These chocolate sandwich cookies are filled with peanut butter, gluten free and so tasty. It&#8217;s a great treat for Passover and for people who avoid gluten all year round.<\/p>\n<p dir=\"ltr\">Two chocolate and peanut cookies filled with peanut butter creating these chocolate and peanut butter sandwich cookies that are simply delicious and easy to make.<\/p>\n<div id=\"attachment_14989\" style=\"width: 810px\" class=\"wp-caption alignnone\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-14989\" class=\"wp-image-14989\" title=\"Gluten Free Chocolate Sandwich Cookies\" src=\"https:\/\/www.lilcookie.com\/wp-content\/uploads\/2017\/01\/chocolate_peanut_butter_sandwich_cookies-s.jpg\" alt=\"Gluten Free Chocolate Sandwich Cookies\" width=\"800\" height=\"1200\" \/><p id=\"caption-attachment-14989\" class=\"wp-caption-text\">Photo: Natalie Levin<\/p><\/div>\n<p><script async src=\"\/\/pagead2.googlesyndication.com\/pagead\/js\/adsbygoogle.js\"><\/script><br \/>\n<ins class=\"adsbygoogle\" style=\"display: block;\" data-ad-client=\"ca-pub-6091382327871787\" data-ad-slot=\"7832461759\" data-ad-format=\"auto\"><\/ins><br \/>\n<script>\n     (adsbygoogle = window.adsbygoogle || []).push({});\n<\/script><\/p>\n<p><!--WPRM Recipe 20378--><\/p>\n<div class=\"wprm-fallback-recipe\">\n<h2 class=\"wprm-fallback-recipe-name\">Gluten Free Chocolate Sandwich Cookies<\/h2>\n<p class=\"wprm-fallback-recipe-summary\">\n\t\t\t<\/p>\n<div class=\"wprm-fallback-recipe-equipment\">\n\t\t\t<\/div>\n<div class=\"wprm-fallback-recipe-ingredients\">\n<h4>For peanut and chocolate dough:<\/h4>\n<ul>\n<li>120 grams (1 cup) cornstarch<\/li>\n<li>60 grams peanuts<\/li>\n<li>30 grams (3 tbsp.) cocoa powder<\/li>\n<li>50 grams (5 tbsp.) powdered sugar<\/li>\n<li>pinch of salt<\/li>\n<li>100 grams (1 stick) cold butter (cut into cubes)<\/li>\n<li>1 egg yolk<\/li>\n<li>1-2 tbsp. water (or add as needed)<\/li>\n<\/ul>\n<h4>Filling and decoration:<\/h4>\n<ul>\n<li>1\/2 jar smooth peanut butter<\/li>\n<li>icing sugar for serving<\/li>\n<\/ul><\/div>\n<div class=\"wprm-fallback-recipe-instructions\">\n<ol>\n<li>Make the dough: In a food processor with a steel blade put cornstarch, peanuts, cocoa powder, powdered sugar, salt and butter and blend until crumbly mixture is formed.<\/li>\n<li>Add egg yolk and continue to blend just until the large clumps of dough form. If needed, gradually add a little water.<\/li>\n<li>Transfer the dough on a floured work surface, and flatten to a disc-shape. Wrap in plastic wrap and refrigerate for about an hour.<\/li>\n<li>Put some cornstarch on a work surface and roll out the dough 3-4 mm thick. The dough is very delicate so it is important to work in a cool environment.<\/li>\n<li>Cut into circles with a diameter of 4-5 cm and place in a baking paper-lined oven tray.<\/li>\n<li>Create a small hole in the center of half of the cookies.<\/li>\n<li>Preheat oven to 170c degrees.<\/li>\n<li>Bake the cookies for about 10-15 minutes or until set.<\/li>\n<li>Cool completely at room temperature.<\/li>\n<li>Arrange sets of cookies (1 whole cookie and 1 cookie with a hole), and fill with peanut butter.
