It&#8217;s festive and perfect for hosting.<\/p>\n<div id=\"attachment_13571\" style=\"width: 810px\" class=\"wp-caption alignnone\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-13571\" class=\"wp-image-13571\" title=\"Coconut Tart with Strawberries and Rose Water\" src=\"https:\/\/www.lilcookie.com\/wp-content\/uploads\/2016\/05\/coconut_rose_strawberry_tart-s-2.jpg\" alt=\"Coconut Tart with Strawberries and Rose Water\" width=\"800\" height=\"1215\" \/><p id=\"caption-attachment-13571\" class=\"wp-caption-text\">Photo: Natalie Levin<\/p><\/div>\n<p><script async src=\"\/\/pagead2.googlesyndication.com\/pagead\/js\/adsbygoogle.js\"><\/script><br \/>\n<ins class=\"adsbygoogle\" style=\"display: block;\" data-ad-client=\"ca-pub-6091382327871787\" data-ad-slot=\"7832461759\" data-ad-format=\"auto\"><\/ins><br \/>\n<script>\n     (adsbygoogle = window.adsbygoogle || []).push({});\n<\/script><\/p>\n<h4 dir=\"ltr\" style=\"text-align: justify;\"><strong>Coconut Tart with Strawberries and Rose Water<\/strong><\/h4>\n<p dir=\"ltr\" style=\"text-align: justify;\">24 cm round tart pan<\/p>\n<p dir=\"ltr\" style=\"text-align: justify;\"><u>For short crust pastry:<br \/>\n<\/u>150 grams all-purpose flour<br \/>\n100 grams cold butter, cut into cubes<br \/>\n40 grams icing sugar<br \/>\nPinch of salt<br \/>\n1 tsp. vanilla extract<br \/>\n1 egg yolk<br \/>\n1-2 tbsp. cold water (as needed)<\/p>\n<p dir=\"ltr\" style=\"text-align: justify;\"><u>For coconut, rose and strawberry filling:<br \/>\n<\/u>100 grams grated coconut<br \/>\n100 grams cold butter cut into cubes<br \/>\n80 grams sugar<br \/>\n1 tsp. vanilla extract<br \/>\nPinch of salt<br \/>\n2 tbsp. coconut milk<br \/>\n4-5 drops of rose extract<br \/>\n1 large egg<br \/>\n2 tbsp. all-purpose flour<br \/>\n10-12 diced strawberries<\/p>\n<p dir=\"ltr\" style=\"text-align: justify;\"><u>For rose cream:<br \/>\n<\/u>250 ml. heavy cream<br \/>\n10 drops of rose extract<br \/>\n30 grams icing sugar<br \/>\n1 tsp. cream stabilizer of instant vanilla pudding mix<\/p>\n<p dir=\"ltr\" style=\"text-align: justify;\"><u>Decoration<\/u><u>:<br \/>\n<\/u>Diced strawberries<br \/>\nToasted shredded coconut<\/p>\n<div id=\"attachment_14957\" style=\"width: 810px\" class=\"wp-caption alignnone\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-14957\" class=\"wp-image-14957\" title=\"Coconut Tart with Strawberries and Rose Water\" src=\"https:\/\/www.lilcookie.com\/wp-content\/uploads\/2017\/01\/coconut_rose_strawberry_tart4-s.jpg\" alt=\"Coconut Tart with Strawberries and Rose Water\" width=\"800\" height=\"534\" \/><p id=\"caption-attachment-14957\" class=\"wp-caption-text\">Photo: Natalie Levin<\/p><\/div>\n<h4 dir=\"ltr\" style=\"text-align: justify;\"><strong>Preparation<\/strong><strong>:<\/strong><\/h4>\n<ol dir=\"ltr\" style=\"text-align: justify;\">\n<li>Crust: in a food processor with a steel blade put flour, butter, powdered sugar, vanilla and salt and process until mixture is crumbly.<\/li>\n<li>Add egg yolk and continue to process just until large clumps of dough form. If the dough is not setting, gradually add a little water.<\/li>\n<li>Transfer the dough chunks on a lightly floured work surface and form a disc-shape with your hands.<\/li>\n<li>Wrap in plastic wrap and refrigerate for about an hour.<\/li>\n<li>Roll out the dough on a floured work surface about 3-4 mm thick and line the pie pan. It is important to create a right angle between the sides and the base of the crust, which will ensure the edges remain high when baking.<\/li>\n<li>Using a fork create holes in the crust. Freeze the crust for about an hour.<\/li>\n<li>Preheat oven to 170c degrees.<\/li>\n<li>Blind baking: put a sheet of heat-resistant plastic wrap or baking paper on the frozen crust and fill with dry beans or special weights for baking.<\/li>\n<li>Bake for about 12-14 minutes.<\/li>\n<li>Remove the weights and the plastic wrap and continue to bake the crust for about 8-10 minutes or until it is lightly golden.<\/li>\n<li>Cool slightly at room temperature.<\/li>\n<li>Coconut rose and strawberry filling: in a food processor with a steel blade put coconut, butter, sugar, vanilla, salt, coconut milk and rose extract and process until the mixture is crumbly.<\/li>\n<li>Add egg and flour and continue to process until you get a thick cream.<\/li>\n<li>Pour the cream over the crust and arrange strawberries on top.<\/li>\n<li>Bake for about 10-15 minutes or until golden and set.<\/li>\n<li>Cool completely at room temperature.<\/li>\n<li>Rose cream: in a bowl of a mixer whip cream, rose extract, powdered sugar and stabilizer until you get a very stable cream.<\/li>\n<li>Transfer the cream into a piping bag fitted with a serrated 2 cm piping tip and drizzle piles on top of tart.<\/li>\n<li>Decorate with strawberries and toasted coconut.<\/li>\n<\/ol>\n<h4 dir=\"ltr\" style=\"text-align: justify;\"><strong>Notes:<\/strong><\/h4>\n<ul dir=\"ltr\">\n<li style=\"text-align: justify;\">The tart is best on the day or two after preparation, but you can keep it in a closed container in the refrigerator up to 4-5 days.<\/li>\n<\/ul>\n<div id=\"attachment_14958\" style=\"width: 810px\" class=\"wp-caption alignnone\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-14958\" class=\"wp-image-14958\" title=\"Coconut Tart with Strawberries and Rose Water\" src=\"https:\/\/www.lilcookie.com\/wp-content\/uploads\/2017\/01\/coconut_rose_strawberry_tart3-s.jpg\" alt=\"Coconut Tart with Strawberries and Rose Water\" width=\"800\" height=\"534\" \/><p id=\"caption-attachment-14958\" class=\"wp-caption-text\">Photo: Natalie Levin<\/p><\/div>\n<\/span>","protected":false},"excerpt":{"rendered":"<p>Strawberries are my favorite winter fruit, and as soon as I see it in the market, I can&#8217;t wait to make desserts with these red, luscious fruits.
