It&#8217;s the perfect dessert for coconut lovers, and there&#8217;s also a gluten free version!<\/p>\n<div id=\"attachment_15219\" style=\"width: 810px\" class=\"wp-caption alignnone\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-15219\" class=\"wp-image-15219\" title=\"Chocolate Coconut Brownies\" src=\"https:\/\/www.lilcookie.com\/wp-content\/uploads\/2017\/02\/chocolate_and_coconut_brownies-s.jpg\" alt=\"Chocolate Coconut Brownies\" width=\"800\" height=\"1200\" \/><p id=\"caption-attachment-15219\" class=\"wp-caption-text\">Photo: Natalie Levin<\/p><\/div>\n<p><script async src=\"\/\/pagead2.googlesyndication.com\/pagead\/js\/adsbygoogle.js\"><\/script><br \/>\n<ins class=\"adsbygoogle\" style=\"display: block;\" data-ad-client=\"ca-pub-6091382327871787\" data-ad-slot=\"7832461759\" data-ad-format=\"auto\"><\/ins><br \/>\n<script>\n     (adsbygoogle = window.adsbygoogle || []).push({});\n<\/script><\/p>\n<p><!--WPRM Recipe 19796--><\/p>\n<div class=\"wprm-fallback-recipe\">\n<h2 class=\"wprm-fallback-recipe-name\">Chocolate Coconut Brownies<\/h2>\n<p class=\"wprm-fallback-recipe-summary\">\n<div class=\"wprm-fallback-recipe-equipment\">\n\t\t\t<\/div>\n<div class=\"wprm-fallback-recipe-ingredients\">\n<h4>For the brownie:<\/h4>\n<ul>\n<li>200 grams (1 cup) dark chocolate<\/li>\n<li>150 grams (1 stick + 2 tbsp.) butter<\/li>\n<li>150 grams (3\/4 cup) sugar<\/li>\n<li>Pinch of salt<\/li>\n<li>3 large eggs<\/li>\n<li>80 grams (1\/2 cup + 1 tbsp.) all-purpose flour (see notes for gluten free version)<\/li>\n<\/ul>\n<h4>For coconut cream:<\/h4>\n<ul>\n<li>75 grams (3\/4 cup) shredded coconut<\/li>\n<li>50 grams (3 tbsp.) melted butter<\/li>\n<li>2 large egg whites<\/li>\n<li>25 grams (2 tbsp.) sugar<\/li>\n<li>1 tsp. vanilla extract<\/li>\n<li>2 tbsp. milk<\/li>\n<li>Pinch of salt<\/li>\n<\/ul>\n<h4>For chocolate ganache:<\/h4>\n<ul>\n<li>200 grams (1 cup) dark chocolate<\/li>\n<li>180 ml. (3\/4 cup) heavy cream<\/li>\n<\/ul><\/div>\n<div class=\"wprm-fallback-recipe-instructions\">\n<ol>\n<li>Preheat oven to 170c degrees and grease the pan.<\/li>\n<li>In a large bowl put butter and chocolate and melt in the microwave over double boiler until everything is melted and mixture is smooth.<\/li>\n<li>Add sugar and salt and beat until blended.<\/li>\n<li>Add the eggs one at a time, stirring between additions until you get a smooth and thick batter.<\/li>\n<li>Add flour and continue to mix just until incorporated. It is important to avoid over-processing of the batter, which can damage the texture of the brownies after baking.<\/li>\n<li>Bake the brownie layer for about 15-20 minutes or until set, but still soft in the center.<\/li>\n<li>Cool for about 10 minutes at room temperature.<\/li>\n<li>Coconut cream: in a medium bowl put coconut, butter, egg whites, sugar, vanilla, milk and salt and mix into a smooth cream.<\/li>\n<li>Pour the cream over half-baked brownie, and smooth the top. There should be a very thin layer and that&#8217;s fine.<\/li>\n<li>Continue baking for another 8-10 minutes or until slightly set at the edges and lightly golden, but bright.<\/li>\n<li>Cool completely at room temperature.<\/li>\n<li>Chocolate ganache: chop the chocolate and put in a bowl.<\/li>\n<li>Add heavy cream and solvents together in the microwave or over double boiler until everything is melted and mixture is smooth.<\/li>\n<li>Pour the ganache on top of the coconut cream and spread evenly.<\/li>\n<li>Cool completely in the refrigerator for 3-4 hours, until completely set.<\/li>\n<li>Cut into squares and serve.<\/li>\n<\/ol><\/div>\n<div class=\"wprm-fallback-recipe-notes\">\n<ul>\n<li style=\"text-align: left\">Keep the brownies in a closed container in the refrigerator for up to a week.<\/li>\n<li style=\"text-align: left\">Serve the brownies at room temperature rather than cold from the fridge.<\/li>\n<li style=\"text-align: left\">If you want a thicker layer of coconut cream you can double the amount of ingredients.<\/li>\n<li style=\"text-align: left\">Gluten-free version (also for Passover): substitute the flour with same amount of almond meal or cornstarch.<\/li>\n<\/ul><\/div>\n<div class=\"wprm-fallback-recipe-meta\">\n\t\t\t<\/div>\n<\/div>\n<p><!--End WPRM Recipe--><\/p>\n<div id=\"attachment_15218\" style=\"width: 810px\" class=\"wp-caption alignnone\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-15218\" class=\"wp-image-15218\" title=\"Chocolate Coconut Brownies\" src=\"https:\/\/www.lilcookie.com\/wp-content\/uploads\/2017\/02\/chocolate_and_coconut_brownies2-s.jpg\" alt=\"Chocolate Coconut Brownies\" width=\"800\" height=\"534\" \/><p id=\"caption-attachment-15218\" class=\"wp-caption-text\">Photo: Natalie Levin<\/p><\/div>\n<\/span>","protected":false},"excerpt":{"rendered":"<p>If you like Bounty bars \u2013 these chocolate coconut brownies will become your favorite!
