If the dough is not setting, gradually add a little water.<\/li>\n<li>Transfer the dough chunks on a lightly floured work surface and form a disc-shape with your hands.<\/li>\n<li>Wrap in plastic wrap and refrigerate for about an hour.<\/li>\n<li>Roll out the dough on a floured work surface about 3-4 mm thick and line the pie pan. It is important to create a right angle between the sides and the base of the crust, which will ensure the edges remain high when baking.<\/li>\n<li>Using a fork create holes in the crust. Freeze the crust for about an hour.<\/li>\n<li>Preheat oven to 170c degrees.<\/li>\n<li>Blind baking: put a sheet of heat-resistant plastic wrap or baking paper on the frozen crust and fill with dry beans or special weights for baking.<\/li>\n<li>Bake for about 12-14 minutes.<\/li>\n<li>Remove the weights and the plastic wrap and continue to bake the crust for about 8-10 minutes or until it is lightly golden.<\/li>\n<li>Cool slightly at room temperature.<\/li>\n<\/ol>\n<h5 dir=\"ltr\">Orange almond cream:<\/h5>\n<ol dir=\"ltr\" style=\"text-align: justify;\">\n<li>In a food processor with a steel blade grind almonds and brown sugar into fine powder.<\/li>\n<li>Add cold butter, salt and orange zest and process until mixture is crumbly.<\/li>\n<li>Add egg, orange juice and flour and blend until you get a thick cream.<\/li>\n<li>Pour the cream over the crust and flatten the top.<\/li>\n<\/ol>\n<h5 dir=\"ltr\">Candied orange:<\/h5>\n<ol dir=\"ltr\" style=\"text-align: justify;\">\n<li>Peel the oranges and fillet the &#8220;flesh&#8221;. Put the orange slices in a small saucepan and add sugar.<\/li>\n<li>Cook over medium heat until the sugar melts and the orange softens slightly.<\/li>\n<li>Drain and place the pieces of orange on the cream.<\/li>\n<li>Continue baking the tart for 10-15 minutes or until the cream is golden and set at the edges, but still slightly soft in the center.<\/li>\n<li>Cool completely.<\/li>\n<\/ol>\n<h5 dir=\"ltr\">Swiss meringue:<\/h5>\n<ol dir=\"ltr\" style=\"text-align: justify;\">\n<li>In a fireproof bowl put egg whites, sugar and salt.<\/li>\n<li>Heat water in a pot to boil.<\/li>\n<li>Place the egg whites bowl over the pot of boiling water and gently cook the egg whites mixture until all the sugar is melted and dissolved. It is important to make sure the bottom of the bowl does not touch the water.<\/li>\n<li>Transfer the mixture to a mixer bowl and whip on high speed for 10-12 minutes, until very stable and glossy meringue forms.
