbygoogle.js\"><\/script><br \/>\n<ins class=\"adsbygoogle\" style=\"display: block;\" data-ad-client=\"ca-pub-6091382327871787\" data-ad-slot=\"7832461759\" data-ad-format=\"auto\"><\/ins><br \/>\n<script>\n     (adsbygoogle = window.adsbygoogle || []).push({});\n<\/script><\/p>\n<h4 dir=\"ltr\" style=\"text-align: justify;\"><strong>Chocolate and Banana Coconut Cheesecake<\/strong><\/h4>\n<p dir=\"ltr\">22 cm round cake pan<\/p>\n<p dir=\"ltr\" style=\"text-align: justify;\"><u>For the crust:<br \/>\n<\/u>100 grams plain biscuits<br \/>\n50 grams shredded coconut<br \/>\n75 grams melted butter<\/p>\n<p dir=\"ltr\" style=\"text-align: justify;\"><u>For coconut cheesecake filling:<br \/>\n<\/u>500 grams white cheese 5% far (or sour cream)<br \/>\n225 grams cream cheese<br \/>\n200 grams coconut cream (at least 17% fat)<br \/>\n200 grams sugar<br \/>\n1 tsp. vanilla extract<br \/>\nPinch of salt<br \/>\n5 large eggs<br \/>\n40 grams cornstarch<br \/>\n2 small ripe bananas, sliced<\/p>\n<p dir=\"ltr\" style=\"text-align: justify;\"><u>For chocolate coating:<br \/>\n<\/u>100 grams dark chocolate<br \/>\n125 ml. heavy cream<\/p>\n<p dir=\"ltr\" style=\"text-align: justify;\"><u>For the cream:<br \/>\n<\/u>125 ml. heavy cream<br \/>\n1 tsp. icing sugar<\/p>\n<p dir=\"ltr\" style=\"text-align: justify;\"><u>For caramelized banana slices:<br \/>\n<\/u>1\/2 ripe banana<br \/>\n2-3 tbsp. sugar<\/p>\n<div id=\"attachment_15281\" style=\"width: 810px\" class=\"wp-caption alignnone\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-15281\" class=\"wp-image-15281\" title=\"Chocolate and Banana Coconut Cheesecake\" src=\"https:\/\/www.lilcookie.com\/wp-content\/uploads\/2017\/02\/chocolate_coconut_and_banana_cheesecake3-s.jpg\" alt=\"Chocolate and Banana Coconut Cheesecake\" width=\"800\" height=\"534\" \/><p id=\"caption-attachment-15281\" class=\"wp-caption-text\">Photo: Natalie Levin<\/p><\/div>\n<h4 dir=\"ltr\" style=\"text-align: justify;\"><strong>Preparation<\/strong><strong>:<\/strong><\/h4>\n<ol dir=\"ltr\" style=\"text-align: justify;\">\n<li>Make the crust: in a food processor with a steel blade put biscuits and coconut and grind to a fine powder.<\/li>\n<li>Add melted butter and stir until incorporated.<\/li>\n<li>Transfer the mixture to the bottom of the pan and tighten it with your hands.<\/li>\n<li>Cool the crust in the freezer for about 15 minutes.<\/li>\n<li>Preheat oven to 150 c degrees.<\/li>\n<li>Make the coconut cheesecake filling: in a large bowl put white cheese, cream cheese, coconut cream, sugar, vanilla and salt and whisk until blended.<\/li>\n<li>Add the eggs one at a time, stirring between additions.<\/li>\n<li>Add cornstarch and mix just until incorporated.<\/li>\n<li>Arrange banana slices on the cold crust in an even layer.<\/li>\n<li>Gently pour over the cheese filling.<\/li>\n<li>Bake the cake for about 70-90 minutes or until golden and slightly vibrating center.<\/li>\n<li>Cool the cake completely at room temperature. During cooling cake height decreases slightly (to original height before baking) and that&#8217;s fine.<\/li>\n<li>Make the chocolate coating: chop the chocolate and put in a bowl.<\/li>\n<li>Add heavy cream and met together in the microwave or over double boiler until everything is melted and mixture is smooth.<\/li>\n<li>Pour the frosting over the cake and let it drip over the sides.<\/li>\n<li>Cool the cake in the refrigerator for about an hour to set.<\/li>\n<li>Make the cream: in a bowl of a mixer, whip cream and powdered sugar until firm.<\/li>\n<li>Transfer the whipped cream into a piping bag with a 2 cm serrated piping tip and pipe mounds of whipped cream on top of the cake.<\/li>\n<li>Caramelized bananas: cut the banana into 1 cm slices and place on a heat-proof flat surface.<\/li>\n<li>Generously sprinkle sugar on top of the banana slices and burn using a blowtorch until caramelized.<\/li>\n<li>Cool completely and decorate with banana slices and coconut chips.<\/li>\n<\/ol>\n<h4 dir=\"ltr\" style=\"text-align: justify;\"><strong>Notes:<\/strong><\/h4>\n<ul dir=\"ltr\">\n<li style=\"text-align: justify;\">Keep the cake in a closed container in the refrigerator for up to 5-6 days.<\/li>\n<li style=\"text-align: justify;\">Add the caramelized bananas and coconut chips just before serving.<\/li>\n<\/ul>\n<div id=\"attachment_15280\" style=\"width: 810px\" class=\"wp-caption alignnone\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-15280\" class=\"wp-image-15280\" title=\"Chocolate and Banana Coconut Cheesecake\" src=\"https:\/\/www.lilcookie.com\/wp-content\/uploads\/2017\/02\/chocolate_coconut_and_banana_cheesecake2-s.jpg\" alt=\"Chocolate and Banana Coconut Cheesecake\" width=\"800\" height=\"1200\" \/><p id=\"caption-attachment-15280\" class=\"wp-caption-text\">Photo: Natalie Levin<\/p><\/div>\n<\/span>","protected":false},"excerpt":{"rendered":"<p>One of my favorite cakes is definitely cheesecake.
