(1 tbsp.) vegetable oil<\/li>\n<li>35 grams (1\/4 cup) cornstarch<\/li>\n<li>35 grams (1\/3 cup) almond meal<\/li>\n<li>30 grams (3 tbsp.) cocoa powder<\/li>\n<li>1 tsp. baking powder<\/li>\n<\/ul>\n<h4>For pistachio cream:<\/h4>\n<ul>\n<li>375 ml. (1 1\/2 cups) whipping cream (very cold)<\/li>\n<li>40 grams (2 tbsp.) pistachio paste<\/li>\n<li>50 grams (5 tbsp.) icing sugar<\/li>\n<li>20 grams (2 tbsp.) vanilla pudding powder<\/li>\n<li>1\/2 tsp. vanilla extract<\/li>\n<\/ul>\n<h4>Dark chocolate ganache:<\/h4>\n<ul>\n<li>100 grams dark chocolate<\/li>\n<li>125 ml. (1\/2 cup) whipping cream<\/li>\n<\/ul>\n<h4>Decoration:<\/h4>\n<ul>\n<li>roasted pistachios (coarsely chopped)<\/li>\n<li>some grated dark chocolate<\/li>\n<\/ul><\/div>\n<div class=\"wprm-fallback-recipe-instructions\">\n<ol>\n<li>Chocolate Roll: preheat oven to 170c degrees and line a baking tray with lightly greased baking paper.<\/li>\n<li>In an electric mixer bowl whip eggs, salt, sugar and vanilla on high speed until you get a very fluffy and bright mixture.<\/li>\n<li>Add oil, cornstarch, almond meal, cocoa powder and baking powder and fold gently until mixture is smooth.<\/li>\n<li>Pour the batter onto the pan, and spread it evenly on the pan using a spatula.<\/li>\n<li>Bake for about 8-10 minutes or until set.<\/li>\n<li>Cool completely at room temperature.<\/li>\n<li>Turn the roll onto a clean surface and separates the baking paper.<\/li>\n<li>Pistachio cream: in a bowl of a mixer whip cream, pistachio paste, powdered sugar, whipped cream stabilizer and vanilla on high speed until creamy and very stable.<\/li>\n<li>Spread 2\/3 of the amount of cream on the chocolate roll and spread evenly. Roll tightly and let cool in the refrigerator for about 1\/2 hour.<\/li>\n<li>Transfer the remaining cream into a piping bag fitted with a large round piping tip and keep in the refrigerator until decorating the cake.<\/li>\n<li>Dark chocolate ganache: chop the chocolate and put in a bowl. Add heavy cream and solvents together in the microwave or over double boiler until everything is melted and mixture is smooth.<\/li>\n<li>Place the roll on a rack and cover it with chocolate ganache.<\/li>\n<li>Cool the roll for about 1\/2 hour in the refrigerator until the ganache sets.<\/li>\n<li>Pipe small mounds of pistachio cream on top, and sprinkle chopped toasted pistachios and grated chocolate.<\/li>\n<\/ol><\/div>\n<div class=\"wprm-fallback-recipe-notes\">\n<ul>\n<li style=\"text-align: left\">It is recommended to make the roll (without any decoration) one day before serving.<\/li>\n<li style=\"text-align: left\">Keep the chocolate cake roll in a closed container in the refrigerator up to 4-5 days.<\/li>\n<\/ul><\/div>\n<div class=\"wprm-fallback-recipe-meta\">\n\t\t\t<\/div>\n<\/div>\n<p><!--End WPRM Recipe--><\/p>\n<div id=\"attachment_13599\" style=\"width: 810px\" class=\"wp-caption alignnone\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-13599\" class=\"wp-image-13599\" title=\"Gluten Free Chocolate Cake Roll with Pistachio Cream\" src=\"https:\/\/www.lilcookie.com\/wp-content\/uploads\/2016\/04\/chocolate_pistachio_swiss_roll2-s-1.jpg\" alt=\"Gluten Free Chocolate Cake Roll with Pistachio Cream\" width=\"800\" height=\"534\" \/><p id=\"caption-attachment-13599\" class=\"wp-caption-text\">Photo: Natalie Levin<\/p><\/div>\n<\/span>","protected":false},"excerpt":{"rendered":"<p>Cake rolls are one of the desserts I love to make while in a hurry.
