It&#8217;s easy to prepare, quick and always are a great dessert to make at short notice.<\/p>\n<p dir=\"ltr\" style=\"text-align: justify;\">The following recipe is for super-fudgy whole wheat chocolate muffins that are so easy to make. (2 tbsp.) vegetable oil<br \/>\n200 ml. plain natural yogurt<br \/>\n125 ml. (1\/2 cup) water or milk<br \/>\n50 grams (1\/2 unit) mashed banana<br \/>\n25 grams (2 tbsp.) cocoa powder<br \/>\n125 grams (1 cup) whole wheat flour<br \/>\n1\/2 tsp. baking soda<br \/>\n1\/2 tsp. baking powder<br \/>\n50 grams dark chocolate, chopped<\/p>\n<h4 dir=\"ltr\" style=\"text-align: justify;\"><strong>Preparation<\/strong><strong>:<\/strong><\/h4>\n<ol dir=\"ltr\" style=\"text-align: justify;\">\n<li>Preheat oven to 170c degrees.<\/li>\n<li>In a large bowl whip eggs, sugar, salt and vanilla until airy, fluffy and light mixture is formed.<\/li>\n<li>Gradually add in the oil and continue beating.<\/li>\n<li>Add yogurt, water and mashed banana and continue to blend until uniform.<\/li>\n<li>Add cocoa, flour, baking soda and baking powder and mix just until you get a smooth batter.<\/li>\n<li>Add about half the amount of chopped chocolate and fold in gently with a spatula to disperse in the mixture.<\/li>\n<li>Fill the muffin pan about 3\/4 of its height.<\/li>\n<li>Sprinkle the remaining chopped chocolate at the top of each muffin.<\/li>\n<li>Bake for 12-20 minutes or until the muffins set and a skewer inserted in center comes out with moist crumbs.<\/li>\n<li>Cool to room temperature and serve.<\/li>\n<\/ol>\n<h4 dir=\"ltr\" style=\"text-align: justify;\"><strong>Notes:<\/strong><\/h4>\n<ul dir=\"ltr\">\n<li style=\"text-align: justify;\">Keep the muffins in an airtight container at room temperature up to a week.<\/li>\n<li style=\"text-align: justify;\">You can use milk or white chocolate instead of dark chocolate.<\/li>\n<li style=\"text-align: justify;\">You can add additional nut (any kind you like) into the batter.<\/li>\n<li style=\"text-align: justify;\">The muffins can be frozen up to 2 weeks in a sealed bag.<\/li>\n<\/ul>\n<div id=\"attachment_15050\" style=\"width: 810px\" class=\"wp-caption alignnone\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-15050\" class=\"wp-image-15050\" title=\"Whole Wheat Chocolate Muffins\" src=\"https:\/\/www.lilcookie.com\/wp-content\/uploads\/2017\/01\/whole_wheat_chocolate_muffins3-s.jpg\" alt=\"Whole Wheat Chocolate Muffins\" width=\"800\" height=\"533\" \/><p id=\"caption-attachment-15050\" class=\"wp-caption-text\">Photo: Natalie Levin<\/p><\/div>\n<\/span>","protected":false},"excerpt":{"rendered":"<p>Muffins are the kind of dessert I love to make and know I have a few in my freezer.
