I love its aroma and it&#8217;s the perfect comfort cake.<\/p>\n<p dir=\"ltr\" style=\"text-align: justify;\">This ricotta cake takes orange cakes to a higher level with added ricotta cheese. (1\/2 cup) freshly squeezed orange juice<br \/>\n200 grams (2 cups) quick oats<br \/>\n100 grams (3\/4 cup) all-purpose flour<br \/>\n1 tsp. baking powder<br \/>\n4 large egg whites, at room temperature<\/p>\n<p dir=\"ltr\" style=\"text-align: justify;\">Sugar powder for serving<\/p>\n<h4 dir=\"ltr\" style=\"text-align: justify;\"><strong>Preparation<\/strong><strong>:<\/strong><\/h4>\n<ol dir=\"ltr\" style=\"text-align: justify;\">\n<li>Preheat oven to 170c degrees and lightly grease the pan.<\/li>\n<li>In a bowl of an electric with a paddle attachment place butter, sugar, vanilla, salt and orange zest and mix at high speed until the mixture is creamy and fluffy.<\/li>\n<li>Add the egg yolks one at a time, while mixing between additions.<\/li>\n<li>Add ricotta and sour cream and mix until blended.<\/li>\n<li>In a separate bowl mix oats, flour and baking powder.<\/li>\n<li>Add half of the dry ingredients into the mixture while mixing, than add orange juice, and finish with the remaining dry ingredients mix. It&#8217;s important not to mix the batter too much, just until incorporated.<\/li>\n<li>In a separate clean bowl whip the egg whites at high speed until you get an airy, creamy and soft meringue.<\/li>\n<li>Add about 1\/3 amount of the meringue into the batter and stir in gently.<\/li>\n<li>Fold in the remaining meringue until a smooth batter forms.<\/li>\n<li>Pour the batter into the pan, and smooth the top.<\/li>\n<li>Bake for about 35-45 minutes or until the cake is golden brown and a toothpick stuck in the center comes out with moist crumbs.<\/li>\n<li>Cool completely at room temperature, sprinkle with powdered sugar and serve.<\/li>\n<\/ol>\n<h4 dir=\"ltr\" style=\"text-align: justify;\"><strong>Notes:<\/strong><\/h4>\n<ul dir=\"ltr\">\n<li style=\"text-align: justify;\">Instead of oatmeal you can use finely ground almonds, but the texture of the cake will be a little different.<\/li>\n<li style=\"text-align: justify;\">Keep the cake in a closed container in the refrigerator for up to 5-6 days,<\/li>\n<li style=\"text-align: justify;\">It is recommended to serve the cake at room temperature.<\/li>\n<\/ul>\n<div id=\"attachment_15165\" style=\"width: 810px\" class=\"wp-caption alignnone\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-15165\" class=\"wp-image-15165\" title=\"Orange Ricotta Cake\" src=\"https:\/\/www.lilcookie.com\/wp-content\/uploads\/2017\/02\/orange_ricotta_cake2-s.jpg\" alt=\"Orange Ricotta Cake\" width=\"800\" height=\"534\" \/><p id=\"caption-attachment-15165\" class=\"wp-caption-text\">Photo: Natalie Levin<\/p><\/div>\n<\/span>","protected":false},"excerpt":{"rendered":"<p>Orange cake is my first choice as dessert on cold winter days.
